Abstract

Moringa leaves (Moringa oleifera) have many health benefits and have been used by the wider community to support health. The purpose of this review is to provide an overview of the acceptability of food products substituted with moringa leaves, based on studies conducted in Indonesia. Indosesia’s reference database, Garuda (Garba Rujukan Digital), was used for the eligible studies. The search terms used to obtain relevant studies were "Moringa leaf," "organoleptic," and "acceptability" published between 2016 and 2021. The inclusion criteria were full-text articles written in Indonesian or English and published in Sinta 1-4 indexed journals. This study used a completely randomized design and sensory testing in humans. Results: Nine studies qualified for this review, with a variation substitution of moringa leaf in instant noodles, jelly candy, cookies, biscuits, and pancakes. The addition of moringa leaves to the products was carried out in the form of powder, protein concentrate, flour, and puree–1,5-5% to improve the content of certain nutrients, such as protein, beta-carotene, iron, calcium, vitamin C, or overall nutrients. Untrained panelists of 15-33 were used to select consumer preferences for the products, followed by nutrient analysis to determine the increase in the content of certain nutrients by adding moringa leaves. In conclusion, the more moringa leaves were added to the food products, the lower the panelists' preference for aroma, color, texture, and taste.

Abstract

Obesity is also associated with increased inflammation and oxidative stress. Mediterranean and dash diets, as well as antioxidants, can reduce inflammation and oxidative stress levels in obesity. This study aimed to determine the effects of dietary modifications and antioxidants on inflammatory and oxidative stress levels in obesity. This study was carried out using the literature review method using PubMed, Science Direct, and Google Scholar databases with the keywords Mediterranean Diet, DASH Diet, Antioxidant, Obesity, Inflammation, and Oxidative Stress. The inclusion criteria in this literature are articles published in the last 5 years (2018-2023) using RCT, in English, subjects >18 years old with obesity, interventions providing Mediterranean and dash diet, antioxidants derived from natural ingredients, and articles that can be accessed online. Articles were selected individually through a double process, considering the three main research quality criteria. This study showed that a modified diet and antioxidants can reduce inflammatory biomarkers and oxidative stress in obesity by suppressing NF-κB signaling and protecting against DNA damage. In conclusion, a modified diet and antioxidants can reduce inflammatory and oxidative stress in obesity.

Abstract

Osteoporosis as a major health problem has four times risk in women than men. Protein, fat, vitamin D, and phosphorus are the main nutrients in bone development. Through this study, it can be known protein, fat, vitamin D, and phosphorus changes from the consumption of cookies chicken feet flour (Gallus domesticus), containing 130 mg calcium, equivalent to 15% of  RDA to prevent osteoporosis due to low calcium intake with a quasi-experimental pre-test and post-test approach with control in women early adulthood for 14 days in Health Office of Tasikmalaya District in June 2022, with 102 people as sample based on Slovin's calculation with 10% of margin error through the multistage sampling method, which consists of cluster random sampling and simple random sampling. Observation of protein, fat, vitamin D, and phosphorus using the semi food frequency questionnaire. Data analysis used Post Hoc LSD. Based on data analysis, it is known that the difference in protein, vitamin D, and phosphorus intake significantly different with p> 0,05 of the three groups each other. While the difference in fat intake significantly different from the positive and negative control groups with p> 0,05. Consumption of cookies can increase protein, fat, vitamin D, and phosphorus intake.

Abstract

The association between stress factors and emotional eating can contribute to the development of obesity. Boredom, stress, anxiety, and depression can lead to emotional eating, which involves the consumption of food to cope with negative emotions. Emotional eating often involves the consumption of high-calorie, comfortable foods that can contribute to weight gain. This study aimed to analyze the differences in stress levels and emotional eating between obese and non-obese adolescents. This research was conducted in May 2023 using an observational case-control study comparing obese and non-obese adolescents in a special region of Yogyakarta. A total of 139 respondents who attended this study were selected using multistage random sampling. Stress levels were measured using the Perceived Stress Scale-10 (PSS-10) questionnaire and emotional eating was assessed using the Emotional Eater Questionnaire (EEQ). Data were collected and analyzed using the Mann-Whitney test. Results: Most respondents had high stress levels (49,6%) and low emotional eaters (43,9%). There were differences in stress levels (p=0,004) and emotional eating (p=0,000) between the obese and non-obese adolescents. Conclusions, stress levels and emotional eating were different in obese and non-obese adolescents.

Abstract

Cow milk is a livestock commodity that is in demand among the public as a complement to nutritional needs. Milk has various macro and micro components that support daily nutritional needs. One method to increase the nutrients contained in milk is through evaporation. The purpose of this study was to analyze the physical and chemical characteristics of milk that underwent evaporation using a climbing film evaporator. This study used an experimental method with a descriptive approach, which described the physical and chemical characteristics of cow milk before (control) and after evaporation.  The physical and chemical properties were analyzed using a paired sample t-test at the 5% level (0,05) to determine the difference in milk quality before and after the evaporation process. The temperature of the steam passing through the evaporator ranged from 132 to 1760C with an evaporation process of 25 min.  The results showed that there were significant differences (p<0,05) in freezing point, moisture content, fat, protein, lactose, minerals, and solid non-fat between fresh and evaporated milk. Density and pH showed no significant differences. Evaporation of cow's milk can enhance its nutritional content (protein, fat, lactose, and minerals).

