Abstract

Ice cream is a frozen food product made through a combination of freezing and agitation processes. Adding koro benguk beans will increase the ice cream's nutritional value, especially fiber. This research aims to determine the effect of the addition of Koro Benguk Beans (Mucuna pruriens (L). Dc.) on acceptance, physical properties, and tests for ice cream fiber content. Research methods included experiments to see the effect of adding koro benguk beans to ice cream on acceptability, including color, aroma, texture, and taste, as well as physical properties, including overrun, melting speed, and the ice cream emulsion stability test. The method used was the completely randomized design (CRD) non-factorial with 3 treatments; the addition of koro benguk beans was 30 g, 40 g, and 50 g of the total milk used with three repetitions each. Based on the ANOVA analysis, the following organoleptic test results were found: (1) on color, the highest value was 3.89 (like); (2) on taste, the highest value was 3.89 (like); (3) on aroma, the highest value was 3.70 (like); and (4) on texture, the highest value was 3.65 (like). Meanwhile, for the physical test, the following results were found: (1) on overrun, the highest value was 23.07; (2) on melting speed, the highest value was 8.09; (3) on emulsion stability, the highest value was 32.13; and (4) on fiber content, the highest value was 1.43. The addition of 30 g, 40 g, and 50 g of koro beans significantly affected the panelists' preference level, physical properties, and fiber content of ice cream. It is hoped that further research on koro bean ice cream will lead to the processing of koro bean porridge being better filtered to produce a smoother texture.

Abstract

Although boarding school students are already provided with food, they still prefer to eat fast food. However, the food provided for them are most likely low in fiber content and far from the word 'variety.' Therefore, counseling and nutrition education about the negative effects of fast food will significantly affect the development of adolescent knowledge. This study aims to analyze the effectiveness of nutrition counseling using leaflets and videos on increasing knowledge. This research is quantitative research with a quasi-experimental method. The population in this study was 62 teenagers. The sample collection in this study used the total sampling method. Pre- and post-test designs using a questionnaire were distributed to eighth-grade students. Data analysis was carried out using an independent t-test. Data are presented in tabular and textual forms. There is an increase in knowledge about the negative effects of fast-food using leaflet media, as evidenced by a p-value of 0.006. There is also an increase in counseling knowledge using video media, as evidenced by a p-value of 0.001. The average students’ knowledge about the negative effect of consuming fast food before counseling using leaflet media was 48.84; after counseling, it increased to 52.84. Meanwhile, counseling without the use of video media resulted in an average of 50.42, and it increased after counseling using video media to 54.58. Thus, it can be concluded that video media is more effective than leaflet media.

Abstract

Efforts that support optimal growth and development for children will continue to be carried out. One way to overcome this is through the provision of supplementary feeding for toddlers at the Posyandu. This research aims to educate and test the preference for supplementary feeding nugget formula based on local food, depik fish (Rasbora tawarensis), and tempeh on mothers of stunting toddlers. This study used the quasi-experimental design research with dependent t-test and ANOVA test. The result showed that the average value of a mother’s knowledge before being educated was 42.50. Meanwhile, the average value after being educated is 52.00, meaning that there is an increase in knowledge after being educated. The results of the liking test showed that there were 2.5% of respondents who said they did not like it, 7.5% of respondents said they liked it somewhat, 57.5% of respondents said they liked it, and 32.5% of respondents said they really liked it. This shows that the supplementary feeding products of depik fish nuggets (Rasbora tawarensis) and tempeh are favored by mothers of toddlers. The results of the dependent t-test showed that the p-value was < 0.05 (0.006). Therefore, it can be concluded that education has a significant effect. Based on the results of the ANOVA test, which resulted in a p-value of < 0.05 (0.001), it was concluded that supplementary feeding nuggets based on local food, depik fish nuggets (Rasbora tawarensis), and tempeh are favored by mothers of toddlers. It is hoped that the relevant agencies can inform the public about supplementary feeding products and the manufacturing process that utilizes local food.

