Abstract

Background: As a disaster-prone country, Indonesia requires emergency food that meets the nutritional needs of disaster victims. This study develops a food bar based on local ingredients of kepok banana (Musa paradisiaca) and corn flour as a mineral-rich emergency food alternative. Objective: The research aims to analyze the optimal formulation, sensory evaluation, and nutritional composition of banana and corn flour-based food bars as emergency food products. Methods: This experimental study used a Completely Randomized Design (CRD) with three different formulations: F1 (80% banana + 20% corn flour), F2 (70% banana + 30% corn flour), and F3 (20% banana + 80% corn flour). Sensory testing involved 25 panelists evaluating color, aroma, taste, and texture. Data analysis used the Kruskal-Wallis test and Dunn's test, while nutritional composition was analyzed through proximate analysis and potassium testing using Atomic Absorption Spectrophotometry (AAS). Results: The results showed significant differences (p<0.05) in color, taste, and texture parameters, but not in aroma (p>0.05). Formulation F1 received the highest scores for taste (3.52) and texture (2.88). Proximate analysis revealed F1 had the highest water content (6.50%) and crude fiber (4.51%), while F3 had the highest carbohydrate content (72.62%). The potassium content of F1 reached 7.13 mg/g, meeting 10-11% of the daily RDI per 50g food bar. Conclusion: Formulation F1 (80% banana + 20% corn flour) is the best choice as emergency food due to its good sensory acceptance and complete nutritional content, particularly its potassium content which is crucial for emergency conditions.

Abstract

Background: Anemia is a common nutritional problem in adolescent girls, especially during periods of rapid growth. One of the main factors causing anemia is low intake of animal protein, which contains heme iron and plays a vital role in hemoglobin formation. Adolescent girls have higher iron requirements, putting them at higher risk of anemia if their diets are inadequate. Purpose: To determine the relationship between animal protein intake, BMI/Age, sleep time, and hemoglobin levels in high school adolescent girls. Method: This study used a quantitative approach with a cross-sectional design. The subjects were 87 tenth- and eleventh-grade adolescent girls selected using a total sampling technique. Data on animal protein intake were collected using a semi-quantitative Fast Response Questionnaire (FFQ), and hemoglobin levels were measured using a digital hemoglobin meter. Data were analyzed using the Spearman Rank test with a significance level of 0.05. Results: The majority of respondents (91.9%) had insufficient animal protein intake. 30.2% of respondents had mild anemia, and 4.7% had moderate anemia. Statistical test results showed a significant relationship between animal protein intake and hemoglobin levels (p < 0.05). Conclusion: There is a significant relationship between animal protein intake and hemoglobin levels in adolescent girls. Suggestion: Education on balanced nutrition is important to increase awareness and improve eating habits in adolescents to prevent anemia.   Keywords: Adolescent Girls; Anemia; Animal Protein; Hemoglobin.

Abstract

The SAIBATIN Program is a community empowerment model designed to enhance the success of exclusive breastfeeding through 42-day postpartum assistance provided by trained posyandu (community health post) cadres. This activity was implemented as part of the Community Partnership Empowerment Program (PKM) funded by the Directorate of Research and Community Service (DPPM), Directorate General of Research and Development, Ministry of Education, Culture, Research, and Technology of the Republic of Indonesia, in 2025. The program activities included stakeholder engagement, breastfeeding preparedness education for pregnant women, training for posyandu cadres on best practices in exclusive breastfeeding, and postpartum breastfeeding assistance conducted by the cadres. Evaluation using pre- and post-test methods showed a significant increase in knowledge scores among both cadres and pregnant women, with an average improvement of 24–25%. Cadres also demonstrated enhanced practical skills in breastfeeding counseling and maternal assistance. The SAIBATIN Program proved effective in strengthening the capacity of cadres and mothers to support exclusive breastfeeding success. This model has strong potential to be replicated as a posyandu-based community empowerment strategy to help achieve national maternal and child health targets
