Abstract

The purpose of this study was to design and determine the ability of the catfish smoking system automatically using the ATMega8 microcontroller and the LM 35 temperature sensor as an optimization of catfish smoking production, as well as to conduct a comparative study of smoked catfish quality and economic analysis with conventional systems. The type of research used is research and development with a 4D model approach (define, design, develop and desiminate) and comparative analysis. Data obtained through observation, testing and documentation. Then analyzed qualitatively and quantitatively. The results obtained from this study are the design of a catfish smoking system automatically using an ATMega8 microcontroller and a temperature sensor as an optimization of catfish smoking production. The workings of the catfish smoking system is to control the rotation and smoking time using an ATMega8 microcontroller. The smoking system is able to produce 2 kilograms of smoked catfish in 120 minutes with a distance of 40 cm with a quality water content of 58.14%, ash content of 5.93%, pH value of 6.56 and TBA value of 0.02. Abstract

Pandemi Covid-19 telah mempengaruhi berbagai bidang usaha, salah satunya Industri Kecil Menengah (IKM). Beberapa masalah yang dihadapi oleh IKM saat ini adalah menurunnya permintaan produk yang diakibatkan daya beli konsumen yang juga ikut menurun. Salah satu IKM yang menjadi objek dalam pengabdian masyarakat ini adalah IKM Kerajinan Kemuning yang berada di desa Muarareja, Tegal Barat, di Kecamatan Tegal, Provinsi Jawa Tengah. IKM ini memproduksi produk kerajinan dengan bahan baku utama dari limbah kerang laut dengan memanfaatkan potensi lokal yang sangat melimpah. Limbah kerang laut banyak ditemui dari daerah sekitar pantai Muarareja. Permasalahan yang dihadapi oleh mitra penelitian adalah kurang optimalnya penjualan yang mereka lakukan karena mereka masih menggunakan strategi pemasaran tradisional seperti menjual produk mereka di warung-warung sekitar Pantai Muarareja. Hal inilah yang mendorong untuk dilakukannya pengabdian masyarakat di IKM mitra agar dapat meningkatkan penjualan mereka dengan melakukan pelatihan pemasaran produk dengan e-commerce.

Abstract

The Mina Rizqi fish processing group is one of the fish processing groups in the Muarareja sub-district, West Tegal District, Tegal City. Mina Rizqi's group processes fish using simple equipment such as boxes, jerry cans, drying in the open, and washing with water in a basin. Lack of knowledge that producing good fishery products must meet certain standards. Improving fish quality is a crucial aspect of the fishing industry to meet quality standards and increase product competitiveness. Pulsed Electric Field (PEF) is a post-harvest processing technology that uses short electrical pulses to improve the texture, taste, and shelf life of fish. The aim of this training is to provide members of the Mina Rizqi Muarareja Tegal group with an in-depth understanding of the working principles of PEF, its benefits on fish quality, as well as its practical implementation in the fish processing process. The method of implementing activities is training, which covers technical aspects of PEF, parameters that influence the effectiveness of PEF, and procedures for safe use. The results of the training increased the knowledge and skills of Mina Rizqi group members in implementing PEF effectively. After training, the Mina Rizqi Fish Processing Group was able to increase its productivity from 60kg to 100kg per production period.
