Abstract

This community service in Talang Keramat Village, South Sumatra, Indonesia, aimed to empower homemakers by valorising fish skin waste. The primary objective was to promote its use in processed food to improve nutrition and economic prospects. The project specifically sought to: (1) enhance understanding of fish skin's potential as a raw material for nutritious and economically viable food; (2) demonstrate practical methods for processing fish skin into food products; and (3) shift community perception regarding the benefits of utilizing fish skin waste. A descriptive qualitative approach was employed, with implementation in three phases: pre- and post-test questionnaires to assess comprehension; educational material on transforming fish skin waste; and a demonstration of processed food preparation. Sixteen homemakers participated in the one-day activity. Results showed that 75.00% understood the nutritional and economic value of fish skin waste, 81.25% could explain processing methods, and 87.50% showed improved understanding of its benefits. In conclusion, this community service successfully empowered homemakers with the knowledge and skills to convert fish waste into valuable food products, contributing to nutritional enhancement and economic empowerment within the community.

Abstract

Provinsi Sumatera Selatan terletak di bagian selatan Pulau Sumatera dengan luas wilayah sekitar 91.592 kilometer persegi dan jumlah penduduk lebih dari 8 juta jiwa, menjadikannya salah satu provinsi terpadat di Indonesia. Kekayaan sumber daya alam seperti perikanan, pertanian, dan pertambangan menjadi potensi utama wilayah ini. Sungai Musi, sungai terpanjang di Sumatera dengan panjang sekitar 750 km, mengalir di wilayah Sumatera Selatan dan menjadi pusat berbagai ekosistem, termasuk ekosistem mangrove. Hutan mangrove memiliki peran penting dalam menghasilkan oksigen, menyerap karbon dioksida, dan mencegah abrasi, namun fungsi ini dapat hilang jika ekosistemnya rusak. Kegiatan ini bertujuan untuk mengedukasi masyarakat pesisir sungsang melalui Siswa-siswi, masyarakat dan guru di SMA 1 Muara Sugihan terkait peran dan manfaat ekosistem mangrove. Metode yang digunakan dalam kegiatan pengabdian kepada masyarakat ini adalah metode ceramah atau kuliah umum. Hasil yang diperoleh dari kegiatan ini menunjukkan bahwa siswa-siswi sangat antusias dalam mengikuti perkuliahan umum yang disampaikan oleh para dosen. Antusiasme tersebut terlihat dari keaktifan mereka dalam menyimak materi, mengajukan pertanyaan, serta berdiskusi selama sesi berlangsung. Kegiatan ini secara nyata memberikan tambahan wawasan dan pengetahuan kepada para peserta mengenai pentingnya menjaga dan melestarikan ekosistem mangrove, baik dari segi fungsi ekologis, sosial, maupun ekonominya. Diharapkan, dengan pemahaman yang telah diperoleh, siswa-siswi dapat mulai mengimplementasikan nilai-nilai kepedulian terhadap lingkungan, khususnya ekosistem mangrove, dalam kehidupan sehari-hari serta menjadi agen perubahan di lingkungan sekitarnya. Kegiatan PKM berhasil meningkatkan kesadaran siswa, guru, dan masyarakat Muara Sugihan akan pentingnya pelestarian ekosistem mangrove.

Abstract

The grilled-kemplang crackers are one of the traditional culinary products of South Sumatra that not only reflect local innovation but also represent the community's adaptation to the availability of raw materials and evolving times. This product plays a significant role in the local economy, particularly as a source of income for household-scale entrepreneurs. This study aims to analyze the profitability and production efficiency of fish-based kemplang crackers at a household scale in Kemuning District. The method used is a survey with purposive sampling techniques, with data obtained through observations, interviews, and literature studies. The survey used a purposive sampling strategy, and information was collected through literature observations, interviews with 30 respondents, and observations. The results of the analysis show that the baked kemplang cracker company has an R/C ratio of 1.93, which shows efficiency and is worthy of development. With total production costs of IDR 318,175.93, the average income per production is IDR 279,018.31. Based on the research results, the baked kemplang cracker business in Kemuning District has proven to be profitable and has a lot of room to develop into a source of income for the residents of Palembang City.
