Abstract

Higiene penjamah makanan dan kondisi sanitasi yang buruk pada tempat pengelolaan makanan jajanan dapat menyebabkan makanan jajanan terkontaminasi mikroorganisme. Apabila makanan jajanan dikonsumsi oleh anak-anak dapat berdampak pada kesehatan dan dapat menyebabkan foodborne disease. Penelitian ini bertujuan untuk menilai kondisi higiene pedagang, kondisi sanitasi penyajian, kondisi sanitasi sarana penjaja makanan jajanan dan mengetahui keberadaan bakteri Eschericia coli pada makanan jajanan SD di Kota Kupang Tahun 2019. Jenis penelitian ini adalah deskriptif. Populasi dalam penelitian ini adalah seluruh pedagang makanan jajanan pada SD di Kota Kupang. Sampel dalam penelitian ini diambil berdasarkan teknik purposive sampling yang terdiri dari sampel pedagang makanan jajanan sebanyak 60 pedagang dan sampel makanan jajanan sebanyak 60 porsi. Data penelitian diambil menggunakan cheklist dan pemeriksan laboratorium, kemudian diolah dan dianalisis secara deskriptif. Hasil penelitian menunjukkan bahwa higiene pedagang makanan jajanan SD yaitu 98,33% termasuk dalam kriteria baik, sanitasi penyajian makanan jajanan di SD 100% termasuk dalam kriteria baik, sanitasi sarana penjaja makanan jajanan SD 91,67% termasuk dalam kriteria buruk, dan 70% sampel makanan jajanan SD ditemukan bakteri Eschericia coli

Abstract

Perkembangan peternakan ayam broiler di Desa Sumlili Kecamatan Kupang Barat Kabupaten Kupang ditandai dengan banyaknya pertumbuhan kandang ayam broiler. Higiene dan sanitasi kandang ayam yang buruk dapat memicu pertumbuhan bakteri Vibrio cholerae yang merupakan agen penyakit diare. Penelitian ini bertujuan untuk menilai kondisi higiene sanitasi kandang ayam broiler dan mengetahui keberadaan bakteri Vibrio cholerae di dalam bangunan kandang ayam, jarak 5 meter dan 10 meter dari kandang ayam broiler di Desa Sumlili Kecamatan Kupang Barat Kabupaten Kupang Tahun 2021. Jenis penelitian ini adalah deskriptif dengan metode survei. Populasi dalam penelitian ini adalah seluruh kandang ayam broiler di Desa Sumlili Kecamatan Kupang Barat Kabupaten Kupang. Sampel dalam penelitian ini diambil berdasarkan teknik purposive sampling yang terdiri dari sampel kandang ayam berjumlah 18 kandang dan sampel bakteri udara berjumlah 54 plate. Pengambilan sampel dilakukan secara Cross Sectional. Data penelitian diambil menggunakan cheklist dan pemeriksan laboratorium, kemudian diolah dan dianalisis secara deskriptif. Hasil penelitian hygiene sanitasi kandang ayam broiler di Desa Sumlili Kecamatan Kupang Barat Kabupaten Kupang adalah termasuk dalam kriteria cukup (72,22%), dan ditemukannya bakteri Vibrio cholerae di udara dalam bangunan kandang dan sekitar lingkungan kandang pada jarak 5 dan 10 meter. Disarankan bagi pemilik kandang agar meningkatkan higiene dan sanitasi kandang ayam dengan cara membersihkan kandang dan wadah pakan ayam setiap hari dan melengkapi fasilitas sanitasi seperti sarana air bersih, CTPS, dan SPAL.

Abstract

Acute Respiratory Tract Infection (ARI) is an infectious disease that attacks toddlers, children, and adults that occurs in the respiratory tract and is mostly a viral infection. One of the factors causing ARI is the physical condition of the house. The purpose of this study was to determine the physical condition of the houses of ARI sufferers in Tunbaun Village, West Amarasi District, Kupang Regency. This descriptive study was conducted by surveying the physical condition of the houses of ARI sufferers. The sample was 99 houses of ARI sufferers in Nunbaun Village in 2022. The research variables were lighting, ventilation, humidity, flooring, occupancy density, and temperature. This study found that the physical condition of the houses of ARI sufferers, the lighting variable, 21 houses (21%) met the requirements, and 78 houses (79%) did not meet the requirements. The ventilation variable, 68 houses (69%) met the requirements and 31 houses (31%) did not meet the requirements. The humidity variable, 38 houses (38%) met the requirements, and 61 houses (62%) did not meet the requirements. The floor condition variable met the requirements in 43 houses (43%), and did not meet the requirements in 56 houses (57%). Regarding the density of bedrooms of patients, 79 houses (80%) met the requirements, and 20 houses (20%) did not meet the requirements. The temperature variable was 11 houses (11%) met the requirements and 88 houses (89%) did not meet the requirements. Based on the results of this study, it is recommended that house floors are not made of earth, and cement floors must also be regularly cleaned. Residents should open windows to ensure optimum humidity and provide artificial ventilation.

Abstract

Food handling in restaurants must pay attention to the safety, health, and quality standards that have been set in order to obtain quality food products and minimize contamination of pathogenic bacteria in food that can cause foodborne diseases. The primary target of this activity is food managers and handlers at restaurants in Babau Village, Kupang Regency. The service method is to conduct location surveys, approaches and location permits to the Babau Village Government, socialization of activities, counseling, practices of implementing Personal Protective Equipment, provision of Personal Protective Equipment, as well as monitoring and evaluation of activities. The result of this activity is an increase in the knowledge of food managers and handlers through information about individual hygiene, equipment sanitation, kitchen sanitation, hygiene, sanitation of food and processed food to food managers and handlers, and participants can practice the correct application of personal protective equipment use.

Abstract

The aim of this study is to analyze the role and society in managing waste and reducing waste from households. This research is descriptive, describing the role and society in the management of household garbage, and further treating the role of the community in order to obtain the appropriate methods in reducing household waste. The subject of the study is a family member who has grown up one in each household of houses built by developers in the district of Naimata and Penfui of 72 houses. Role data collection and society, waste management, utilization and waste reduction by interviewing and observing, monthly waste data measured volume of waste referring to SNI 19-3964-1994 (2). The role as well as the society in the management of garbage which includes the category both 28% and not good 72%, the category of waste which includes 21% and is not good 79%, the society that exploits the waste 24% and does not exploit the waste 76%, which reduces the waste 22% and which does not reduce the waste 77%. The monthly amount of organic waste is 1 litre/day/house, and the monthly volume is 4 litres/house/day. From the results of FGD obtained waste management method is organic waste processed into compost, waste that has economic value given to the rulers and recycle. Results of crosstab roles as well as societies with waste management, waste utilization and waste reduction there is a correlation of roles and society in garbage management. The role as well as the society in managing garbage is still low, this affects the hygiene of the environment in which the waste is not properly managed can become a pathogen and become a source of infectious diseases and pollution to the environment.
