Abstract

According to the AKG (2019), the potassium requirement of adults is 4,700 mg. If a snack is given 10% of the requirement, then 470 mg is obtained per snack meal. To meet this need, an innovation of high-potassium snacks was carried out by formulating red beans in the form of flour into pancakes. The purpose of this study to determine the acceptability and potassium content of red bean pancake formulation as an alternative snack for people with hypertension. This study was an experiment on 4 different formulations with a ratio of wheat flour and red bean flour 100: 0 g, 85: 15 g, 70: 30 g, 50: 50 g, then tested for acceptability and tested for potassium levels. The highest acceptability test was in formulation 3 (PKM 3), which was 3.59 in the preferred category with a potassium content of 447.5 mg/100g. One serving of red bean pancake snack based on caloric needs obtained 80 grams for adult men with 358 mg of potassium and 67 grams for adult women with 300 mg of potassium. The highest acceptability test was in formulation 3 (PKM 3). One serving of red bean pancake snack can not meet the needs of potassium

Abstract

According to (WHO, 1992) anemia is a condition where the Hb level is lower than the normal limit. The purpose is to determine the acceptability and levels of iron in processed mung bean pudding products with the addition of katuk leaves as a source of iron snacks for adolescents. This research method is experimental. Data collection is obtained from organoleptic tests and Fe levels in the laboratory. Statistical analysis used the Kruskall Wallis and Mann Whithney test. The results showed organoleptic properties, the most preferred formulation by the panelists was the PKU formulation with a ratio (80:30). The highest Fe content in the control code was PKA at 18.91 mg/kg. Nutritional Adequacy Ratio recommends intake of 16 mg of Fe per day as a dietary effort to prevent anemia. If the snack is given 2 times with a portion of 10% of daily needs = 10% x 16 mg = 1.6 mg. Meanwhile, the Fe content of PUKAHITUK Pudding was <0.028 mg/kg. If the green bean pudding and katuk leaves weigh 90 g/cup, they contain 90gr/1000 x < 0.028 mg = 0.0252 mg/cup. It can be concluded that 1 cup of pudding does not meet the snack needs for teenagers.

Abstract

Severe nutritional deficiencies, including growth retardation, are infant conditions caused by malnutrition that result in being smaller than their age indicates. Factors that influence stunting in young children include direct factors such as diet and infectious diseases, as well as indirect factors such as nutrition, parenting, food transmission, and family knowledge. This research is useful to know of mothers of stunted infants about animal foods and their attitudes and behaviors when providing such foods in the village of Gungungan Roll, Probolinggo Regency. is. The research method used was descriptive. The study involved 38 mothers with stunted children aged 12 to 60 months. Data were collected by questionnaire-based interviews. Studies show that most stunted infants are between 42 and 58 months of age. The results also indicate a lack of animal protein due to low consumption of animal food. Most mothers have good knowledge (23 or 60.5%), agreeable attitudes (33 or 86.8%), but exhibit inadequate behavior (22 or 57.9%) in providing animal-based dishes. Mothers of stunted toddlers with good knowledge are more receptive and respond well to explanations about the condition, influencing their attitudes towards it.

Abstract

The prevalence of stunting among toddlers in Nganjuk District is >20%, and it is a nutritional problem in the community. The aim of this research is to determine the description of complementary feeding practices for stunted toddlers (aged 6-24 months) in the Wilangan Sub-district. The research design employed is cross-sectional, where independent and dependent variables are collected at relatively the same time. The study was conducted from November 2022 to May 2023. This is a descriptive study with 28 stunting children as samples using the total sampling method. Data collection of complementary feeding practices was conducted through interviews, while nutritional status by measured height. The study showed less than 50% of infants received exclusive breastfeeding and timely introduction of complementary feeding at 6 months, but more than 60% did not follow the proper principles of complementary feeding between ages 12 - 24 months. As the age increases the inaccuracy of complementary feeding is getting bigger and this affects the occurence of stunting childern. Therefore, its recommended that mothers of toddlers more active in increasing their knowledge about providing appropriate complementary feeding for their children according to their age stages, with the assistance of community health workers and healthcare personnel.

Abstract

One of the nutritional problems in adolescents is Undernutrition, which can be caused by inadequate energy and protein intake. A contributing factor to the lack of intake is body image. Undernutrition can lead to decreased learning concentration and have implications for future pregnancy. To determine the relationship between energy and protein consumption levels and body image with the prevalence of Undernutrition in Shafta Surabaya High School. This study is an analytical observational research using the SQ-FFQ 2-week form to determine energy and protein consumption levels and the BSQ form to assess body image. The percentage of female students with severe energy deficit consumption (52.9%), severe protein deficit consumption (41.2%), and positive body image (84.3%) is high. The prevalence of Undernutrition is 47.1%. The Spearman correlation test results show a significant relationship between energy and protein consumption levels and body image with Undernutrition prevalence. Most respondents have severe energy and protein deficit, positive body image, and a high prevalence of Undernutrition. There is a significant relationship between energy and protein consumption levels and body image among female adolescents Further research is needed to explore adolescents' knowledge regarding the ideal body shape.

Abstract

Obesity is a condition of excessive accumulation of body fat tissue which will cause disease. Obesity can be defined as a result of overeating. This study aims to determine the effect of balanced nutrition education using the emodemo method on the knowledge and attitudes. This research is a quantitative Pre-Experimental with the type of pre-test and post-test One Group Design, data collection using questionnaires. The sample of this research is 34 respondents using Proportional Random Sampling technique. Statistical tests used the Wilcoxon Signed Runk Test to determine the effect before and after being given counseling using the emodemo method module game assembling donut rings on the level of knowledge and attitudes about balanced nutrition. The level of knowledge of obese adolescents by 8.8% increased to 85.3%. While the attitude level of obese adolescents was 82.4% increasing to 88.2%. There is an effect of balanced nutrition education using the emodemo method on the knowledge and attitudes of obese adolescents. Schools can provide healthy canteens that provide balanced nutritious meals for adolescents.
