Abstract

Crab is fishery potential fishery product but it is a perishable food. Application and handling of crab can be done by processing it into canned products. Crab are very likely to be polluted by heavy metals in these waters because of heavy metal contamination is already very high in the ocean. The purpose of this activity is to find out directly assay methods of heavy cadmium (Cd) in canned crab product and know the standard limit of heavy metal cadmium (Cd) The analytical method of cadmium heavy metal content (Cd) on several canned crab products using the method analysis of SNI 2354.5: 2011. Based on the results of the crab product analytical (Portunus pelagicus) the results showed  <0.5 mg / kg, so that based on the threshold of cadmium (Cd) on the tin crab pasteuriation product is regulated in SNI 6929: 2016, the product is safe and suitable for consumption.

Abstract

Cuttlefish is widely consumed by the public because it has a soft meat texture and high nutritional content. This makes the cuttlefish one of the mollusca that is a source of protein in addition to squid and octopus. The disadvantage of cuttlefish is that it is prone to deterioration in quality. One effort to prevent quality deterioration in cuttlefish is by freezing. The purpose of the implementation of this Field Work Practice is to decide the production process of frozen  cuttlefish  (Sepia officinalis) using the Contact Plate Freezing (CPF) method and to know the obstacles that occur in the production process. Field Work Practice was held in PT. Karya Mina Putra, Rembang, Central Java. The stages of the frozen cuttlefish  production  process  at  PT.  Mina Putra's work includes the reception of raw materials, weighing I and sorting, labeling I, weighing II, washing, pan preparation, freezing, glazing, packaging and labeling II, storing in cold storage, and loading. The freezing process is carried out by the Contact Plate Freezing (CPF) method for 6 hours until the temperature reaches -40 ° C. The obstacle in the production process of frozen cuttlefish is there was a Contact Plate Freezing (CPF) machine damage and there are some employees who do not apply the SOP applied to prevent cross-contamination of the product.

Abstract

The freshwater aquaculture fishery sector in Indonesia has the potential to be developed through extensification and intensification. The problem in aquaculture is diseases that infects cultivated organisms, one of which is caused by bacterial infection. Bacterial infection can cause huge losses to cultivation activities, including death which results in economic losses. The purpose of this study is to identify the A. salmonicida and E. ictalury in live fish that will be exported from DI Yogyakarta. The method of examining bacteria used is conventional which consists of isolation, purification, presumptive test, biochemical test, and identification. The results showed that all live fish samples (koi, gouramy, goldfish, catfish, and eel) were not infected with A. salmonicida and E. ictalury. This shows that all live fish are in a healthy condition and suitable to be exported of DI Yogyakarta.

Abstract

Sargassum sp. is a brown algae (Phaeophyta) which contains fucoxanthin, i.e. a carotenoid pigment that can be developed as natural dyes. On the cheek coloring products (blusher), color is an important parameter that determines the consumer appeal. This study was carried out by extraction, purification, qualitative and quantitative analysis, making blusher preparation with addition of fucoxanthin pigment extract form Sargassum sp. of 4%, 5%, 6% and 7%, physical quality and antioxidant activity test in the best treatment. The results of this study indicated the application of fucoxanthin pigment extract from Sargassum sp. giving effect to the physical quality of blusher. This blusher preparation had good color homogeneity and almost the same particle size as the commercial blusher. It also had good color stability during 15 days of storage with a change in pH which increases between 8,32-9,34. The irritation reaction that occurred on 10 panelists were undetected and it had the highest hedonic value on blusher with the addition of 4% fucoxanthin. The best treatment in this study was blusher with 4% addition of fucoxanthin pigment extract. The 4% treatment had good homogeneity and color stability. The skin irritation was undetected, it had the most neutral pH value or matches with physiological pH value of the skin and had a moderate antioxidant activity with an IC50 value of 123,66 μg/mL and blusher had a shape like small chunks with a mean size of 36,79 μm in SEM analysis.

Abstract

Red snappers are fishery commodities which have high market values. Raw materials of red snappers are important elements which determine the quality of the final products. Therefore, an enhancement of raw materials quality should be conducted through quality supervision and examination when the raw materials are retrieved, stored, and about to enter production process. The aim of this fieldwork practice is to find out the raw materials quality control on red snapper freezing process in PT. Tridaya Jaya Manunggal Pasuruan, East Java. The data taken consists of primary and secondary data which are processed descriptively. Data collection techniques through observation, interviews, active participation and literature review. PT. Tridaya Jaya Manunggal has implemented quality control on production process, starting from raw materials retrieval until these raw materials become final products. The quality control of raw red snappers were done in accordance with the quality control procedures which are plan, do, check, and action. The results of implementing quality control which were executed with organoleptic examination, temperature, Total Volatile Base (TVB), microbiology, and heavy metals on raw red snappers. Raw materials which didn’t meet the required standard were rejected, and then they were processed to be second grade products.
