Abstract

According to 2024 data from the Central Bureau of Statistics (BPS), Bintan Regency recorded a 238.79% increase in tourist visits compared to the previous year. Pemancingan Wong Dheso spot is among the potential destinations for further development, especially in local culinary tourism. However, challenges remain, including unstructured menus, inconsistent food pricing, poor presentation, and limited use of local agricultural and fishery products. This community service program aimed to enhance the capacity of local culinary managers in structuring menus, improving food presentation, and utilizing local ingredients to strengthen the region’s culinary identity. A participatory and hands-on approach was used, including workshops, Focus Group Discussions (FGDs), and direct mentoring. The training involved 20 participants and resulted in improved culinary skills, development of buffet and à la carte menus, and better standardization of restaurant operations. Participant satisfaction scored 5.0 in practical sessions, 4.7 in perceived benefits, and 4.5 in overall satisfaction. The results indicate that this training model is effective, practical, and adaptable. It also presents a replicable strategy for developing culinary tourism based on local resources and community empowerment in rural destinations.

Abstract

Wellness tourism is increasingly shifting toward authentic experiences rooted in local culture and natural environments. This study explored how local wisdom can serve as the foundation for holistic wellness tourism development in Bintan Regency, Indonesia. This study employed an exploratory qualitative design using the holistic wellness framework of body, mind, spirit, and environment. Data were collected through participant observation, semi-structured interviews, and document analysis involving seven purposively selected tourism stakeholders and community representatives. The data were analyzed using reflexive thematic analysis. The findings reveal that the body dimension is reflected through coastal physical activities, traditional cuisine, herbal beverages, and indigenous body treatments. The mind dimension emerges from environmental education and mindfulness experiences, while the spirit dimension is expressed through cultural participation and contemplative activities. The environment dimension is supported by conservation practices, visitor-capacity management, ecological interpretation, and responsible destination management. Local wisdom provides a culturally grounded and sustainable foundation for integrating the physical, psychological, spiritual, and environmental dimensions of holistic wellness tourism. This study is limited to a qualitative exploration in Bintan Regency involving a small number of stakeholders, which may restrict the generalizability of the findings to other tourism destinations. This study contributes a context-sensitive framework for community-based wellness tourism development that strengthens local identity, community participation, and environmental sustainability while providing practical guidance for destination management organizations.

Abstract

Perkembangan wisata kebugaran (wellness tourism) yang pesat mendorong inovasi produk kuliner tradisional berbasis kesehatan. Kegiatan Pengabdian kepada Masyarakat ini bertujuan untuk (1) memberikan keterampilan kepada pengelola Desa Wisata Gudem Bee Farm Bintan dalam pembuatan minuman tebu jahe madu kelulut berbasis standar resep (2) mengembangkan inovasi penyajian minuman sehat agar memiliki daya tarik wisata serta (3) mengintegrasikan produk minuman tradisional ke dalam paket wellness tourism berbasis nostalgia. Metode pelaksanaan meliputi ceramah, diskusi kelompok (FGD), praktik langsung, simulasi, dan workshop/diseminasi yang melibatkan 20 orang pengelola dan masyarakat lokal. Hasil kegiatan mencakup produk minuman Heritage Glow Kelulut siap saji, buku resep standar, serta paket wisata kebugaran berbasis nostalgia tourism yang telah diimplementasikan. Evaluasi kegiatan melalui pre-test dan post-test menunjukkan peningkatan rata-rata pemahaman dan keterampilan peserta sebesar 86,3%, dengan seluruh peserta melampaui standar kelulusan yang ditetapkan. Pelatihan ini berkontribusi pada penguatan identitas kuliner Melayu Bintan dan peningkatan daya saing Gudem Bee Farm sebagai destinasi wellness tourism.
