Abstract

The release of ownership of oil palm plantation land at SEI Kencana from PT Perkebunan Nusantara V (PTPN V) Republic of Indonesia covering an area of 2800 ha has affected the planned supply of Fresh Fruit Bunch (FFB) raw materials to the company's palm oil industry. The supply from the SEI Kencana is calculated to be reduced by 50%, so it must be fulfilled from the company's external parties. There are at least five aspects of risk estimated to affect the supply of FFB, namely aspects of raw material supply, aspects of quality FFB supply, aspects of FFB prices, management aspects, and social aspects. Overall there are 16 identified risks in the FFB supply chain. The analysis uses fuzzy weighting techniques, followed by characterization using the principle of ISO 28001, grouping risks into three, namely: 1) risks that must be addressed immediately, 2) risks that are considered to be handled, and 3) risks that are temporarily noted (documentation). The risks with characters being addressed and considered to be addressed are those risks which in the near future, are considered to affect the supply of FFB raw materials for the industry. In the case of the release of 2800 ha of land in PTPN V, the amount of risk that needs to be mitigated with documented risk is equal. Within the next five years, mitigation of these risks has been prepared. With this risk management, the supply of FFB to factories in the Rokan-Tandun district can be secured.

Abstract

Standar keamanan pangan pada sektor Usaha Mikro, Kecil, dan Menengah (UMKM) makanan di Indonesia masih tergolong rendah, termasuk UMKM pengolahan ikan rakyat. Produk pindang merupakan salah satu produk olahan ikan yang cukup popular di Provinsi Jawa Barat. Usaha yang umumnya dikelola oleh UMKM ini tampak sangat jauh dari prinsip higiene pangan. Infrastruktur yang dimiliki sangat minim dan sangat berpeluang menyebabkan kontaminasi silang. Tujuan penulisan ini adalah untuk memodelkan resiko keamanan pangan pada rantai produksi olahan pindang pada kasus UMKM pengolahan ikan rakyat. Tahapan pengembangan model resiko keamanan pangan pada usaha pemindangan ikan dimulai dari identifikasi resiko keamanan pangan pada rantai produksi, identifikasi prosedur dan standar keamanan pangan yang mampu meminimumkan bahaya keamanan pangan produk pindang, dan merancang model resiko keamanan pangan produk pindang. Ada empat titik kritis resiko kemanan pangan pada pemindangan ikan, yaitu resiko dari bahan baku, resiko dari proses persiapan bahan, resiko pada proses perebusan, dan resiko pada proses penirisan dan penanganan. Untuk mencapai keamanan pangan produk pindang, UMKM pengolahan ikan perlu menerapkan pre requisites atau persyaratan dasar Good Manufacturing Practises dan Good Hygiene Practices. Pre requisites adalah kelengkapan yang harus dipenuhi oleh perusahaan yang ingin menerapkan sistem manajemen keamanan pangan baik berbasis HACCP maupun ISO 22000.Kata Kunci: UMKM Pindang, Model Resiko Keamanan Pangan, Titik Kritis Resiko.

Abstract

In the palm oil processing, one of the most important stages is boiling the fresh fruit bunches or sterilization, because it greatly determines the yield and quality of the CPO produced. The purpose of this study was to analyze the selection of sterilizer technology by considering the sustainability factor. A case study was conducted at PTPN V which is planning to expand its production capacity. The data used in this study consisted of primary data and secondary data. Primary data obtained from distributing questionnaires, interviews and field observations. Respondents of this study were stakeholders of the palm oil mill and PTPN V. This research combines qualitative and quantitative approaches. Qualitative analysis was conducted to describe the sterilization technology for processing fresh oil palm fruit bunches into CPO. Financial viability is evaluated based on the best sterilization technology recommendations. The results of the analysis recommend horizontal sterilized-indexer technology as a priority, followed by vertical sterilization technology and continuous sterilization technology. By paying attention to the sustainability criteria, the PKS design is integrated with PKO. This integration has implications for energy efficiency, kernel transportation, other utility facilities, and even a number of work units and personnel. The investment for the construction of PKS with a capacity of 45 tons/hour using horizontal-indexer sterilization technology requires a fund of IDR 170.8 billion were declared feasible with an IRR of 26.64%, a positive NPV, a B/C ratio of 2.23, and a PBP of 6 years and 5 months. The results of the sensitivity analysis to the assumption of an increase in production costs of 6 percent have not changed the recommendation, as well as a decrease in factory processing capacity by 6 percent.

Abstract

The beverage industry is one of the leading national industries with high growth and a very tight level of competition. The risk supply chain management approach is one of the driving factors for the sustainability of the industrial supply chain. The purpose of this study is to analyze the risk supply chain management to support the sustainability of the beverage industry supply chain in the case of fruit juice beverage products. The data used in this study consisted of primary data and secondary data. Primary data obtained from distributing questionnaires, interviews and field observations. The respondents of this research are the beverage industry supply chain stakeholders. This research combines qualitative and semi-quantitative approaches. Qualitative analysis is conducted to describe activities and risks in the beverage industry supply chain. Risk analysis is carried out using a semi-quantitative approach. The risk evaluation in the supply chain of the fruit juice beverage industry combines the SCOR-FMEA method. The risks that are classified as High and Priority are then analyzed by using the Fishbone Diagram as a reference for formulating risk mitigation strategies for the sustainability of the supply chain for the juice beverage industry.

Abstract

AbstractAll industries face new challenges after COVID-19, including the Indonesian poultry industry. As an essential food supply sector, the poultry industry supply chain must respond and adapt to new post- COVID-19 conditions. This study aims to analyze the relationship between agility and sustainability in the supply chain of the Indonesian poultry industry for facing various challenges. The method used in this research was the Interpretive Structural Modeling-“Matriced Impacts Croisés Appliquée á un Classement” (ISM-MICMAC) method. The agility and sustainability variables were validated initially by involving industrial supply chain stakeholders in the Focus Group Discussion (FGD). The study successfully modeled the relationship between agility and sustainability in the integrated supply chain of the Indonesian poultry industry. The agility variable is the driver for the sustainability of the integrated national poultry industry supply chain, with customer sensitivity being an essential key factor in improving the sustainability of the Indonesian poultry supply chain.Keywords: COVID-19, agility, sustainability, ISM-MICMAC AbstractSemua industri menghadapi tantangan baru pasca COVID-19, termasuk industri unggas nasional. Abstract

The purpose of research in using Android-based raw material quality control applications in fruit puree factories is to enhance the industry's precision, uniformity, and efficiency. This application is developed to implement digital image processing utilizing two distinct methods: Gaussian filters and feature extraction. The implemented application captures guava data using the camera of an Android phone and subsequently resizes the image to dimensions of 600x600 pixels. Subsequently, the image colors are recovered by employing a Gaussian filter that operates on normalized Red-Green-Blue values. A minimum of 120 photos of red guava fruit from the raw material of one of the puree companies were subjected to image processing procedures. The application solely focuses on the color and texture of the fruit's skin, ensuring that the sample remains undamaged while adhering to hygienic guidelines. The ripeness degree of guava fruit is determined by employing an image classification algorithm with the K-nearest neighbor method. The application validation using K-fold cross-validation achieved an accuracy of 90.0% and a precision of 90.27% when applied to color imagery. When feature extraction was used, the accuracy was 83.3%, with a precision of 83.4%. Color extraction provides a more precise method for identifying ripe guava. The utilization of guava fruit ripeness detection in the quality control of raw materials for the puree sector has been simplified and made more user-friendly through the development of an Android-based application. Officers are not obligated to possess specialized expertise regarding the quality of raw materials.
