Abstract

Suku Bajo mengandalkan hasil laut sebagai sumber pangan keluarga. Pada musim angin barat, nelayan tidak melaut, mengakibatkan tidak tersedia bahan pangan sumber protein, khususnya pada menu anak balita. Tujuan penelitian melakukan edukasi gizi untuk merubah persepsi keluarga dengan perbaikan pengetahuan, sikap dan keterampilan dan meningkatkan kualitas menu anak balita melalui pemanfaatan gonad Bulu babi (sea urchins).  Metode  penelitian pre- eksperimen dengan desain pre-post test untuk menilai hasil intervensi berupa edukasi gizi dengan bentuk penyuluhan kelompok, pendampingan dan lomba mengolah gonad Bulu babi untuk anak balita. Sampel terpilih adalah ibu anak balita sebanyak  50  orang. Intervensi dilakukan selama 4 bulan dari Agustus sampai November 2014. Hasil penelitian menunjukkan terdapat peningkatan rerata pengetahuan  sebesar 32,8 poin; peningkatan sikap positif yang mendukung praktek kegizian 31,9 poin serta rerata keterampilan  92,7 poin. Uji statistik dengan t-test menunjukkan perbedaan signifikan. Terdapat  peningkatan pengetahuan gizi, sikap positif dan praktek gizi setelah intervensi dan terjadi perubahan kesadaran, ketertarikan, evaluasi dan uji coba  nilai bahwa gonad Bulu babi (Sea urchins) dapat menjadi sumber protein menu anak balita pada musim angin barat.ABSTRACT Nutrition Education to Improve Quality of Menu for Children Under Five Through Consumption of Gonad Sea Urchins as an Alternative of Protein Source Food among Family Bajo Soropia EthnicBajo tribe rely on seafood as a source of family food. In the west wind season, the fishermen can not go for fishing resulting in unavailability of protein rich food source, especially in the menu of children under five. The research objective is to study whether intervention of nutrition education may change the family perception through improvement in knowledge, attitudes and skills in order to increase the quality of the children-under-five diet through the utilization of sea urchin gonads. The research method was pre-experimental using pre and post test design to assess the impact of nutrition education with the method of group counseling, accompaniment of family, and finally competition of urchin gonads dish product for children under five meals among 50 families in the Bokori and Mekar villages. Nutrition education carried out for 4 months. The results showed that the mean knowledge improvement was 32.8 points, attitude was 31.9 points and skills was 92.7 points and these were significant achievement using t-test (p<0.05). In conclusion, through nutrition education, there were increasing in knowledge, attitude and practice to support health and nutrition. The family has been able to process more varied urchin gonads. In addition, there was increasing interest and acceptance of family in sea urchin gonads as an important part of the family menu especially for children-under-five. Keywords: sea urchin gonads, family dish, nutrition education, children-under-five, Bajo Soropia

Abstract

Penelitian bertujuan untuk mengetahui pengaruh pemberian formula nugget ikan layang dengan penambahan tepung daun kelor terhadap kadar seng ibu hamil kurang energy kronik di Kecamatan Puuwatu Kota Kendari, Hasil penelitian, telah diperoleh bahwa formula nugget untuk ibu hamil KEK dengan konsentrasi 700 gr ikan layang, 50 gr tepung terigu, 40 gr telur ayam bagian putih, gula pasir 5 gr, bawang putih 10 siung, garam halus 1 sendok the, lada bubuk 1 bungkus, minyak goreng 50 gr dan penambahan tepung daun kelor 45 gr, dari formula nugget tersebut diperoleh nilai gizi energi 1197 kkcal, protein 178,2 gr, lemak 19,0 gr, hidrat arang 77,5 gr dan zink 5,4 mg. Sedangkan hasil uji Proksimat diperoleh kadar air 20,613 %, kadar abu 0,642 %, protein 8,081%, lemak 18,822 %, serat kasar 3,5 % dan Zink 9,390 %. Hasil uji laboratorium untuk kadar seng pada ibu hamil KEK rata-rata 200,50 mg/L naik menjadi rata-rata 212,63554 mg/L. Hal ini  menunjukkan bahwa ada kenaikan kadar seng pada ibu hamil KEK yaitu rata-rata 12,6 mg/L, hasil uji statistik menunjukkan  terdapat pengaruh yang signifikan dengan nilai sign 0,034(<0,05), dan terjadi kenaikan berat badan rata-rata 6,86 kg dan LILA rata-rata 0,61 cm.

