Abstract

North Maluku is one of the potential areas for squid fishing, namely in Bobaneigo (Abdulkadir et al. 2022)5 and in Ternate City (Togafo waters and its surroundings). Squid jerky, and processed food products in general, are easily damaged if not stored properly. Many factors can cause damage to squid jerky, both damage due to the process of the food ingredients themselves and factors originating from external influences of food products (Wahyuni and Lasmi., 2023). The objectives of PKM are to provide additional knowledge to partners about the diversification of processed non-fish fishery resources, introduce methods of processing jerky from squid as a raw material, train partners how to process squid into jerky and facilitate participants with the tools and materials needed to produce products (jerky) using squid. The training activity on processing squid jerky by utilizing the potential of squid resources in Togafo Village, West Ternate District went smoothly with high enthusiasm from the participants. The enthusiasm for the results of squid jerky products. Community Service Program activities increase knowledge about non-fish products, improve community skills, and foster entrepreneurial spirit.

Abstract

Abstract

This entrepreneurship-based community service program focuses on the cultivation and commercialization of Litopenaeus vannamei shrimp in coastal areas. The implementation method begins with the stocking of vannamei shrimp postlarvae for grow-out, followed by regular monitoring of growth performance through periodic shrimp sampling. Once the shrimp reach marketable size, the harvesting process is conducted. The harvested shrimp are subsequently processed and properly packaged and branded under the name “Khairun Shrimp” to enhance product value and competitiveness. Marketing strategies are implemented through sales at several exhibitions, which aim not only to market the product but also to increase brand visibility. The peak of the promotional activities was participation in an exhibition attended directly by the Minister of Education, Culture, Research, and Technology and the Rector of Khairun University (Unkhair). The success of this exhibition provided significant impacts, including product validation, increased consumer trust, and expansion of marketing networks. Overall, this program successfully demonstrates a sustainable entrepreneurship model that integrates production, packaging, branding, and marketing aspects, serving as a potential reference for the development of micro-enterprises in the marine and fisheries sector.

Abstract

Fish processing activities in coastal communities often leave by-products that are not optimally utilized, including tuna bone waste. In Poklahsar Bubulla, Jambula Village, Ternate City, tuna bones generated from shredded tuna production were previously discarded, despite their potential as raw materials for value-added food products. This community service program aimed to strengthen partners’ production capacity through the application of appropriate processing technology and practical assistance in transforming tuna bone waste into marketable products. The program was implemented using a participatory approach through technical training, technology introduction, product processing practice, packaging assistance, and evaluation. The technologies introduced included a food dehydrator, flour milling machine, and vacuum sealer. The activities resulted in improved partner skills in processing tuna bone waste into fish bone flour and fish balls, better understanding of hygienic packaging practices, and stronger readiness to develop a small-scale business based on fishery by-products. Evaluation using pre-test and post-test among 11 participants showed an increase in the average score from 50.00 to 90.50, with an N-Gain value of 0.81 or 81%, categorized as high. The program also contributed to waste reduction and supported the creation of more efficient and sustainable fish processing practices at the community level. The findings indicate that appropriate technology adoption combined with community mentoring can enhance product diversification, increase the utilization of fishery waste, and support local economic empowerment.
