Abstract

Gmelina elliptica digunakan penduduk di desa Talisayan, Kalimantan Timur, untuk mengobati otorrhea. Penelitian tentang aktifitas biologi dan antioksidan dari G. elliptica telah banyak dilakukan. Walaupun demikian penelitian aktivitas antioksidan bunga G. elliptica dari Kalimantan Timur belum dilakukan. Penelitian ini dilakukan untuk menganalisa aktivitas antioksidan ekstrak kasar metanol bunga G. elliptica dari desa Talisayan. Aktivitas antioksidan menggunakan uji penangkapan radikal 2,2-diphenyl-1-picrylhydrazyl (DPPH). Aktivitas penangkapan radikal DPPH dari ekstrak mencapai 89,77% pada konsentrasi 0,0050 mg/ml. Jadi bunga G. elliptica dari Kalimantan Timur berpotensi sebagai sumber antioksidan.

Abstract

Background: Changes in tea consumption trends present opportunities for the tea industry, especially as alternative raw materials have been tested in recent years to develop tea and kombucha with distinct organoleptic and functional properties. This study evaluates the organoleptic characteristics and consumer preferences for Singkil tea and Singkil kombucha. Methodology: A sensory evaluation was conducted with 30 untrained panelists to assess color, aroma, taste, texture, and overall acceptability using a hedonic scale. Additionally, the alcohol content was measured. Findings: The results of the hedonic test indicated that all treatments fell into category 3 "slightly liked", suggesting an acceptable level of consumer preference. On average, both Singkil tea and Singkil kombucha received an acceptance score of 3, indicating that they were "slightly liked." This suggests their potential as alternative beverages suitable for commercialization. Furthermore, the safety of the product was confirmed, as it contains 0% alcohol, meets halal standards. Contribution: This study concludes that Singkil kombucha has the potential to be a viable alternative beverage for the market, and that it is safe for consumption due to its 0% alcohol content, which complies with halal standards

Abstract

Mandai is a fermented food traditionally made from the skin of cempedak fruit. Mandai is one of the typical foods originating from East Kalimantan and South Kalimantan which is usually used as a side dish. However, in the process of processing mandai, food handlers are still in direct contact with the body. This study aims to determine microbial contamination in processed mandai food and to recognize good food safety standards. The research method used was laboratory experimental with MPN, ALT, and Salmonella bacteria tests. The data obtained were analyzed descriptively and compared with SNI 01.2600.1992 and BPOM number 13 of 2019 regarding the limit of microbial contamination in processed food. The results showed that the five samples of mandai from 2-day-old cempedak skin sold in Samarinda city did not meet the requirements, namely the number of coliforms 1100 to >2400 and positive for E.coli and Enterobacter sp. Based on the ALT test, the five samples of 2-day-old mandai did not meet the requirements, which ranged from 1.2 × 108 to 5.3 × 108. All five mandai samples were negative for Salmonella sp.
