Abstract

ABSTRACTMelinjo (Gnetum gnemon L) has many benefits. Besides as a food ingredient, melinjo also contain antioxidant compounds. This research aimed to test the sensory properties of melinjo which includes color, aroma, flavor and crispness. The benefits of this research can provide information to the public about the influence of boiling beans melinjo against melinjo sensory test and its content. The research was conducted in the village Nunu Rainis District of Talaud Islands and the Department of Agricultural Technology Laboratory for 2 months. The design used was a completely randomized design (CRD) with four long boiling treatment, ie A = 5 minutes, B = 10 min, C = 15 min, D = 20 minutes. The best test of the sensory panelists obtained in boiling for 20 minutes treatment (treatment D), the chemical content as follows: 11:38% moisture content, ash content 0.79%. 1:45% fat content, protein content 14:12%, 72.26% carbohidrat levels.Keywords: Gnetum gnemon L, Crackers, Sensoric

Abstract

ABSTRACTThe aims of the study are to determine the development of BRI credit which has distributed in the agriculture sector, to know and to analyze the development of its credit financing on agriculture and non agriculture, to know about non performing loans at BRI. The research was conducted at PT. Bank Rakyat Indonesia (Persero) Tbk specifically at Tondano Minahasa District Branch. In this research only on certain BRI unit that ditributes credits to agriculture sector. Those units are unit BRI Langowan, unit BRI Kawangkoan, unit BRI Tondano, and unit BRI Sonder. The data were analyzed by using quantitative and qualitative descriptive data analysis then were presented in Tables. The results show that the financing plan and credit that distributed by BRI branch in Tondano to agriculture sector in Minahasa is increasing from year to year. It can be seen from the financing achievement provided by BRI is greater than the BRI financing target. The development of BRI agriculture and non agriculture financing has experienced of increasing from 2011 to 2013 through BRI credit such as KUR Mikro and KKP-E. BRI has faced credit problems when the time of credit repayment in which the NPL of non agriculture is 50% as for agriculture sector NPL is only 20%. This may happen because of the lenders could not pay their debts.

Abstract

ABSTRACTTHE FARMING BUSINESS INCOME OF TRADITIONAL AGROFORESTRY ON SOME SLOPE AT KINALI VILLAGE-MINAHASA REGENCYThis research aims to analyze the farmer’s income of agro-forestry farmland based on slope declivity. This research was run on May-June 2014 at Kinali Village Kawangkoan Sub-regency Minahasa regency. The Method was used in this research was purpossive, 10 units of farmlands were chosen based on three cluster of slope. They were 0-15 degrees, >15-30 degrees and >30 degrees. The implementation of traditional agroforesrty system in Kinali village give higher income to farmer than monoculture system. The income from seasonal plants give contribution from Rp. 1.000.000,- to Rp. 3.000.000,- per planting season. Besides contribution of woody plants income are from Rp. 2.000.000 to Rp. 118.785.000. The income from woody plants is potential value based from stumpage value that grow there.Key words; farming business income, agro-forestry, Kinali Village, slope

Abstract

ABSTRACTBulbs Daluga (Cyrtospermamerkussi (Hassk) (Schott) is a type of local tubers in North Sulawesi region especially in Sangihe. It has high carbohydrate value that is 83.85% and 2.75% crude fiber. Processing of Daluga tubers into flour, provide opportunities of development being more varied, which indirectly helped the achievement of food security programs. As a damaged easy commodity, daluga require special prevention to extend the quality of safe,one of the main carried out is processed into flour substitution in this regard in making brownies. Brownies is a product bakery are included in the category of cake with the basic ingredients of flour. This study aimed to evaluate the acceptability of panelists to bake brownies that use raw materials substitution daluga flour. The benefit of this research is to provide information what percentage of flour that can be substituted daluga in making brownies. This study use randomized design with three replications object research, which are flour substitution treatment daluga 100% 0% wheat flour, flour daluga 80% 20% wheat flour, flour daluga 60%, 40% wheat flour, flour daluga 40% wheat flour and 20% 60% 80% daluga flour wheat flour. These results indicate that the resulting colour of the flour substitution daluga brownies are light brown, resulting from the addition of cocoa flour or cocoa powder. Taste of flour brownies daluga preferred by the panelists is caused due to components such as milk, eggs, flour and cocoa. The resulting aroma has a distinctive aroma of brownies in general. The texture of the soft and dense brownies due to additional materials such as eggs. While the expanding power is due to the heating. The greater the amount of flour, the greater the power generated expands brownies. Abstract

