Abstract

Different thawing metods were applied to frozen beef in order for evaluating both the physical and chemical qualities.  The study used a completely randomized design with six treatments as follow:1) fresh beef  as  control, 2)  frozen  beef allowed  at  room temperature (27-300C)  until internaltemperature of beef reached 00C (became unfrozen), 3) Frozen beef thawed at refrigerator temperature, i.e. 8-100C, 4) Frozen beef thawed at running water which its temperature range within 25-280C, 5) Frozen beef thawed by boiling water (1000C), and 6) Frozen beef thawed by hot water (<1000C). Every treatment was made in three replicates. Results of the study repealed that frozen beef thawed by running water, hot water, or boiling water resulted in better physical qualities than the one thawed by refrigerator temperature (P<0.05). All thawing methods did not significantly affect on chemical qualities of the beef (P>0.05). Moreover, all frozen beef showed similar chemical qualities to the fresh beef.

Abstract

Turmeric is widely used as a herbal medicine, food preservation and food coloring. However, food industries have less interest to utilize turmeric as a food coloring due to its spesific aroma. The objective of this research was to obtain the proper method to eliminate the turmeric’s spesific aroma. The experimental methods consisted of 3 stages, namely distillation (A1) and non-distillation (A2) methods which then was extracted by maceration method with the addition of 96% ethanol (B1), acetone (B2) and ethanol 96% + acetone (B3) as stage 1; with (C1) and without heating (C2) as stage 2; and the addition of 3% acetic acid and 3% citric acid as stage 3. The results of stage 1, 2, and 3 were the spesific aroma of turmeric tend to be weak when use the distillation and maceration with 96% ethanol where the curcumin content was 0.50%, and with the addition of 3% acetic acid which have a brighter color, respectively. The color analysis showed that the color by adding 3% acetic acid has CIE b* (yellow) of 66.85 with pH of 3.24. So, the proper method for eliminating the turmeric’s spesific aroma was distillation process then followed by extraction using 96% ethanol and adding 3% acetic acid to increase the color brightness and homogeneity.

Abstract

Increased cassava demand was not followed by an increase in farmer income. To cover the expenditures of households, farmers work in non-agricultural activities. The objective of this research is to analyze the level of household income and contribution of cassava farming to the total income of farm household. The research was conducted in Purabaya Village, Purabaya sub-district, Sukabumi district, conducted from April until June 2013. The location was chosen purposively by Simple Random Sampling of 36 farmers sample. Conclusion The average household income of peani is Rp. 5,721,639 per year or Rp. 476,800 per month. Cassava business income contribution of 59 percent, from non-cassava farming by 9 percent and outside farming ie trade and services 32 percent of total household income Rp 40,553,344, -

Abstract

Cooking oil was one of the basic needs which consumed by the whole of Indonesian society. The high price of palm cooking oil and the lack of knowledge caused the repeated using of palm cooking oil which is harmful to health. The objective was to determine the physicochemical changes of used palm oil (Jelantah) on chicken frying. This research was using purposive sampling method. The experimental design used completely randomized design with one factor of frying frequency which were 0, 3, 7 and 10 times. Statistical analysis showed that the physicochemical tests (color analysis, peroxide value, acid value and moisture content) in each test was significant or significantly different, from the linear regression predicted that the frying frequencies which were used in fried chicken vendors were 16-54 times. In addition, it can be seen the characteristic qualities of used palm oil on chicken frying namely: color analysis L from 39.40% to 46.49%, a from 5.80% to 9.26%, b from 16,57% to 22.82%; peroxide value from 1.599 meq/kg to5.623 meq/kg; acid value from 0.076% to 0.153%; and water content from 0.021% to 0.267%. The physicochemical tests of used palm oil sample from fried chicken vendors namely: color analysis at L of 27.11%, a of 9.63%, b of 18.02%; peroxide value of 10.07 meq / Kg; acid value 0.434%; and water content of 0.166%.

Abstract

Taro is rich in nutrients and purple sweet potato is rich in anthocyanin which can be functioned as a pigment. The aims of the study were to determine the best paste formulated using taro flour and mash sweet potato based on sensory quality test, to evaluate the preference level of crackers using hedonic test and to analyze the chemical properties of selected product. The study was begun with pasta preparation assigned by three ratios of taro flour and mash purple sweet potato (1:1 , 3:1 and 1:3). The sensory qualities of paste including color, taste, and texture were analyzed. Paste made with ratio of taro flour and mash purple sweet potato 1:3 had the best sensory qualities. The paste was then used for crackers making, crackers with filler of paste (sandwich) and crackers made by mixing the dough and paste. Each crackers was then evaluated its preference level using hedonic test including color, aroma, taste, crispyness, and the preferred crackers was analyzed its chemical properties including moisture, ash, protein, lipid, and carbohydrate. The results showed that sandwich crackers was preferred than mixed dough-paste crackers and contained of moisture 3.54%, ash 0.82%, protein 8.57%, fat 7.15%, and carbohydrates 79.93%.

Abstract

Research on Influence of Egg Shape and Egg Weight on Characteristic of  Quilted Egg (Coturnix coturnix japonica) has been done for one month, this research aim to know the influence of egg shape and egg weight to fertility, hatchability,  hatching weight, and sex in bird Quail and can select good egg weight to hatch. This study used quail eggs (Coturnix coturnix japonica), as many as 216 grains divided into two groups. Each is a group with an egg shape (pointed, semi-pointed, and round) and group with egg weight (mild, moderate, and severe). The hatching machine used is semi-automatic hatching machine, before the egg is inserted into the hatching machine is done selection that includes egg shape and egg weight, egg shape selection is done by measuring the width and length of eggs using sliding and egg weight is done by weighing the eggs with scales digital. The first factor is egg form with three levels, A1 (egg taper = 75 - 78,12%), A2 (semi-pointed egg = 79,59 - 82,11%), and A3 (round = 82,78 - 86,76 %). While the second factor is the egg weight of three levels namely B1 (light weight = 9 - 10 grams), B2 (Medium weight = 11-12 grams) and B3 (Weight = 13-14 grams). Of the 2 factors with three levels were obtained 9 treatment combinations of each treatment repeated 4 times, each repetition consisted of 6 grains. The experimental design used was Completely Randomized Design (RAL) 3 x 3 factorial pattern for fertility variables, hatchability, hatching weight and percentage of male sex. The results showed that the eggs did not give a significant effect on fertility, hatchability, hatching and sex weights, whereas for egg weight only had a significant effect on hatch and percentage of male sex.

Abstract

Beets are one of the most useful food ingredients. One of the benefits is to provide natural color in the manufacture of food products. The pigment present in the red bit is betasianin. Betasianin is a class of antioxidants. Drink jelly is a soft gel-shaped drink, generally jelly drinks have elastic properties but consistency or gel strength is weaker than jelly agar. This study aims to diversify food products from red bit beans.The research begins by making red beet extracts first, after which mixing all the ingredients of making jelly drinks. The experimental design used in this research is Completely Randomized Design with three treatment levels and two replications. Data analysis was processed by Kruskal Wallis and ANOVA. The treatments used were comparison of beets and water 1:10, comparison of beets and water 1: 12,5 and comparison of beets and water 1:15. Organoleptic tests used in the study were hedonic rank test and sensory quality test.The results showed that the treatment comparison of beets and water 1:15of  was selected jelly beverage based on hedonic test result by panelist. Chemical analysis of the selected product was then performed. Drink jelly comparison of beets and water 1:15 has antioxidant levels of 4.2 mg vit c / 100g sample, food fiber content of 14, 92%, and total sugar of 26.27%.
