Abstract

Nutrition education is essential for improving global health and achieving sustainability goals. According to the WHO 2023 report, 38% of adults worldwide are overweight, and 22% of children under five are stunted. The 2030 Sustainable Development Goals (SDGs), particularly SDG 2, emphasize the importance of nutrition education in promoting health and sustainable well-being. This study aims to explore the diet of the Prophet and its alignment with contemporary nutrition education principles to address current health challenges like obesity and malnutrition. A narrative review was conducted, analyzing 926 articles, 16 of which met the inclusion criteria. The articles, primarily published between 2016 and 2022, were sourced from databases such as Google Scholar, Scopus, and PubMed. The review focused on the principles of the Prophet’s diet and their relevance to modern nutrition education. The analysis revealed that the Prophet’s simple and balanced diet, including the principles of halal food, aligns with contemporary nutrition principles advocating natural and balanced eating. The findings highlight the growing interest in integrating Islamic dietary practices into nutrition education to promote sustainable health. This study suggests that incorporating the Prophet’s dietary principles into nutrition education can provide a sustainable, evidence-based approach to addressing modern health issues. The findings can inform the development of curricula and digital platforms. Future research should focus on empirical studies to assess the impact of these diets and create educational programs that integrate Islamic values.

Abstract

Kue Tetu Mandar adalah jajanan tradisional Mandar dibuat dengan tepung terigu, gula merah, dan santan. Tujuan penelitian ini untuk menentukan formula tepung daun kelor (Moringa oleifera) dan kacang merah (Phaseolus vulgaris) pada kue Tetu Mandar untuk meningkatkan nilai gizinya sebagai cemilan alternatif untuk mencegah dan menangani anemia pada remaja putri. Penelitian ini adalah percobaan faktor tunggal (formula tepung komposit daun kelor (DK) dan kacang merah (KM)) yang disusun dalam Rancangan Acak Lengkap. Formula tepung komposit yang dicobakan adalah 2,5-7,5 g masing-masing untuk DK dan KM. Parameter yang diamati adalah sifat sensoris hedonik, serta kandungan protein dan zat besi kue Tetu Mandar. Data sifat organoleptik dianalisis dengan uji Kruskal-Wallis, sedangkan data kandungan protein dan besi dianalisis dengan ANOVA. Dilakukan pemilihan formula kue dengan perangkingan, dan perhitungan Angka Kecukupan Gizi (AKG) dari kue Tetu Mandar. Hasil penelitian menunjukkan bahwa formula tepung komposit daun kelor dan kacang merah berpengaruh tidak nyata terhadap sifat organoleptik untuk atribut warna, tekstur dan aroma, serta kandungan protein dan zat besi kue Tetu Mandar, tetapi berpengaruh nyata terhadap sifat organoleptik untuk atribut rasa dan keseluruhannya. Formula 2,5 g DK dan 7,5 KM (F1) menjadi formula terpilih. Panelis memberikan respons organoleptik hedonik keseluruhan suka pada kue Tetu Mandar yang diperoleh dari F1. Kue tersebut mempunyai kandungan protein dan zat besi berturut-turut 4,82% dan 1,12%. Kadar protein ini memenuhi syarat mutu untuk biskuit (SNI 2973:2022). Konsumsi dua potong kue Tetu Mandar (@ 50 g) mencukupi AKG zat besi untuk remaja putri.

Abstract

Optimal breastfeeding practices contribute greatly to the quality of a child's growth and development. Breast milk is considered a golden feeding of nutrients in infants. Mothers have a big role in improving the quality of their children's health. This study aims to determine the effect of exclusive breastfeeding education on the knowledge and attitudes of mothers of toddlers in the working area of the Tiong Ohang Health Centre. The research is a quasi-experiment with a design with a two-group pretest and posttest approach conducted in July 2023 in the working area of the Tiong Ohang Health Center, East Kalimantan, Indonesia. The sample of this study was 36 under five mothers. The data is then collected and then analyzed with the Wilcoxon test. Results show that the effect of exclusive breastfeeding education using leaflet media on increasing knowledge of mothers under five (p = 0.000). There is an influence of exclusive breastfeeding education using brochure media on increasing the knowledge of mothers of toddlers (p = 0.002). There is an influence of exclusive breastfeeding education using leaflet media on changes in the attitudes of mothers under five (p = 0.001). There is no effect of exclusive breastfeeding education using brochure media on changes in the knowledge of mothers under five (0.132). Leaflet media is more effective to use than brochure media. This finding is empirical evidence that nutrition education is needed to continue to be encouraged, especially in remote areas

Abstract

Nutrition is a fundamental need that is very important for humans; it is essential for sustaining life and serves as fuel for various bodily processes to achieve a quality life. This research aims to determine the effect of the "Isi Piringku" intervention media on energy intake, macronutrients, and weight gain in pregnant women. This type of research is classified as quasi-experimental research with a two-group pretest-posttest with control group design. The sample consists of 32 people. The research subjects in the treatment group were given "Isi Piringku" and the Food Exchange List (DBMP). The subjects in the control group were provided with the booklet "Isi Piringku"and the DBMP. The research subjects were asked to use the materials they received for 2 weeks. The paired and independent sample t-test analysis methods are used to determine the differences in means before and after treatment, as well as the differences in means between the treatment group and the control group. The research results show that all pregnant women experienced a healthy weight gain, with 7 individuals (43.75%) categorized as good after the intervention using the "Isi Piringku" media. Keywords:          Pregnant Mother, "Isi Piringku", Nutrition   Abstrak Gizi merupakan kebutuhan dasar yang sangat penting bagi manusia, dibutuhkan untuk mempertahankan kelangsungan hidup dan menjadi bahan bakar pada berbagai proses tubuh untuk mencapai kualitas hidup. Penelitian ini bertujuan untuk mengetahui pengaruh pemberian media intervensi “Isi Piringku” terhadap asupan energi, zat gizi makro dan pertambahan berat badan ibu hamil. Jenis penelitian ini termasuk penelitian kuasi eksperimental dengan rancangan two group pretest-posttest with control group design. Sampel berjumlah sebanyak 32 orang. Subjek penelitian pada kelompok perlakuan diberikan “Piring Makanku” dan Daftar Bahan Makanan Penukar (DBMP). Subjek pada kelompok kontrol diberikan booklet “Isi Piringku” dan DBMP. Subjek penelitian diminta menggunakan media yang diperolehnya selama 2 minggu. Metode analisis paired & independent sample t–test digunakan untuk mengetahui perbedaan rata-rata sebelum dan sesudah perlakuan dan perbedaan rata-rata antara kelompok perlakuan dan kelompok kontrol. Hasil penelitian menunjukkan seluruh Ibu hamil mengalami pertambahan berat badan dengan kategori baik sebanyak 7 orang (43,75%) setelah pemberian media intervensi piring “Isi Piringku”.