Abstract

Hypertension is an abnormal increase in blood pressure in the arteries, and the increase continuously occurs over a period. People with hypertension must consider food factors (dietary compliance) because diet is one way to lower blood pressure. Patients with hypertension should adhere to a hypertension diet so that blood pressure becomes stable and further complications can be prevented. This study aims to determine the relationship between hypertension dietary compliance and blood pressure of hypertensive patients in Batoh Public Health Center, Lueng Bata District, Banda Aceh City. This descriptive-analytic research employed a cross-sectional design. The research sample was 37 women aged 45-60 years. They were selected using a non-probability technique with the purposive sampling technique. The research was conducted at the Batoh Public Health Center, Lueng Bata District, Banda Aceh City. The research data included hypertension diet compliance and blood pressure of hypertensive patients. The level of dietary compliance was determined using a questionnaire while the level of blood pressure was determined using a digital blood pressure measurement of Tensi One. The chi-square test was employed to analyze the relationship between diet compliance and blood pressure. This study has discovered that 64.9% of hypertensive patients have non-adherent diet compliance, and 78.4% of them have high blood pressure. These results denote a significant relationship between dietary compliance and blood pressure (p-value = 0.008).

Abstract

Patients with kidney failure in outpatient hemodialysis rooms often experience malnutrition and have decreased quality of life. Moroever, they frequently have incorrect knowledge about nutritional intake, especially protein. One way to deal with nutritional problems in kidney patients in outpatient hemodialysis rooms is nutrition counseling to provide knowledge about food handling/control. This counseling aims to enable patients to change their nutritional intake, especially protein. Thus, their nutritional and health status gets better and improved. This study aims to determine the effect of nutritional counseling on protein intake in patients with chronic kidney failure at the Cut Mutia Hospital, Aceh Utara. This research employed a descriptive-analytical method with a quasi-experimental design and a one-group pretest-posttest design. The research sample was 28 chronic kidney failure patients in outpatient hemodialysis rooms at RSUD Cut Mutia Aceh Utara. They were divided into two groups: 14 patients in a treatment group and 14 patients in a control group.  The patients received nutrition counseling for 30 minutes in the pre-test and post-test. The data were analyzed using a statistical test of the dependent T-test. The average protein intake in the treatment group before and after the nutritional counseling is 40.60 grams, and the average protein intake after the control group is 52.91 grams. The nutritional counseling significantly affects the protein intake of patients with chronic kidney failure in outpatient hemodialysis rooms at Cut Mutia Hospital, Aceh Utara (p = 0.00).

Abstract

Breakfast is an important eating and drinking activity before doing physical activities. People usually have breakfast at 06.00-09.00 A.M. Breakfast habits are strongly influenced by the level of knowledge. Nutrition knowledge can be increased through formal and informal education (counseling, training, seminars, and counseling) by using media as an attraction. Selecting the right media is expected to create interesting and effective message delivery. Good media are media that convey messages so that the target can know the content of the message and effectively change his behavior. This research employed a quantitative method with a quasi-experimental approach. This research was conducted in February 2021 at Timang Gajah Public Junior High Schools. The data were collected using a pretest-posttest with a control group design and a questionnaire, distributed to class VIII students in Timang Gajah Public Junior High Schools, Bener Meriah Regency. The research sample was 73 people. The data were analyzed using an independent t-test. This study has discovered an increase in knowledge about the importance of breakfast without using poster media with a p-value of 0.000. Meanwhile, counseling using poster media shows a significant increase with a p-value of 0.000. Using and not using poster media to increase students' knowledge about the importance of breakfast at Timang Gajah Public Junior High Schools, Bener Meriah Regency have a p-value of 0.000.

Abstract

The Bina Keluarga Balita (Toddler Family Development) program is designed to monitor and handle problems in the community. Mother's perception of this program should be assessed to find out their understanding of this program, monitor the growth of toddlers by examining the Kartu Menuju Sehat (Health Care Cards), and observe the development of toddlers by examining the Kartu Kembang Anak (Child Development Cards). This study aims to assess mothers' perception of the influence of the Bina Keluarga Balita program on the growth and development of toddlers. This quantitative research employed a cross-sectional design. The data were processed using a chi-square test. This study involved 45 mothers of children under five, The sampling was determined using the Lameshow formula. This study has revealed a relationship between mothers' perception of the growth and development of toddlers, as shown by the statistical result of p < 0.05. Meanwhile, the relationship between the mothers' perception of the growth and development of toddlers has a p-value = 0.007. Finally, the relationship between the mother's perception of the development and the development of toddlers has a p-value = 0.017. It is concluded that the mothers’ perception and toddlers' growth and development have an interrelated relationship. Thus, a good perception will create more significant growth and development in toddlers.

