Abstract

The influence of carboxymethyl cellulose (CMC) concentration derived from durian rind (Durio zibethinus) and temperature variations on coconut milk quality was investigated through three stages. The first stage involved the isolation of ?-cellulose from durian rind powder, which was analyzed using FTIR to confirm its identity as cellulose. In the second stage, a series of processes including alkalization with isopropanol and NaOH, carboxymethylation with NaMCA, and neutralization using 90% CH3COOH and ethanol were conducted, followed by purification with distilled water, centrifugation, and the addition of acetone. This resulted in CMC, which showed positive qualitative analysis and FTIR peaks similar to those of commercial CMC. The final stage focused on coconut milk production, where CMC was incorporated at concentrations ranging from 0.5% to 0.7%, and temperature variations were set at 16ºC, 25ºC, and 80ºC. The quality of the resulting coconut milk was assessed for stability, pH, viscosity, moisture content, protein content, fat content, free fatty acid content, and organoleptic properties. The optimal results were achieved with the addition of 0.7% CMC at 16ºC, yielding a stability percentage of 34.78% with a shelf life of 9.5 hours, a pH of 6.21, viscosity of 12.6138 x 10² cP, moisture content of 45.81%, protein content of 7.57%, fat content of 43.51%, and free fatty acid content of 1.402%. Organoleptic tests indicated that panelists favored the coconut milk with 0.7% CMC for its color and aroma. The quality analysis results for the coconut milk with CMC addition and temperature variations met the existing SNI standards.

Abstract

This study investigates the application of Microwave-Assisted Extraction (MAE) to extract bioactive components from spent coffee grounds (SCG), enhancing the antibacterial properties of transparent soap. Spent coffee grounds, usually regarded as waste, include phenolics, alkaloids, flavonoids, and tannins which demonstrate potent antibacterial properties against Gram-positive bacteria such as Staphylococcus aureus. MAE effectively extracts these useful compounds using ethanol as a solvent, therefore improving the antibacterial power of the soap. Unlike the soap free of the extract, the inclusion of 3% spent coffee ground extract generated an inhibitory zone of 9.16 mm. The soap base is produced using the saponification process with palm oil and sodium hydroxide. The research additionally encompasses pH analysis, foam properties, and evaluations of client preferences. This research highlights the efficiency of MAE in upcycling coffee waste into a functional and sustainable product, offering enhanced antibacterial properties while contributing to waste reduction in personal care products.

Abstract

Titanium dioxide (TiO₂) is one of the most extensively studied semiconductor photocatalysts due to its chemical stability, non-toxicity, and strong oxidizing ability. However, its practical application is hindered by a wide band gap (~3.2 eV for anatase), rapid charge carrier recombination, and limited visible-light response. The integration of various carbon-based materials with TiO₂ has emerged as a highly effective strategy for overcoming these limitations. This review systematically examines the distinct roles played by different carbon allotropes and carbon-based materials including graphene, reduced graphene oxide (rGO), carbon nanotubes (CNTs), carbon quantum dots (CQDs), graphitic carbon nitride (g-C₃N₄), activated carbon (AC), and biochar when hybridized with TiO₂. The mechanisms by which each carbon type enhances photocatalytic performance are critically analyzed, encompassing improved charge carrier separation, extension of light absorption to the visible region, elevated pollutant adsorption through synergistic effects, and the formation of unique heterojunction architectures. Furthermore, recent advances in synthesis methodologies, key photocatalytic applications in environmental remediation and energy conversion, and structure–activity relationships are comprehensively reviewed. Challenges pertaining to scalability, stability, and carbon loading optimization are identified, and future research directions are proposed. This review provides a unified framework for understanding how the structural and electronic properties of carbon materials govern the photocatalytic behavior of Carbon–TiO₂ hybrids, guiding the rational design of next generation photocatalysts.

Abstract

Kwala Gebang Village in Langkat Regency is a coastal community whose livelihood strongly depends on the capture fishery of rebon shrimp, the main raw material for a traditional shrimp paste (terasi) that has been produced through natural fermentation across generations, including by the Kelompok Tani Hutan (KTH) Kuala Indah. A flood disaster that struck the village at the outset of the program disrupted the production, distribution, and income of the partner group, prompting the International Community Service Collaboration Program between the Faculty of Vocational Studies, Universitas Sumatera Utara (USU) and Universiti Teknologi MARA (UiTM), Cawangan Pulau Pinang, Malaysia, to focus on post-flood economic recovery through three main solutions: strengthening business management, improving packaging quality using a vacuum sealer and official labeling, and product diversification through the development of shrimp paste powder. This study employs a Participatory Action Research (PAR) approach, covering situation analysis, training module development, procurement of production equipment, hands-on training, and mentoring. As of the 80% fund-disbursement stage, the program has completed initial coordination and needs mapping, training module preparation, procurement of most supporting materials and equipment, and part of the training and mentoring activities for KTH Kuala Indah members. The results show improvement in hygienic packaging standards, the emergence of a new value-added product in powdered form, and strengthened financial management capacity among the partner group. The program is expected to support post-flood economic recovery while contributing to the achievement of the Sustainable Development Goals (SDGs 1, 8, 9, 12, 14, and 17).

Abstract

The massive flooding that struck Medan in November 2025 severely affected the Tanjung Gusta neighborhood in Medan Helvetia subdistrict, prompting the Al-Yahdi Medan Foundation to serve as an evacuation center. It also contaminated residents' clean Water sources, while the public still judges Water safety by visual clarity alone, without understanding pH as a key chemical indicator. This community service activity, under the Pioneer Service Program of the Vocational Faculty, Universitas Sumatera Utara, aimed to enhance the knowledge and skills of teachers, students, and parents at Al-Yahdi Foundation in assessing Water potability after the flood through education on pH parameters and training in portable pH meters, complementing simpler pH indicator (litmus) paper. Conducted at Al-Yahdi Foundation from April to November 2026, the activity comprised coordination, instrument design and validation, outreach, demonstrations, hands-on training, distribution of instruments and manuals, mentoring, and pretest–posttest evaluations. Average comprehension scores rose from 43.8 ('insufficient') to 87.0 ('good'). pH of Water samples from partner communities ranged from 5.9 to 7.2, with some outside the safe range set by Indonesia's Ministry of Health (6.5–8.5). This initiative effectively raised public awareness and fostered self-reliance in testing Water quality before consumption during post-flood recovery, supporting Sustainable Development Goals (SDGs) 3 and 6.
