Abstract

This study aims to obtain the best concentration of basil extract as an ingredient for making beef jerky by analyzing the water content, pH, antioxidant and organoleptic content of beef jerky. This study used a completely randomized design, namely soaking meat with different concentrations of basil. The use of basil has three levels of immersion concentration, namely P1 = 20%, P2 = 25%, P3 = 30%, P4 = 35%. The need for soaking meat with basil is 20 sample units. The variables measured were water content, pH, antioxidants, and organoleptic including color, taste, texture and preference. Parameter testing is first tested for normality by using the Shapiro-Wilk test. If the data distribution is normal, then the ANOVA is at the 5% level, if there is an effect, it is continued with the Duncan Multiple Region test. Antioxidants were tested descriptively and organoleptic properties (color, taste, texture and preference) were tested using the Kruskal-Walis Non Parametric test and continued, the Man Witney significant difference test. The results of this study indicate that different concentrations of basil can have a significant effect (P <0.05) on water content, pH and organoleptic. The higher concentration of basil extract can reduce the water content, normalize the pH value, improve organoleptic. Giving basil concentration 25% to 35% can increase antioxidant activity.

Abstract

One alternative agricultural waste that can be used for ruminant feed, especially in the dry season, is cassava waste with of silage. This study aims to determine the quality of the fiber fraction contained in the silage of cassava leaves with the addition of different levels of cassava flour and fermentation. This research used a factorial completely randomized design (CRD) with two treatment factors.  Factor A (added level of cassava waste consists 0%, 25% and 50%) and factor B (fermentation time consists 0, 14 and 28 days). The parameters measured were the composition of the fiber fraction including Neutral Detergent Fiber (%), Acid Detergent Fiber (%), Acid Detergent Lignin (%), hemicellulose and cellulose (%). The results of this study indicate that there is an interaction between the addition of cassava waste levels and different fermentation times on the content of the fiber fractions of NDF, ADF, ADL, Hemicellulose and Cellulose. It can be concluded that the addition of 25% cassava waste level and 28 days of fermentation time can improve the quality of  cassava silage fiber fraction

Abstract

This study aims to determine the best smoking time in the process of processing smoked salted eggs by analyzing the water content, pH, total phenol and organoleptic in smoked salted eggs. This study used a completely randomized design, namely smoking eggs with different lengths of time having four treatment levels, namely P1 = 130 minutes, P2 = 150 minutes, P3 = 170 minutes, P4 = 190 minutes. The required smoking time is 20 sample units. The variables measured were water content, pH, total phenol and organoleptic including color, taste, texture and preference. Parameter testing includes water content, pH first tested for normality using the Shapiro-Wilk test. If the data distribution is normal, it is continued with Duncan's Multiple Region test. Total phenol was tested descriptively and organoleptic testing (color, taste, texture and preference) using the Kruskal-Walis Non-parametric test and continued, the Man Witney significant difference test. The results of this study indicate that different lengths of smoking time can have a significant effect (<0.05) on water content, pH and organoleptic. The smoking time of 190 minutes can reduce water content, pH but increase panelists' acceptance of organoleptic (color, taste, texture and preference) in eggs and the presence of antioxidant activity.

Abstract

KUB chicken is native Indonesian chicken resulted from crossbreeding program conducted by Indonesian Research Institute for Animal Production (Balitnak). Feed is one of the factors that determine chicken farming productivity. The cost of commercial feed is relatively high. Black soldier fly larvae meal is potential alternative which can be used to substitute fishmeal which is one of the most expensive ingredients used in commercial feed. BSF larvae meal contains 40.2% crude protein, 28% crude fat, 2.36% calcium, and 0.88% phosphorus. This study was aimed at assessing the performance of KUB chickens fed BSF larvae meal used as the substitute for fishmeal in ration. The study was conducted within 75 days from 1 April to 15 June 2021 at Nambo Peuntas, Suka Jaya Village, Taman Sari District, Bogor Regency. One-hundred KUB chickens aged 1 day with average body weight of 29.77±2.94 were allocated evenly into 20 experimental cage units in a completely randomized design with 5 treatments and 4 replicates. Treatment consisted of rations containing 0% BSF larvae meal + 10 % fishmeal (R0), 2.5% BSF larvae meal + 7.5 % fishmeal (R1), 5% BSF larvae meal + 5% fishmeal (R2), 7.5% BSF larvae meal + 2.5% fishmeal (R3), and 10% BSF larvae meal + 0 % fishmeal (R4). Results showed that no significant differences (P>0.05) in the performance of KUB chickens were found. It was concluded that BSF larvae meal could be used to substitute the whole fishmeal in rations of KUB chickens without any detriment to the chicken performance.