Abstract

Additional food feeding has limitations in terms of processing and variations. However, it can be modified in various forms by utilizing tempeh, a highly functional food ingredient. This study aims to (1) explore the acceptability of instant tempeh pudding based on the parameters of color, taste, aroma, and texture, and (2) analyze the content of the chemical test including water, ash, protein, fat, and carbohydrate content. This research employed an experimental design and a completely randomized design (CRD). Chemical properties were analyzed using the proximate method. Meanwhile, the organoleptic properties were analyzed using the hedonic test. This study employed 30 moderately trained panelists and conducted a statistical analysis using the ANOVA test and Duncan's follow-up test (DMRT). This research was conducted in June 2021 at the Organoleptic Laboratory and Goods Quality Testing and at the Certification Center to analyze chemical properties. The organoleptic test examined the categories of color, taste, aroma, and texture of three pudding treatments with the addition of 80 grams (A1), 100 grams (A2), and 120 grams (A3) of tempeh flour. The chemical test has discovered that the average water content of the pudding from the three treatments is 67.1–69.8, the ash content is 0.63-0.68, the protein is 3.80-4.22, the fat is 0.28-0.47, and the carbohydrates are 24.9-27.7%. The addition of 80 grams, 100 grams, and 120 grams of tempeh flour does not significantly affect the organoleptic properties of the pudding. Finally, the chemical analysis shows that the addition of 80 gr, 100 gr, and 120 grams of tempeh flour significantly affects water and carbohydrate content but does not significantly affect ash, protein, and fat content.

Abstract

A mother's knowledge of nutrition affects their behavior in rearing their children. A factor that influences the nutritional status of children is a mother's behavior in choosing and providing food. A mother's behavior affects her ability to meet the family's food supply, consume food based on the right nutritional rules, choose the type of food, and prioritize the food for her family. Mother's poor behavior can be caused by her insufficient level of knowledge about nutrition and insufficient ability to apply it in daily life. This research aims to determine the effect of pocketbooks on the nutritional knowledge of mothers of toddlers whose nutritional condition is below the red line. This research employed a pre-experimental design, namely one group pretest-posttest. The research subjects were mothers of children whose nutritional condition is below the red line. Moreover, this study employed a total sampling technique with inclusion criteria, and the number of samples was 28 people. The statistical test using the independent T-test has obtained a p-value = 0.000 (< 0.05). Meanwhile, the measurement results show that the question of "how to deal with children without appetite" gets the fewest answers. This result shows that the mothers still do not understand how to deal with children without appetite. However, one mother has the most correct answers stating that "sample food for children should adjust their age." This answer means that the mothers already understand sample food for children according to their age.

Abstract

The Covid-19 pandemic has affected school children who are not homeschooled. Moreover, the pandemic has negatively impacted their food intake, sleeping behavior, and physical activities; these impacts lead to obesity. This study aims to (1) describe the children's intake of energy and nutrients (KH, protein, and fat) that cause obesity during the 2021 Covid-19 pandemic, (2) describe the incidence of obesity in children during the 2021 Covid-19 pandemic, and (3) analyze the relationship between food intake and the incidence of obesity in children during the 2021 Covid-19 pandemic. This study employed a quantitative design with a cross-sectional approach. The researchers investigated the relationship between energy, carbohydrate, fat, and protein intake and obesity in children. This research was conducted at Raudhatul Mubarakah Islamic Boarding School from 31 August to 6 September 2021. This study has discovered that most of the respondents (78%) have insufficient energy intake, 23 samples (46%) have insufficient carbohydrate intake, 39 samples (78%) have insufficient fat intake, and 20 samples (40%) have sufficient protein intake. Moreover, this study has found that 22 samples (44%) are obese while 28 samples (56%) are not obese. Finally, this study has proven a relationship between protein intake and the incidence of obesity (p < 0.05). Meanwhile, energy, carbohydrate, and fat intakes do not show significant relationships with the incidence of obesity (p > 0.05).
