Abstract

Tulang ikan merupakan limbah dari hasil perikanan dan menjadi salah satu limbah yang biasanya berada di antara sampah rumah tangga. Melalui penanganan khusus sampah tulang ikan dapat dibuat menjadi olahan tepung tulang ikan yang dapat dimanfaatkan kembali menjadi olahan pangan salah satunya yaitu adalah nugget. Metode penelitian yang digunakan dengan lingkup pendekatan kuantitatif dan melakukan eksperimental terhadap tiga formulasi standar resep yang memiliki kandungan tepung tulang dan tepung pengikat yang berbeda, antara lain : NPTTB 1 (70:30), NPTTB 2 (50:50), NPTTB 3 (25:75). Ketiga formulasi tersebut akan dilakukan uji organoleptik dari aspek rasa, aroma, bentuk, tekstur dan penampilan kepada 30 panelis semi terlatih dan datanya akan diolah dengan menggunakan SPSS uji ANOVA One-Way. Hasil penelitian didapati nilai signifikansi dari tiap-tiap aspek pengujian antara lain: Rasa= 0,264; Aroma= 0,500; Bentuk= 0,204; Tekstur= 0,052; Penampilan= 0,539. NPTTB 2 terpilih sebagai formulasi terbaik dengan total poin dari keseluruhan aspek adalah 3,69/5. Kesimpulan pada penelitian ini bahwa berdasarkan hasil uji keseluruhan produk nugget tulang ikan dapat diterima oleh masyarakat. Kata kunci: Nugget Ikan, Tepung Tulang Ikan, Limbah Makanan

Abstract

Prehypertension is posing a significant health concern as it has the potential to develop into full hypertension if not addressed.  The city of Bandung is noted for having one of the highest hypertension prevalence rates in West Java, reaching 23.5%. Among adolescents, prehypertension may arise from poor lifestyle habits, such as imbalance dietary intake, excessive nutritional status, insufficient physical activity, genetic factors, and socioeconomic factors. The study aimed to examine the relationship between sodium intake, physical activity, and stress levels with prehypertension among adolescents at SMAN 17 Bandung. Employing a quantitative cross-sectional design, the research was conducted from October 2024 to April 2025 at SMAN 17 Bandung. A total of 60 respondents were selected using purposive sampling. Sodium intake was assessed through two 24-hour dietary recalls. The PAL (Physical Activity Level) questionnaire was used to evaluate physical activity, while the Depression Anxiety Stress Scales (DASS) questionnaire measured stress levels. The Chi-Square was used for bivariate data analysis. Findings revealed that 53.7% of the adolescent participants experienced prehypertension. Statistical analysis demonstrated significant correlations (p<0.05) between sodium intake (p=0.000), physical activity (p=0.042), and stress levels (p=0.007) with prehypertension among adolescents at SMAN 17 Bandung. There is an effect of sodium intake, physical activity, and stress levels with prehypertension among adolescents at SMAN 17 Bandung

Abstract

Indonesia still faces serious nutritional problems among children under five years of age due to inadequate food consumption and mothers' lack of knowledge about food selection and preparation. This condition leads to dependence on instant complementary foods (MP-ASI), resulting in suboptimal nutritional needs for children. TThis activity was carried out through an educational approach in the form of counseling and cooking demonstrations using local food ingredients. The results of the activity showed an increase in mothers' knowledge about MP-ASI, from an average score of 8.9/10 to 9.6/10. This activity had a positive impact in the form of improving mothers' skills in preparing complementary foods using local ingredients and raising awareness of the importance of choosing healthier foods for children. Based on these findings, nutrition education and cooking demonstrations on complementary feeding have been proven effective in supporting more optimal feeding practices for young children.
