Abstract

This research aims to develop a strategy for developing innovative technology-based coffee agroindustry in Kare District, Madiun Regency. The application of modern technology, such as roasting and wet processing, has proven to improve robusta coffee's quality and added value and increase competitiveness in the domestic and international markets. In addition, empowering farmers through training and technical assistance is key to improving their skills in post-harvest technology management. The research method used is mixed-method, with qualitative and quantitative approaches. Data was obtained through a survey with a Likert scale questionnaire, in-depth interviews, field observations, and documentation. SWOT analysis evaluates the strengths, weaknesses, opportunities, and threats in developing coffee agroindustry in the region. The study results show that the coffee industry in Kare District has significant strengths and opportunities, although it still faces challenges related to capital and technology limitations. The recommended strategies are product diversification, institutional capacity building, and more intensive promotion, as well as the development of coffee agro-tourism as a step to improve farmers' welfare and expand market access

Abstract

Kefir grains function as a multifaceted starter comprising a variety of microbiota, such as lactic acid bacteria, yeast, and acetic acid bacteria, encapsulated within a polysaccharide matrix. This study investigates the efficacy of kefir grains in creating sourdough starters to assess sourdough bread's physical and chemical properties and identify the ideal formulation based on sensory acceptance. A Completely Randomized Design (CRD) comprised five treatments and three replications. Data were subjected to statistical analysis by Analysis of Variance (ANOVA) followed by Duncan's New Multiple Range Test (DNMRT) at a 5% significant threshold. The results indicated that including kefir grains in the sourdough starter markedly affected dough development, bread volume, acidity (pH), moisture content, ash content, protein content, carbohydrate content, and sensory characteristics, including texture and flavor. Treatment C, utilizing a 10% starting concentration, had the most advantageous outcomes, attaining enhanced sensory and compositional quality.

Abstract

Acrylamide, a potentially carcinogenic compound, forms during high-temperature food processing and has garnered significant attention in the coffee industry due to its implications for public health and food safety. This study analyzes research trends on acrylamide formation and mitigation in coffee processing over the past decade, utilizing bibliometric methods and VOSviewer software. A dataset of publications from 2014 to 2024 was examined to uncover key research themes, leading contributors, and collaborative networks in the field. The analysis reveals a growing body of research focused on understanding the mechanisms of acrylamide formation, developing mitigation strategies, and balancing quality preservation with regulatory compliance. Emerging trends, such as metabolomic approaches and advanced roasting techniques, highlight a shift towards more targeted and sustainable solutions. Additionally, the findings emphasize notable international collaborations, though further interdisciplinary research is needed to address existing gaps and enhance practical applications. This bibliometric study provides valuable insights into the scientific landscape of acrylamide research in coffee processing, offering a foundation for future studies and innovations aimed at ensuring food safety while maintaining coffee quality.