Abstract

Background: The prevalence of coronary heart disease continues to increase globally, and it is important to understand the factors associated with it. Objective: This study aimed to explore the association between fat and fiber intake with cholesterol levels in patients with coronary heart disease at the Outpatient BLUD Bahteramas General Hospital, Southeast Sulawesi Province, Indonesia. Methods: A cross-sectional study design was employed in this study. Data were collected from 55 patients with coronary heart disease using a semi-quantitative food frequency questionnaire and laboratory data on total cholesterol and HDL levels. Results: There was no significant association between fat and fiber intake with cholesterol level (p >0.05). Conclusion: No significant association was found between fat and fiber intake with cholesterol levels in patients with coronary heart disease. However, other factors may be contributing to the high cholesterol among these patients. Thus, future research is needed and considers using larger sample sizes to confirm the results. In the meantime, it is crucial to continue providing nutrition consultations that emphasize the importance of a balanced diet for patients with coronary heart disease.

Abstract

Penyakit tidak menular menjadi masalah kesehatan masyarakat baik secara global maupun di Indonesia. Stunting diusia balita dapat menjadi faktor risiko penyakit tidak menular diusia dewasa. Tujuan dari pengabdian masyarakat ini adalah meningkatkan dan menguatkan pengetahuan masyarakat tentang penyakit tidak menular melalui penguatan peran keluarga sadar gizi. Pada awal kegiatan dilakukan skrining terhadap faktor risiko penyakit tidak menular, dan dilanjutkan dengan edukasi melalui metode penyuluhan menggunakan media leaflet, slide presentasi dan pemutaran media video. Hasil identifikasi yang dikumpulkan melalui survei dan pelacakan pada setiap rumah diukur 56 balita menunjukkan balita dengan status gizi buruk (Z-Score: < -3) menggunakan indeks massa tubuh sebanyak 36,5% dan gizi kurang (Z-score: (-2) -  (>-3)) sebesar 14,3%. Sebagian besar keluarga memiliki risiko akibat perilaku hidup yang tidak sehat seperti merokok, minum alkohol, tidak memiliki program olah raga, pola makan sayur dan buah dalam katagori kurang. Hasil skrining dijadikan fakta manyarakat, dengan memberikan solusi membangun keluarga sadar gizi melalui pemenuhan pola makan dengan gizi seimbang, pola hidup berolah raga, melakukan penimbangan balita setiap bulan dan melakukan identifikasi masalah gizi pada tingkat keluarga.

Abstract

Latar belakang : Protein dan seng merupakan zat gizi yang sangat dibutuhkan untuk pertumbuhan anak balita. Kreakers telah dikembangkan menggunakan berbagai jenis ikan yang dapat meningkatan kandungan gizi dan daya terimanya. Tujuan penelitian adalah untuk mengembangkan kreakers ikan Pogo (Aluterus monoceros) sebagai camilan tinggi protein dan seng.Metode : Jenis penelitian adalah kuantitatif. Pengembangan creakers menggunakan tepung ikan Pogo (Aluterus monoceros) dengan persentase 0%, 15% dan 20%. Penelitian dilaksanakan pada tanggal 23-29 maret 2021 bertempat di Laboratorium ilmu teknologi pangan politeknik kendari jurusan gizi dan Universitas Haluoleo Kendari. Data yang dikumpulkan meliputi daya terima, kadar protein dan seng (Zn). Daya terima diukur dengan uji orgnoleptik menggunakan skala hedonik (1-5), protein kreakers diukur dengan metode Lowry, kadar seng diukur dengan metode Atomic Absorption Spektrophotometer (AAS). Data diolah secara deskriptif.Hasil : Dihasilkan formula creakers dengan penggunaan tepung ikan Pogo F1= 0%, F2 = 15% dan F3 = 20%. Uji daya terima menggambarkan penilaian panelis terhadap parameter warna kreakers dengan katagori sangat suka presentase tertinggi pada formula F2, katagori suka persen tertinggi memilih formula F2. Parameter aroma, menunjukan penilaian panelis dengan katagori sangat suka pada formula F2 dan suka F1. Parameter rasa, panelis menilai katagori sangat suka pada formula F2: 73% dan suka F3 : 90%. Parameter tekstur katagori sangat suka pada F2: 53,3% dan suka F1: 70%. Nilai rata-rata skor daya terima tertinggi adalah F2:3.7, selanjutnya F1: 3.1 dan F3: 3.0. Hasil analisis kadar protein tertinggi adalah pada formula F3: 41%, selanjutnya F2: 27% dan F1: 16%. Kadar seng tertinggi adalah formula F3: 4%, F2: 2% dan F1: 1%.KESIMPULAN: Penambahan tepung ikan Pogo 20% pada kreakres menghasilkan kadar protein dan seng paling tinggi. Daya terima kreakers formula F2 lebih diterima dengan skor 3.7 , dibandingkan F1 (3.1) dan F3 (3.0).

