Abstract

Puskesmas Padangsari Kota Semarang telah mengembangkan Posbindu di kelurahan Pedalangan, namun belum berjalan sesuai harapan, khususnya keterampilan kader dalam melakukan kegiatan atropometri dan konseling gizi. Salah satu upaya untuk meningkatkan kapasitas kader Posbindu yaitu memberdayakan kader melalui kegiatan penyegaran. Peran serta institusi pendidikan dalam hal ini Poltekkes Kemenkes Semarang diharapkan dapat memfasilitasi melalui kegiatan penyegaran tentang teknik antropometri gizi, edukasi dan konseling gizi faktor resiko PTM (penyakit tidak menular) bagi kader Posbindu. Metode pengabdian dalam bentuk penyegaran bagi kader kesehatan. Diharapkan kegiatan ini dapat meningkatkan pengetahuan dan keterampilan kader  dalam melaksanakan kegiatan Posbindu agar  berjalan secara rutin dan terpantaunya kesehatan masyarakat dalam upaya pencegahan serta pengendalian PTM. Kegiatan dilaksanakan pada tanggal 16 dan 20 Juli 2024, diikuti oleh 10 kader kesehatan dari kelurahan Pedalangan di wilayah kerja Puskesmas Padangsari. Hasil kegiatan menunjukkan adanya peningkatan pengetahuan kader sebesar 12%, keterampilan dalam antropometri gizi (penimbangan berat badan, pengukuran tinggi badan dan lingkar perut)  meningkat 21%  dan keterampilan dalam melakukan konseling gizi meningkat 20%. Dengan demikian diharapkan kegiatan Posbindu dapat berjalan rutin dan terpantaunya kesehatan masyarakat dalam upaya pencegahan serta pengendalian PTM

Abstract

Background : The prevalence of Chronic Energy Malnutrition (CEM) in pregnant mother in Indonesia is still high of 17,3%. Balanced energy-protein food supplementation is an effective intervention to improv nutritional status of pregnant mother. Fish has high protein content with good essential amino acid and minerals especially calcium, potassium, selenium, zinc, iodine and fluorine. So, the need for the development of fish processing product like tiga waja trash fish floss as food supplement for pregnant mother based local food. Objectives : This study aimed to give quantitative description of the nutritional composition of tiga waja trash fish floss, heavy metal content and sensory evaluation.Methods : This research is an experimental study with a repeated measure design. Sensory test data was collected by quota sampling on 15 trained panelists with hedonik quality testing and 25 moderately trained panelists with hedonik tests. Nutrional content analyzed included macro-micronutrients and heavy metal content test. Results : The macronutrients content of tiga waja trash fish floss (100 g) included 24,94% protein, 508,45 kcal, 30,25% fat, 33,11% carbohydrate. Calcium 908,86 mg/100g and  selenium 51,80 mcg/100g  content was indicated in high level. It's also containing good quantities composition of other nutrients such as zinc, omega 6 fatty acids, omega 3 fatty acids, PUFA, MUFA, and SFA. Tiga waja trash fish floss is safe for consumption, it’s no heavy metal contamination. The sensory evaluation of  hedonik test is an effect of spice variation treatment on color (p0.05), but no effect of spice variation treatment on taste, aroma and texture (p0.05) the average treatment is accepted in the like category and the most preferred is V4 (Soto). The hedonik quality test was no effect on the quality tiga waja trash fish floss (p0.05).Conclusion : Tiga waja trash fish floss possessed good quantities of macronutrients, minerals, and unsaturated fat content. It’s can be treated as a  local food supplement for undernourished mothers, with adding other food ingredients to meet the caloric and carbohydrate values.

Abstract

Noncommunicable diseases (NCDs) pose a significant health threat to adolescents, including those in Semarang. The prevalence of NCD risk factors among high school students in Semarang highlights the urgent need for effective intervention. Empowering peer counselors as cadres through the Posbindu program can facilitate early detection of NCD risk factors. However, cadres’ capacities for anthropometry and nutritional counseling remain inadequate. This study aimed to evaluate the impact of a structured mentoring program on enhancing knowledge and skills of adolescent Posbindu cadres in anthropometric measurements and nutrition counseling. This quasi-experimental study used a pretest-posttest control group design. A total of 36 students from grades 11 and 12 in two high schools in Semarang were recruited as cadres. The intervention consisted of lectures, demonstrations, and booklets. Data were collected through questionnaires measuring knowledge, anthropometric skills, and counseling abilities. A multivariate independent t-test was used for the statistical analysis. The mentoring program significantly improved knowledge, anthropometric skills, and counseling performance (p<0,001). Mentoring contributed to a 42% improvement in knowledge, 62% in anthropometric skills, and 64% in counseling abilities. Mentoring is an effective strategy for strengthening the competencies of Posbindu cadres in performing anthropometric assessments and providing nutrition counseling to support the early detection of NCD risk factors among adolescents.
