Abstract

The purpose of this study was to implement the Sanitation Standard Operating Procedure (SSOP) and Good Manufacturing Practice (GMP) in the Amplang mackerel fish company in Selakau District, Sambas Regency. This study was conducted through direct observation and interviews using a checklist made by SSOP and GMP. The results of the study indicate that the implementation of SSOP and GMP is still not ideal, and there are still many aspects that need to be improved. Although the industry has a P-IRT permit and is located close to the source of raw materials, there are several problems that hinder the implementation of SSOP and GMP. These include the layout and cleanliness of the production building, inadequate sanitation facilities, process control and documentation, water supply quality, employee hygiene, and management of production equipment. Improvements in these elements are essential to improve production safety. Improving the understanding of business owners and employees about the importance of implementing SSOP and GMP is also an important part of the improvement effort. To meet food safety standards and ensure product quality, improvements are needed in various aspects. To ensure the safety and quality of mackerel fish crackers products, this study suggests better implementation of SSOP and GMP.

Abstract

Abstract. Clean production is a preventive approach in environmental management that aims to minimize waste and improve resource efficiency without sacrificing product quality. This study aims to evaluate the application of the principle of clean production in a household-scale fish cracker processing business unit in Parit Baru Village, Selakau District, Sambas Regency. The research uses a qualitative descriptive method with data collection techniques through direct observation, in-depth interviews, and visual documentation. The results showed that organoleptically the fish crackers produced had good quality with a uniform color appearance, a non-pungent aroma, and a crispy and chewy texture. However, from the results of the assessment using the CPPOB-IRT form, 26 discrepancies were found divided into minor, major, serious, and critical categories, especially in the aspects of sanitation, employee hygiene, building conditions, and production documentation. Narrow production space, non-one-way process flows, and lack of sanitation facilities are the main challenges. There is no raw material recording available and there is no defective product recall procedure. The results of the study show that the application of the principle of clean production and strengthening the quality system is still very necessary. With simple intervention and continuous assistance from related agencies, the product quality and competitiveness of the fish cracker household industry have the potential to be significantly improved. Abstract

Good Manufacturing Practice (GMP) and Standard Sanitation Operating Procedure (SSOP) are essential guidelines in the food industry to ensure product hygiene and safety. In the marine and fisheries sector, amplang (rice crackers) manufacturing businesses often implement these guidelines to maintain product quality and prevent contamination. The amplang manufacturing process involves several crucial steps: receiving raw materials, filleting, milling, mixing spices and flour, molding, frying, draining, sorting, and packaging. Research has identified several aspects that require improvement, including building structures and facilities, production equipment, hygiene and sanitation facilities and activities, food labeling, record-keeping and documentation, employee training, and improvements to packaging. Specific actions to address these include upgrading building materials to meet hygiene requirements, replacing or maintaining equipment to prevent contamination, installing or improving handwashing and sanitizing stations, updating food labels to comply with regulations, establishing thorough record-keeping practices, providing regular employee training on hygiene standards, and enhancing packaging to better protect the product. Overall, the implementation of GMP and SSOP is still suboptimal and requires improvement to ensure the product is safe and meets food safety standards.

Abstract

Arung Medang Village is a coastal area where most residents depend on salted fish processing and marketing as their main source of income. However, the marketing applied by fishermen have not been optimal, resulting in less than maximum income. This study aims to identify the factors that influence salted fish marketing in Arung Medang Village, Tangaran Sub-District, Sambas Regency. The research employed a descriptive quantitative method with a survey approach. The population consisted of 42 salted fish processing fishermen, all selected as respondents using purposive sampling. Data were collected through observation, interviews, questionnaires, and documentation. The data were analyzed using multiple linear regression with SPSS version 26 to examine the effect of the marketing mix (11P) on fishermen’s income. The results showed that simultaneously, all eleven marketing mix variables significantly affected fishermen’s income, with a significance value of 0.043 and a determination coefficient (R²) of 79.4%. Partially, six variables had a significant influence, namely Price, Promotion, Packaging, Promise, Partnership, and Physical Evidence. These findings confirm that such factors are the main determinants of successful salted fish marketing in Arung Medang Village.

Abstract

. The Scombridae fish group belongs to the type of pelagic fish most frequently caught in Indo-Pacific waters, including the Indonesian archipelago, and has a relatively high economic value. In Singkawang City, the catch of Scombridae species such as tuna, mackerel, and Indian mackerel shows considerable fluctuations both in terms of price and catch volume. Therefore, the purpose of this study is to analyze the fluctuations in catch and price of Scombridae fish, namely Spanish mackerel , narrow-barred mackerel, frigate tuna, bullet tuna, and Indian mackerel. The data used in this study are secondary data obtained from https://portaldata.kkp.go.id/portals/data-statistik/layer1. From this website, the data collected include fish catch and price data from 2019 to 2023. The results show that for the catch data, spanish mackerel, bullet tuna, and indian mackerel were recorded during the 2019–2023 period, with the highest catches respectively being 606,650 kg for spanish mackerel, 203,730 kg for frigate tuna, 776,030 kg for bullet tuna, and 275,760 kg for indian mackerel. Frigate tuna had no recorded catch in 2020, with its highest catch recorded in 2021 at 203,730 kg and the lowest at 105,780 kg. Meanwhile, for the spanish mackerel, catches were only recorded in 2021 with a total of 17,000 kg. As for fish prices, the highest was spanish mackerel, reaching Rp 60,000 per kg in 2021, and even its lowest price remained higher than other Scombridae species, at Rp 45,000 per kg. Meanwhile, the lowest price among the five Scombridae species observed was Indian mackerel, at Rp 15,000 per kg.