ABSTRACTFruit is a commodity that has no nutritional value but is easily damaged, so it is necessary to utilize alternative. One such alternative is processed into fruit leather. The raw material of fruit leather can be derived from various types of tropical fruits or subtropical with sufficiently high fiber content. This research aims to produce a mixture of fruit leather from papaya fruit and bark that can be accepted by panelists both the nature of the sensory and chemical properties. This research was conducted at the Laboratory of Food Science and Technology, Faculty of Agriculture Unsrat for ± 2 months. This study used a completely randomized design with a mixture of papaya and bark treatment. Treatment A = (80% papaya : 20% bark), B = (70% papaya : 30% bark), C = (60% papaya : 40% bark), D = (50% papaya : 50% bark). The results of organoleptic test, the most preferred treatment panelists followed by analysis of the chemical properties of Fruit eather is treated B = (70% papaya : 30% bark). Where the chemical properties of the most preferred Fruit leather panel that has a moisture content 12.46%, total acid 0.38%, and 48.96% total sugars.Keywords: fruit leather, papaya, bark

Abstract

ABSTRACTThis study head to analyze the level of erosion (TBE) which occur in the eastern part of watershed Tondano with Geographical Information Systems Applications. The method used in the calculation is the USLE erosion and analysis degree erosion using a table of erosion potential based Geographical Information Systems. Observed variables are rainfall, soil erodibility, length and slope, crop management, soil conservation management. The results showed the level of erosion that occurs in watershed Tondano eastern part is divided into five classes: very heavy (SB), weight (B) moderate (S) light (R), and very light (SR). Very heavy class (SB) with and area of 719.20 hectares or 3.21%. weight (B) with and area of 17.07 hectares or 0.40% for, the class of moderate (S) with an area of 3250.13 or 77.35%. and for the lightweight class (R) with and area of 79.91 hectares or 0.40%. whereas for the classification of very light (SR) with and area of 135.01 hectares or 3.21%.keywords: Rainfall, soil Erodibility, length and Slopes, Crop Management, Land Use.

Abstract

ABSTRACTThis study aims to determine the formula pulp pumpkin and chicken, to get the quality of meatballs quality obtain and evaluate the level of preference panel which includes flavor, aroma, texture, color, appearance of the mix of chicken meatballsproduct and pumpkin. Benefits studies provide information about the quality of chicken meat balls with the addition of pumpkin pulp and introduce such products as diversification nutrient-rich food. This study uses a completely randomized design (CRD), which consists of treatment A = 20% pureed pumpkin mixture and 80% chicken meat, B = 30% pureed pumpkin mixture and chicken meat 70%, C = 40% mixture of pumpkin pulp and 60% chicken, D = 50% mixture of pumpkin pulp and 50% of chicken meat. This study suggests that chicken meatballs with pumpkin pulp mixture of 20% and 80% of chicken meat based on organoleptic test are the most favored treatment by the panelists in terms of aroma and flavor, while in terms of texture on the pumpkin pulp mixture of 30% and chicken 70%, and the color of the pumpkin pulp mixture of 50% and 50% of chicken meat. The chemical testing panelists preferred treatment is the addition of pumpkin pulp 20% and 80% of chicken meat with the following results: 72.29% moisture content, ash content of 1.63%, 1.63% fat content, protein content and carbohydrate 13:36% 11.62%.Keywords: pumpkin, porridge, chicken meatballs

Abstract

ABSTRACT Pia cake is one of the food products of Gorontalo that have been produced by some home industry. In relation to food security that ensures that the food consumed does not contain hazardous materials that safe for consumption, so that need for oversight and implementation of good sanitation systems at pia produscing. This study aimed to evaluate the level of implementation of sanitation in UKM at Gorontalo. In this study is expected to provide information on the importance of implementing sanitation at UKM Pia manufacture in Gorontalo and provide information to the government in Gorontalo through relevant agencies about the principles of sanitation at UKM Pia in Gorontalo. The study used survey method, which takes primary data from field observations through interviews with the questionnaire guide. From the research data showed that in all UKM do not use a hat, gloves, masks, and aprons. While all employees in four UKM use the clothes clean, tidy and wash hands, to cookware and clean container. The processing is done, all UKM are still using the traditional method and storage of product on all UKM in hygienic circumstances. Keywords : pia, UKM, sanitary

ABSTRACTThe objective of this research is to determine whether intercropping planting patterns affect the level of coconut production and income of coconut’s farmers and which cropping patterns intercropping will result in bigger production and coconuts’farmer incomeThe research result showed that intercropping cropping patterns provide different levels of coconut production. Cropping patterns that affects most large coconut production was coconut-corn cropping pattern. Intercropping cropping patterns affected the income of farmers. Cropping pattern that gives the biggest farmer's income was coconut-rice cropping pattern.

Abstract

ABSTRACTThis study aims to determine the problems that occur on the Farmers Exchange (NTP) in North Sulawesi Province from 2004 period until 2013. Data analysis used in this study is NTP. Based on the results, it can be concluded that the Farmers Exchange in 2004-2013 to move between 98.21 to 163.10 with an average of 122.89. In general,regional of North Sulawesi province has experience well-being, although in 2013 has a decline NTP, which is only 98.21. This is caused by the low value of agricultural production sold by farmers
