Abstract

Desa Buwun Mas merupakan salah satu desa yang terdapat didaerah pesisir Kecamatan Sekotong, Kabupaten Lombok Barat, Nusa Tenggara Barat. Kegiatan budidaya rumput laut di Desa Buwun Mas Sesungguhnya telah dilakukan sejak puluhan tahun lalu, namun beberapa tahun belakangan kegiatan budidaya mengalami kemunduran. Faktor utama penyebab kemunduran kegiatan budidaya ini ialah adanya perubahan iklim global. Berdasarkan kenyataan tersebut maka, tim pengabdian menawarkan solusi untuk membangkitkan kembali kegiatan budiaya melalui penerapan teknologi bondre sebagai teknologi budidaya sepanjang tahun. Metode yang digunakan dalam kegiatan Pengabdian Ipteks Bagi Masyarakat ini ialah metode partsipatif dengan melibatkan semua anggota kelompok. Hasil kegiatan menunjukkan bahwa terjadi perubahan pemahaman masyarakat menjadi lebih baik tentang teknologi bondre yang diterapkan. Selain itu, masyarakat secara mandiri sudah dapat menentukan waktu yang tepat untuk menerapkan teknologi bondre berdasarkan karakteristik lokasi budidaya untuk mendukung keberlanjutan produksi rumput laut.

Abstract

The Maillard reaction and caramelization are two major non-enzymatic browning reactions that play a vital role in shaping the organoleptic characteristics of sugar-based confectionery. These thermal-induced reactions are responsible for the formation of brown pigments, flavor compounds, and aroma volatiles that define the sensory identity of products such as caramel, toffee, and fudge. This review aims to explore the fundamental mechanisms of both reactions, their dependency on ingredient composition and process conditions, and their contribution to color, flavor, and texture development in confectionery systems. Understanding these reactions is essential for optimizing quality while minimizing risks.

Abstract

3-monochloropropane-1,2-diol esters (3-MCPDE) dan glycidyl esters (GE) merupakan kontaminan proses yang terbentuk selama pemurnian minyak sawit, khususnya pada tahap deodorisasi bersuhu tinggi. Kedua senyawa ini bersifat toksik dan berpotensi karsinogenik, sehingga menjadi perhatian berbagai lembaga keamanan pangan global. Kajian ini disusun dalam bentuk narrative literature review untuk mengidentifikasi strategi mitigasi yang telah diterapkan di setiap tahap pemurnian, mulai dari pra-pemrosesan, degumming, bleaching, hingga deodorisasi. Hasil kajian menunjukkan bahwa kombinasi antara pencucian air (water washing), penggunaan bleaching earth dengan tingkat keasaman yang terkendali, serta pengaturan suhu dan pemilihan media stripping pada tahap deodorisasi merupakan pendekatan yang paling efektif dalam menurunkan kadar 3-MCPDE dan GE. Penerapan strategi mitigasi dari hulu hingga hilir dinilai penting untuk menghasilkan minyak sawit yang aman, efisien secara teknologi, dan sesuai dengan regulasi internasional.

Abstract

Macroalgae are photosynthetic organisms that grow in aquatic environments and play an important role in marine and coastal ecosystems. Macroalgae grow in almost all waters, including in the coastal area of Batu Layar. Batu Layar has particular and distinctive characteristics compared to other locations on Lombok Island. However, in recent years, supporting tourism facilities have begun to be built which will affect the composition of living biota including macroalgae. Therefore, data was collected on the diversity of changes in the composition of macroalgae in the future. This study aims to determine the diversity of macroalgae growing on Batu Layar Beach, West Lombok. This study is a descriptive exploratory study. Quadrant placement and sampling were carried out using the purposive sampling method. The results showed that the number of species growing in Batu Layar waters was 41 species. These species are spread across two observation stations. Station 1 is dominated by S. polycystum while station 2 is dominated by P. australis. The current strength and depth parameters of Station 1 were higher than those of Station 2, while the ammonia, phosphate and turbidity of Station 2 were higher than those of Station 1.

Abstract

Delta ecosystems represent dynamic coastal transition zones that play a crucial role in maintaining ecological balance and supporting biological productivity. The Rambang Delta in East Lombok, Indonesia, is influenced by tidal mixing and freshwater discharge, creating heterogeneous environmental conditions that support diverse benthic macroalgae communities. This study aimed to analyze the composition, diversity, and spatial distribution of macroalgae and evaluate the influence of environmental parameters on community structure across three sampling stations exposed to aquaculture activities. Macroalgae samples were collected using purposive sampling within 1×1 m plots, identified morphologically, and analyzed using species importance value index (INP), Shannon–Wiener diversity (H′), evenness (E), and Simpson dominance index (D). Ten water quality parameters were measured in situ and exitu to assess ecological conditions. The results of the study indicate that the environmental parameters of the research location are partly within the environmental quality standards, such as temperature, salinity, pH, and current. While turbidity, PO4-P, NH3-N, and DO are outside the environmental quality standards. The number of species found was 56, consisting of 25 species of chlorophyta macroalgae, 19 species of Rhodophyta, and 12 species of Phaeophyta. Station 1 has an H′ value of 1.9, while Station 2 and Station 3 have values of 2.6 and 2.7, respectively. Meanwhile, the uniformity index (E) value at Station 1 is 0.63, 0.66 at Station 2, and 0.74 at Station 3. In contrast, the dominance index (D) at Station 1 is 0.22, and Stations 2 and 3 have a dominance index value of 0.12.

Abstract

Ulva lactuca is a green macroalga with high potential as a source of sulfated polysaccharides and bioactive compounds; however, information on its ulvan characteristics from East Lombok waters remains limited. This study aimed to comprehensively characterize the chemical composition of Ulva lactuca collected from the coastal waters of East Lombok through proximate analysis, extraction and characterization of ulvan polysaccharides, and identification of bioactive compounds using gas chromatography–mass spectrometry (GC-MS). Proximate analysis revealed moisture content of 13.11%, protein 15.71%, lipid 0.04%, and crude fiber 45.03%, indicating a high fiber content and very low lipid level. Ulvan extraction using HCl resulted in a significantly higher yield (11.91%) compared to NaOH (3.10%) and higher sulfate content (33.75% vs 27.58%). GC-MS analysis of the methanolic extract identified various bioactive compounds predominantly belonging to fatty acids, with hexadecanoic acid (palmitic acid) as the major component, along with other compounds such as 9-octadecene, neophytadiene, and long-chain alcohol derivatives. These compounds are known to exhibit biological activities including antibacterial, anti-inflammatory, and antioxidant properties. Overall, the combination of proximate composition, ulvan content, and bioactive compound profile highlights the potential of Ulva lactuca from East Lombok as a promising source of functional food ingredients and natural bioactive substances.
