Abstract

The consumption of plant-based protein in Indonesia is comparatively higher than the consumption of animal-based protein, indicating a growing trend of substituting traditional meat-based ingredients with plant-based alternatives in dishes like meatballs. In order to address this shift and improve the nutritional value of the population's diet, researchers are exploring food diversification by incorporating oyster mushrooms and celery into meatball products. The objective of this study is to evaluate the impact of different ratios of oyster mushrooms (Pleurotus ostreatus) and celery (Apium graveolens) on the protein content and sensory qualities of plant-based meatballs. The research utilized a Randomized Complete Block Design (RCBD) with three different levels of celery addition in oyster mushroom meatballs: 0%, 10%, and 20%. Data analysis was conducted using SPSS software, employing the One-Way ANOVA test for normally distributed and homogenous data, and the Kruskal-Wallis test for non-normally distributed or heterogeneous data. The results indicated that the most favorable outcome was observed in formulation F2, which had a protein content of 9.700%, meeting the Indonesian National Standard for meatball products. Additionally, the addition of celery had a significant impact (p < 0.05) on the protein content.

Abstract

The development of road or toll road infrastructure in a country can be used as a benchmark to determine the level of economic progress of a country, both macro and micro. The location of toll exits has a significant effect in absorbing labor and creating new business activities. Projects are dynamic, so contractors must be responsive to changes in situations and conditions on the project, if they want to succeed in reaping optimum profits. Aspects of planning a highly competitive construction at this time are very demanding on accuracy, effectiveness, efficiency, and economy in analyzing a project. In the world of construction projects, there are many things that can be done, one of which is cost control. In controlling costs, efforts can be made so that the realization of costs that occur is in accordance with the needs of implementation and is not excessive, such as cost suppression efforts, namely making savings without reducing quantity or quality. The Earned Value Method is used to determine project performance in terms of costs at one time, determine project performance in terms of schedule/time at one time, estimate costs to complete the project after the evaluation time and estimate the time to complete the project after the evaluation. In this research the author carried out a cost analysis using the Earned Value Method on the preservation of the Section 5 Pandaan Malang Toll Exit Road.

Abstract

Infrastructure development plays a very important role as capital in efforts to stimulate increased economic productivity, both at the national and regional levels, as well as reducing unemployment, alleviating people from poverty and of course improving the standard of living of the community at large. Delays in completing a project are a problem that often arises and can have an impact on the entire work, especially with time delays resulting in increased costs which can be detrimental to many parties. This delay also occurred in the Kapas-Glendeng 8 bridge construction project, Bojonegoro Regency. In anticipation of these delays, it is necessary to accelerate time and costs. In this research the author uses the crashing method with the alternative of increasing working hours. The crashing method is a way of estimating cost variables to determine the maximum and most economical reduction in the duration of an activity that is still possible to reduce. The research results showed that the total time and cost of the project required after crashing was 174 calendar days with a cost under accelerated conditions of Rp. 2,555,189,555.98 with a difference of 6 calendar days from the normal duration of 180 calendar days and a fee under normal conditions of Rp. 2,548,581,990.63.

Abstract

In construction projects, inadequate implementation of the Occupational Safety and Health Management System (OHSMS) poses risks to the safety and well-being of workers, resulting in decreased performance and compromised project quality. This study focuses on the Kapas-Glendeng bridge widening project in Bojonegoro Regency, identifying key obstacles such as workforce competence, limited experience, insufficient training, and challenges accessing digital information. Additionally, issues related to worker involvement in regulation-making, understanding of Personal Protective Equipment (PPE), reporting procedures, and documentation of work accidents were observed. To address these challenges, the study recommends strategies such as involving untrained workers in competence-building programs, providing apprenticeships for less experienced personnel, implementing comprehensive training information systems, actively engaging workers in project planning, enforcing OHS monitoring systems, ensuring mandatory PPE usage with penalties for violations, and establishing clear procedures for recording and reporting work accidents. This proactive approach aims to enhance OHS implementation and mitigate risks in construction projects.

Abstract

The Occupational Safety and Health Management System (SMK3) is a comprehensive framework that is used to regulate various activities and manage occupational safety and health (K3) in a systematic manner. In the context of the Probolinggo Banyuwangi Toll Road Development Project Package 1, the implementation of SMK3 was assessed to determine the level of implementation, identify factors that influenced the implementation, and propose corrective actions. The assessment was conducted based on 166 criteria that were outlined in PP No. 50 of 2012, which is a regulation that governs occupational safety and health in Indonesia. Out of these 166 criteria, it was found that 149 criteria were fulfilled, accounting for a compliance rate of 89.76%. However, there were 17 criteria that were not met, resulting in a non-compliance rate of 10.24%. These non-compliant criteria were categorized as minor issues.Overall, the implementation level of SMK3 in the Probolinggo Banyuwangi Toll Road Development Project Package 1 was deemed satisfactory, as the majority of the criteria were fulfilled. The project also demonstrated adherence to relevant laws and regulations, further confirming its commitment to occupational safety and health. Based on the assessment findings, corrective actions can be proposed to address the non-compliant criteria and improve the implementation of SMK3. These actions may include providing additional training and resources, enhancing communication and coordination among stakeholders, and implementing stricter monitoring and evaluation mechanisms.