Abstract

Background: Carcinoembryonic Antigen (CEA) is an immunoglobulin that is strongly suspected to inhibit apoptosis and is closely associated with various cancers and metastases. Red betel leaves have been shown to induce apoptosis in breast cancer cells (MCF-7), activate pro-apoptotic proteins (Bax), and inhibit anti-apoptotic proteins (Bcl-2). Objective: This study aimed to measure the effect of red betel leaf syrup on Carcinoembryonic Antigen (CEA) levels in adult women. Methods: The study employed a pseudo-experimental design with a one-group pre-post-test approach. It was conducted over 6 months (June to December 2019). The study involved 25 participants, selected purposively from the population of adult women aged 40-80 years in Manggadua Village, West Kendari District. The intervention consisted of administering red betel leaf syrup. The intervention was performed 16 times during the study period (once a month). The acceptability of the syrup was assessed using organoleptic tests, and data were analyzed using the ANOVA test and the Wilcoxon signed-rank test to assess changes in CEA levels (μg/dL) after the intervention. Results: Formula F2 was selected as the intervention material. CEA levels showed an average of 2.8760 ± 1.99 ng/ml before the intervention (pre-test) and 3.4920 ± 2.58 ng/ml after the intervention (post-test). Statistical analysis revealed a significant difference in CEA levels (p ≤ 0.05, sig. 0.00). Of the 25 samples, 6 showed a negative difference, 18 showed a positive difference, and 1 remained unchanged, with a z-value of -3.217, indicating that pre-test CEA levels were higher than post-test levels. These results suggest that there was an average decrease in CEA levels following the intervention. Conclusion: The pre-test CEA levels were higher than the post-test levels, with a z-value of -3.217, indicating a decrease in CEA levels after the administration of red betel leaf syrup with medium heat and 16 doses. Abstract

Background:Stuntingis a critical chronic nutritional issue prevalent in developing countries, including Indonesia, with profound effects on children's physical growth, cognitive development, and future productivity. Objective: This study aims to assess the acceptability of nuggets formulated from sea urchin gonads (Diadema setosum) and skipjack fish (Katsuwonus pelamis) as a nutritional supplement for addressing stunting in children under five years of age. Methods: A quantitative descriptive approach was employed, utilizing organoleptic testing. The study involved 161 panelists comprising nutrition students and mothers of toddlers attending the Posyanduin Soropia District, Konawe Regency. Results: The organoleptic test results indicated that the nuggets were well-accepted in terms of color, aroma, taste, and texture. A majority of the panelists rated them as "like" or "very like". Statistical analysis using a paired sample t-test demonstrated significant differences in acceptability before and after nugget administration across all assessed aspects (p< 0.05). Conclusion: Nuggets derived from sea urchin gonads and skipjack fish exhibit substantial potential as an alternative food supplement for stunted children, given their high acceptability and nutritional composition supporting growth and development. Further research is recommended to explore the long-term effects of regular nugget consumption on nutritional status and physical growth in stunted children, along with an economic analysis to evaluate the cost-effectiveness of this intervention.   Keywords:acceptability; organoleptic; nugget; sea urchin gonads; skipjack fish; toddler stunting

Abstract

The availability of unhealthy snacks in school environments poses a challenge in efforts to improve children's nutritional quality and prevent stunting. Utilizing locally available nutrient-rich food sources, such as sea urchin gonads (Diadema setosum), can serve as a safe and nutritious alternative for school snacks. This community engagement initiative aims to enhance the knowledge and skills of housewives, school canteen operators, and Posyandu (integrated health post) cadres in processing sea urchin gonads into healthy snacks for school children. The training involved 20 participants from Waworaha and Soropia Villages, Soropia District, Konawe Regency. The methods employed included lectures, discussions, and demonstrations on the preparation of locally sourced nugget and siomay. Evaluation results indicated an average increase of 30% in participants' knowledge scores based on pre-test and post-test assessments. Participants also demonstrated the ability to apply the skills acquired during the training. This initiative not only raises awareness of the importance of balanced nutrition but also promotes the utilization of local resources as part of food diversification efforts. Contribution to Sustainable Development Goals (SDGs) This initiative contributes to Sustainable Development Goals (SDGs) Target 3.4, which aims to reduce mortality from non-communicable diseases and promote mental health through prevention and health promotion efforts. Overall, this activity aligns with SDG Goal 3: Good Health and Well-Being, which seeks to ensure healthy lives and promote well-being for all ages. Additionally, this initiative supports SDG Goal 2: Zero Hunger, particularly Targets 2.1 and 2.2, which focus on improving food security and ensuring balanced nutrition, including stunting prevention among children.
