Abstract

This study aims to analyze the physical and chemical properties of chicken sausages with the addition of dayak onions (Eleutherine palmifolia (L) Merr) from Central Kalimantan. The experimental design used in this study was a completely Randomized Design consisting of 2 treatments and 3 replications with differences in the concentration of adding fresh dayak onions it consists of T0 (chicken sausage without the addition of dayak onions), T1 (chicken sausage + 2% dayak onion) and T2 (chicken sausage + 4% dayak onion). Variables observed contain physical properties of chicken sausages (pH and aw value). Chemical and antioxidant properties of dayak onion sausage (moisture content, protein content and antioxidants) as well as sausage texture profile (hardness, compactness, gumminess, elasticity and chewiness). Data on physical, chemical, antioxidant characteristics and texture profiles of chicken sausages with the addition of dayak onions were analyzed using ANOVA and further tested using the Tukey Test. The results showed that chicken sausage with the addition of dayak onions at different levels had an effect on the value of pH, aw, water content, protein content, antioxidants and texture profile. The addition of dayak onions increases the antioxidant levels of chicken sausages and makes the color bright red compared to without the addition of dayak onions.

Abstract

Abstrak  Asupan gizi yang cukup sangat berpengaruh terhadap proses tumbuh kembang anak. Anak-anak membutuhkan beragam zat gizi seperti karbohidrat, lemak, mineral, vitamin, dan terutama protein. Protein dapat diperoleh dari konsumsi produk hasil ternak seperti daging, susu, dan telur. Dengan mengonsumsi makanan bergizi seimbang, anak-anak dapat terhindar dari risiko stunting dan gizi buruk. Kegiatan Pengabdian kepada Masyarakat (PKM) ini dilaksanakan dengan tujuan memberikan edukasi kepada siswa-siswi SD Mutiara Ilmu mengenai pentingnya mengonsumsi makanan bergizi seimbang, sekaligus memperkenalkan produk peternakan sebagai sumber pemenuhan gizi tersebut. Kegiatan berlangsung pada tanggal 22 Juni 2025 selama kurang lebih 60 menit, bertempat di SD Mutiara Ilmu, Kabupaten Lamandau. Rangkaian kegiatan dimulai dengan sesi perkenalan, dilanjutkan dengan penyampaian materi, sesi tanya jawab, dan diakhiri dengan aksi gizi berupa pembagian produk peternakan, yaitu susu dan sosis daging sapi. Hasil kegiatan menunjukkan bahwa setelah mengikuti program ini, banyak siswa mulai mengenal dan menunjukkan ketertarikan terhadap konsumsi produk peternakan. Dengan demikian, diharapkan kegiatan ini dapat berkontribusi dalam meningkatkan status gizi anak-anak di wilayah tersebut. Kata Kunci : Peternakan, Gizi, Siswa.

Abstract

Biogas is one of the alternative energy sources that can be updated because it uses raw materials derived from livestock manure. The research aims to analyze biogas production from a mixture of odot grass and cow manure. The study was conducted with 3 treatments namely 100% cow manure (control), 70% cow manure + 30% odot grass, and 50% cow manure + 50% odot grass. The parameters are temperature, degree of acidity, total solid and volatile solids, volume biogas, flame test, and C and N content measurement. The research design used was a Completely Randomized Design (CRD) Each treatment was repeated three times. The results showed that the mixture of cow manure biogas with odot grass was very real (P<0.05) against the production of biogas produced successive production values for M₁₀₀G₀, M₇₀G₃₀, and M₃₀G₃₀ 191.3500 mL; 99,0067 mL and 0.0000 mL. The C/N ratio of each treatment is 27.52; 25.32 and 23.85. The average daily temperature is about the same for all treatments which is 27-29°C. The pH value of each treatment is 5.90-7.27; 5.00-7.00 and 4.77-6.70. The content of TS, VS the initial and final of each treatment is the initial TS of 11,014; 11,007; and 11,195; final TS 6,960; 6,794; and 6,714; initial VS 8,838; 8,965; and 9,309; final VS of 5734; 5,728; and 5,831. Biogas flames with a mixture of odot grass (M₁₀₀G₀) dan (M₇₀G₃₀) produce blue biogas flames (M₅₀G₅₀) do not produce flames.  A mixture of odot grass and cow dung as a substrate did not produce high levels of biogas, compared to the non-odot grass mixture, which produced higher biogas production

Abstract

Usaha pertanian yang dijalani kadang mengalami kendala karena pupuk yang digunakan terbilang langka dan mahal di Desa Tri Tunggal sehingga perlu penyuluhan dan pelatihan tentang pemanfaatan limbah ternak sapi terutama feses sapi untuk dijadikan pupuk organik padat yang dapat dimanfaatkan sebagai pupuk untuk tanaman perkebunan para petani di Desa Tri Tunggal. Kegiatan ini diawali dengan proses identifikasi area sasaran yakni Desa Tri Tunggal kemudian dilanjutkan dengan observasi dan wawancara langsung dengan warga. Hasil kegiatan pelatihan pembuatan pupuk organik untuk mewujudkan pertanian ramah lingkungan di Desa Tri Tunggal didasarkan pada respons peserta sebagai pelaku pertanian sangat tertarik terhadap materi pelatihan sesuai dengan sasaran dan metode pelatihan. Keberadaan kelompok tani yang menggunakan pupuk organik yang mampu memberikan stimulus kepada masyakat setempat untuk melakukan pembuatan pupuk organik dari limbah ternak. Adanya kelompok tersebut menambah tingkat pendapatan masyarakat meskipun bukan menjadi pekerjaan tetap melainkan pekerjaan sampingan tetapi memiliki asas manfaat yang sangat besar yaitu peningkatan pengetahuan masyarakat yang ada di Desa Tri Tunggal Kecamatan Sematu Jaya. Program pengabdian kepada masyarakat dimulai dari survei lokasi, penyuluhan dan pelatihan pembuatan pupuk organik dari bahan dasar feses sapi. Peserta pelatihan juga memiliki antusiasme yang tinggi untuk memperoleh pengetahuan tentang teknologi pengolahan feses sapi menjadi pupuk organik yang ramah lingkungan.
