Abstract

This study aims to evaluate the consumption feasibility of Selar fish (Selaroides leptolepis) during storage at ambient temperature over a 24-hour period through organoleptic observation. The assessed parameters included the condition of the eyes, gills, mucus, flesh, texture, and aroma, observed every two hours using a scoring sheet based on SNI 2729:2013. The evaluation results revealed that organoleptic quality degradation became significant after the 4th hour, as the average scores fell below the acceptable threshold (≥7). Statistical analysis yielded a confidence interval for fresh fish of 7.66 < μ < 8.13, whereas fish experiencing quality deterioration showed a confidence interval of 3.67 < μ < 4.24. These findings indicate that without active temperature control, Selar fish should be consumed within a maximum of four hours post-harvest. This study provides a scientific basis for implementing effective post-harvest handling practices to preserve fish quality and ensure food safety at the local level.

Abstract

Nike fish (Awaous melanocephalus) is a local fishery commodity with high nutritional value but limited shelf life due to its delicate physical characteristics. This study aimed to evaluate the effects of post-harvest handling methods and storage temperature variations on the proximate and organoleptic quality of nike fish. The research was conducted experimentally using a 2×3 factorial completely randomized design, consisting of two handling methods (conventional and hygienic) and three storage temperatures (room temperature ±28°C, cold storage ±4°C, and frozen storage ±−18°C). Proximate quality parameters analyzed included moisture, protein, fat, and ash content using AOAC methods, while organoleptic quality was assessed based on color, aroma, texture, and taste through a hedonic test by semi-trained panelists. The results showed that hygienic handling combined with frozen storage significantly maintained higher protein content and more stable moisture levels compared to other treatments. This combination also yielded the highest organoleptic scores across all sensory attributes. These findings indicate that hygienic handling and frozen storage are effective strategies for preserving the quality of nike fish during short-term storage. The results of this study can serve as a scientific basis for developing practical post-harvest handling protocols to support the strengthening of local fishery agribusiness systems.

Abstract

Penelitian ini bertujuan untuk mengevaluasi pengaruh penambahan ikan teri nasi (Stolephorus comersonii) terhadap kadar air dan kualitas sensori tortilla yang dihasilkan. Ikan teri nasi, yang merupakan sumber protein bergizi dan mudah diolah, berpotensi untuk meningkatkan nilai tambah produk pangan. Penelitian dilaksanakan pada Februari 2021 di Laboratorium Terapan dan Laboratorium Dasar Teknologi Pengolahan Hasil Laut Politeknik Palu, Sulawesi Tengah. Metode yang digunakan meliputi pengujian sensorik dengan 25 panelis tidak terlatih, serta analisis kadar air menggunakan metode pemanasan. Hasil menunjukkan bahwa penambahan ikan teri nasi secara signifikan mempengaruhi warna, aroma, tekstur, dan rasa tortilla. Perlakuan optimal ditentukan pada penambahan 35 gram ikan teri nasi (perlakuan P3), yang memberikan hasil terbaik dalam semua parameter sensorik dan kadar air, berkisar antara 8,33% hingga 8,87%, memenuhi standar SNI 01- 6630-2002. Penelitian ini diharapkan dapat memotivasi pengembangan produk berbasis ikan teri nasi yang lebih beragam dan bernilai ekonomi tinggi. Rekomendasi untuk penelitian lanjutan meliputi evaluasi masa simpan tortilla dan perbaikan bentuk produk.

Abstract

This study aims to analyze the social and economic dynamics of coastal communities in Leato Utara Village, Gorontalo City, as a form of community response to environmental and social changes. The study employed a descriptive qualitative approach using participatory observation and semi-structured interviews with key informants, including fishermen, community leaders, and women engaged in household-based economic activities. The findings show that social interactions within the community are shaped by kinship-based social structures, collective solidarity, and informal local institutions. Economically, the community depends heavily on the fishing sector, which is affected by seasonal variations and limited access to technology and markets. Social adaptation and economic diversification are key strategies used to cope with external pressures. This study recommends strengthening local institutions and implementing policies that are responsive to the socio-cultural context of coastal communities