Abstract

Diabetes mellitus (DM) is an emergency health problem in the 21st century. High dietary fiber and resistant starch foods with low starch digestibility are solutions for DM. The addition of glucomannan to food can optimize the levels of dietary fiber, resistant starch, and starch digestibility. This study aimed to examine the optimization of dietary fiber, resistant starch, and starch digestibility in Growol cookies supplemented with glucomannan. Laboratory observations were conducted at the Universitas Respati Yogyakarta and Chemmix Pratama Yogyakarta Laboratory between July and September 2023. Cookies consisted of cookies A (negative control), B (positive control), C (modified 10-gram inulin), D (modified glucomannan 3%), and E (modified glucomannan 7%). Dietary fiber and resistant starch analyses were performed using the multi-enzyme method. Starch digestibility was determined by comparing the starch content obtained using the enzymatic method with that obtained using the acid hydrolysis method. Statistical analyses were performed using ANOVA and Kruskal-Wallis tests. There were differences in dietary fiber and resistant starch among the variants (p<0,001) with the highest being cookies E. There was no difference in starch digestibility between the variants (p=0,104) with the lowest being cookies E. In conclusion, glucomannan addition can optimize dietary fiber and resistant starch levels, as well as the starch digestibility of Growol cookies as a healthy snack for diabetics.

Abstract

Stunting is a significant malnourishment problem in Indonesia. The 2021 Indonesian Nutritional Status Study (SSGI) reported that there are five provinces with a high prevalence of stunting (>30%). Age under two years (old age) is the golden period during which children overgrow, and malnutrition during this period can still be corrected. This study analyzed the dominant factors associated with stunting in two-year-old children from five provinces: Aceh, NTB, NTT, West Sulawesi, and Southeast Sulawesi. This cross-sectional study used secondary data from the SSGI 2021. The subjects were 4,554. Children (0-23 months) under five. The 2021 SSGI study was conducted in 34 provinces and 514 regencies/cities from January to December 2021. Data were collected through interviews using the SSGI 2021 questionnaire and anthropometric measurements. Statistical applications were used for data processing. Data analysis was performed using multiple logistic regression tests with the criteria of p<0,05 and a confidence interval (CI) of 95%. The risk factors associated with stunting in children from the five provinces were underweight (OR=9,367), age 6-11 months (OR=1,386), age 12-23 months (OR=1,386), diagnosis of measles (2,5681 CI), male sex (OR=1,400), family size ≥ 8 people (OR=1,612), poor sanitation (OR=1,273 CI 95% 1,041-1,556), and the father's occupation as a farmer/occupation/fisherman/driver (OR=1,278). In conclusion, being underweight is the dominant factor associated with stunting in toddlers.

Abstract

The prevalence of adult overnutrition in Indonesia increased from 26,3% to 35,4% from 2013 to 2018. Poor sleep quality is one of the factors of overnutrition. Poor sleep quality increases appetite and decreases energy expenditure, which leads to weight gain. Sleep quality has also worsened during the COVID-19 pandemic. This study aimed to examine the relationship between sleep quality and the incidence of overweight/obesity in adults post-COVID-19. The design of this study was cross-sectional, and an online survey was used. The questionnaire included the current weight, height, and sleep quality using the Pittsburgh Sleep Quality Index (PSQI) questionnaire. Data were collected from June to August 2022 in Indonesia, using convenience sampling. A Total of 148 participants completed the questionnaire. The association was analyzed using the Chi-square software. This study found 58,8% of the subjects had poor sleep and 23,6% were overweight/obese. Age, sex, education level, occupation, and marital status were associated with sleep quality. A higher proportion of poor sleep quality was found among overweight/overnutrition participants, but no association was found. In conclusion, no association was found between sleep quality and overweight or obesity. Most subjects had poor sleep quality; thus, further intervention is needed to improve sleep quality.

Abstract

The high incidence of stunting is the leading cause of death in children under five years of age worldwide. Sungai Penuh City is one of the urban areas in Indonesia that has experienced an increase in the prevalence of stunting. Stunting is caused by long-term nutritional deficiency in the mother due to inadequate food supply due to low household food security. Stunting can also occur because of the reproductive condition of the mother, who is not ready to conceive. This cross-sectional study aimed to analyze maternal factors and food security that have the greatest influence on the incidence of stunting in toddlers aged 0-59 months in Sungai Penuh City using data from the 2022 Indonesian Nutrition Status Survey conducted in August-September 2022. The sample consisted of 308 toddlers living in urban areas. Data were analyzed using descriptive non-parametric statistical tests with the chi-square test and Logistic Regression test. The results of this study prove that short maternal stature has a significant relationship with the incidence of stunting in toddlers (p<0,05), whereas chronic energy deficiency mothers, maternal age, and food security did not have a significant relationship with the incidence of stunting in toddlers in urban areas (p>0,05). Abstract

Penajam Paser Utara was the first district to provide cash incentives to Posyandu cadres for infants and toddlers and was the district with the largest incentive in 2010 at IDR 200,000 per month. However, the provision of incentives was uneven. However, there are still differences in the amount of cash incentives received by cadres. This study aims to determine whether there is a relationship between incentives and the performance of Posyandu cadres in Penajam Paser Utara District. This type of research was quantitative, using a correlational analysis method and a cross-sectional approach with a sample size of 303 respondents. The research was conducted in the Posyandu working area in the Penajam Paser Utara Regency between November and December 2023. Data were collected online using a Google form link provided to respondents via WhatsApp. Data were analyzed using the chi-squared test. The results showed that 251 cadres (82,8%) performed satisfactorily, Three types of non-cash incentives were associated with performance: health benefits, uniforms, and neighborhood support (p-value <0,05). This study concludes that there is a positive relationship between cash and non-cash incentives on cadr e performance in the Penajam Paser Utara Region (p < 0,001).
