Abstract

Introduction: Adolescence is a critical period of growth and development in which nutritional status and health behaviors play an important role in determining future health outcomes. Rapid lifestyle changes and increased consumption of packaged foods have contributed to rising nutritional problems among adolescents, including obesity and other non-communicable diseases. Understanding nutrition information on food labels is therefore essential to support healthy food choices and improve adolescents’ nutritional knowledge. Objective: Adolescents tend to consume packaged foods high in salt, sugar, and fat. One of the contributing factor is their low comprehension of the display of nutrition facts on the packaging and the habit of not reading them. Data from the Lampung Health Office show that the prevalence of obesity among school-aged children increased from 27% to 37% in 2021 and 2023. Reading nutrition facts is part of the Balanced Nutrition Guidelines. This study aims to analyze the effect of nutrition education using animated video media on knowledge and reading comprehension of nutrition facts on packaged foods among eight-grade adolescents at SMPN 2 Bukit Kemuning, Lampung Utara. Method: The study used a quantitative pre-experimental with a one-group pretest- posttest design. Nutrition education was delivered through animated video media, followed by measurement of knowledge and comprehension with a 14-days interval between the pretest and posttest. The study population consisted of 104 eight-grade students. Using a simple random sampling method, 84 samples were selected. However, the intervention was given to entire population to avoid sample loss, resulting in 85 samples collected. Data were analyzed using the Paired Sample T- Test. Result: The results showed a significant increase in the average score knowledge score from 64.05 to 89.07. And in reading comprehension from 59.34 to 85.53. Statitical tests showed a p-value <0.05 for both variables, indicating that nutrition education using animated video media had significant effect on improving adolescents knowledge and comprehension of reading nutrition facts.

Abstract

Background: Hypertension is a major health problem among the elderly and a key risk factor for stroke and cardiovascular disease. Its prevalence increases with age, with high sodium intake, low fiber diet, and lack of physical activity as modifiable risk factors. Educational interventions through Dietary Approaches to Stop Hypertension (DASH) diet and regular physical activity have been proven effective in reducing blood pressure, improving healthy behaviors, and enhancing quality of life. Elderly populations in rural areas face limited access to health information, making community-based approaches essential for improving knowledge, attitudes, and behaviors in preventing hypertension and stroke. Purpose: Improving the knowledge, attitudes, and behavior of the elderly in implementing a healthy lifestyle through education on dietary approaches to stop hypertension (DASH) and physical activity. Method: The study was conducted on November 2, 2025, at Tanjung Rejo Village Hall, Pesawaran District, Lampung, involving 60 elderly participants aged ≥60 years selected using purposive sampling. A quasi-experimental pretest–posttest one group design was applied, with interventions including health education, Dietary Approaches to Stop Hypertension (DASH) diet menu demonstrations, simple physical activities, and two weeks of mentoring. Data were collected using questionnaires to assess knowledge and behavior, while blood pressure was measured with a digital sphygmomanometer. Analysis was performed using descriptive and inferential statistics. Results: Significant improvements were observed in knowledge, healthy eating behavior, and physical activity after the intervention. Knowledge increased from 40% (fair) at pre-test to 70% (good) at post-test, healthy eating behavior from 45% (fair) to 60% (good), and physical activity from 70% (inactive) to 65% (active). Mean systolic blood pressure decreased from 152 ± 12 mmHg to 138 ± 10 mmHg, and diastolic from 94 ± 8 mmHg to 86 ± 6 mmHg, with paired t-test results showing significant differences (p < 0.05). Conclusion: DASH diet education and physical activity proved effective in improving knowledge, healthy behaviors, and reducing blood pressure among the elderly. This intervention can serve as a relevant preventive strategy against hypertension and stroke, focusing on lifestyle modification through healthy diet and regular physical activity. The significant reduction in blood pressure highlights meaningful clinical impact, supporting the recommendation of community-based educational programs to enhance elderly quality of life. Suggestion: Sustainable DASH diet and physical activity programs should be integrated into elderly health services at the community level. Strengthening the role of families and health cadres, supported by culturally adapted modules and innovative educational media, is essential. Abstract

Autism Spectrum Disorder (ASD) affects about 2.4 million individuals in Indonesia, with 500 new cases annually. Children with ASD often experience gluten and casein intolerance, leading to a restricted diet and inadequate protein and carbohydrate intakes. Lindur flour (Bruguiera gymnorrhiza), containing 2.57–2.68% protein and 80–82% carbohydrates, may serve as a local gluten-free substitute for wheat flour. This quasi-experimental study used a Completely Randomized Design (CRD) with five formulations (F0–F4) combining lindur and modified cassava (mocaf) flours. Proximate composition, gluten content (ELISA), and sensory attributes were analyzed in duplicate and evaluated using one-way ANOVA (p<0.05) and the Kruskal–Wallis test. Increasing the substitution of lindur significantly affected the moisture, ash, protein, fat, crude fiber, and carbohydrate contents. The 100% lindur formulation (F4) exhibited the highest protein (11.54%) and fiber (7.82%) contents, whereas all products were gluten-free (<3 ppm). Sensory evaluation indicated that formulations with 25–50% lindur flour (F1–F2) achieved the highest acceptability in terms of taste, texture, and overall preferences. This study is the first to utilize lindur flour in gluten-free cookie development for children with ASD, demonstrating its potential as a nutritious, locally sourced ingredient for functional food innovation in gluten-free diets
