Abstract

Stunting for children under the age of 5 years is caused by long-term protein deficiency and it is a public health problem in Indonesia. Patin fish is rich in protein, selenium and taurine, which help stimulate the growth and development of children. The aim of study was to assess the acceptability of thigh skewers (made with Patin fish and tofu) as a potential alternative to prevent stunting in infants and children, based on the principles of proper nutrition. Experimental study was conducted on a control group and three treatment groups. Organoleptic test was conducted among 25 panelists by using indicators of color, taste, aroma and texture. The average distribution of formulas for SLT 0 (3.73), SLT 1 (3.91), SLT 2 (3.57), SLT 3 (2.85). The most preferred formula was SLT 1. The SLT 1 consisted of 70 grams of Patin fish and 30 grams of tofu. The protein content of one serving of Sate wrapped around the thigh (Patin fish and tofu) is adequate to meet the protein requirements of toddlers. It providing 7.55 g of protein per snack, with a protein energy ratio of 24.61% and energy density of 3.62.

Abstract

The prevalence of stunting among toddlers in Nganjuk District is >20%, and it is a nutritional problem in the community. The aim of this research is to determine the description of complementary feeding practices for stunted toddlers (aged 6-24 months) in the Wilangan Sub-district. The research design employed is cross-sectional, where independent and dependent variables are collected at relatively the same time. The study was conducted from November 2022 to May 2023. This is a descriptive study with 28 stunting children as samples using the total sampling method. Data collection of complementary feeding practices was conducted through interviews, while nutritional status by measured height. The study showed less than 50% of infants received exclusive breastfeeding and timely introduction of complementary feeding at 6 months, but more than 60% did not follow the proper principles of complementary feeding between ages 12 - 24 months. As the age increases the inaccuracy of complementary feeding is getting bigger and this affects the occurence of stunting childern. Therefore, its recommended that mothers of toddlers more active in increasing their knowledge about providing appropriate complementary feeding for their children according to their age stages, with the assistance of community health workers and healthcare personnel.

Abstract

Anemia is a problem today, if it’s not treated it will have a bad effect. Anemia can be prevented by consuming animal protein foods that are high iron content, namely anchovies with a content of 3.9mg/100g and vegetables that have a high in iron content, namely Moringa leaves. The aim is to determine the acceptability and iron levels of Dimsum Lori as an alternative snack to prevent anemia for Adolescents Girls. Methods, experimental research. There are 3 formulations, namely the formulation ratio between chicken meat: anchovy: moringa leaf flour, namely 100g:0g:0g, 0g:97g:3g, 0g:94g:6g. Acceptance test as many as 25 people, somewhat trained category. Test for iron levels, ICP-OES method. Data analysis technique, Kruskal Wallis statistical test and continued with the Man Whitney test. Research results, acceptability test F1; 3.86 (likes), F2; 3.37 (likes), and F3; 3.03 (regular). The results of the iron content test of the control formulation; 1.96mg/100g. Meanwhile, the most preferred formulation; 2.32mg/100g. In conclusion, the dimsum treatment formulation meets the needs of Fe in one snack of 2.3mg (F2); 2.5mg (F3) of the RDA requirement for Adolescents Girls for one snack of 1.27mg.

Abstract

Stunting, a growth disorder in children characterized by height or length below the standard for their age, can be prevented by ensuring adequate intake of energy and protein. This study aims to assess the acceptability of modified Batawoli nuggets as a potential snack alternative for toddlers with stunting. The research employed a true experimental design with control and treatment groups. Organoleptic tests were conducted on Batawoli nugget formulations with varying ratios: F0 (1:0:1:1), F1 (1:2:1:1), F2 (1:1:1:1), and F3 (2:1:1:1). Data analysis utilized the Mann Whitney test. The findings reveal organoleptic test scores for each formulation: F0 scored 3.35 (somewhat liked), F1 scored 3.9 (somewhat liked), F2 scored 3.46 (somewhat liked), and F3 scored 3.52 (somewhat liked). The study concludes that the most preferred formulation, based on all indicators, is F1 (1:2:1:1), which provides an energy value of 3.5 kcal/g (>1.5 kcal/g) and a Protein Efficiency Ratio of 12.6% (within the range of 10% - 16%). Consequently, this formulation presents a promising local complementary food option for toddlers with stunting.

Abstract

Balanced Nutrition Message recommends getting used to breakfast. If you don't have breakfast, your concentration will be disturbed and your learning achievement will drop. Counseling is carried out to improve a person's behavior with messages conveyed through print media (posters) the aim is to change students' breakfast habits. In order to observe students' breakfast habits, this research used a pre-experimental study with a one group pretest posttest design. A total of 40 children participated in the study at SDN 155 Gresik in grades 4 and 5, using the proportional random sampling method. The average knowledge score before and after counseling was 61.35 78.50. Breakfast behaviors were graded on a scale from 75.58 to 81.55 before and after counseling. According to the study's findings utilizing the paired t-test, balanced nutrition counseling through poster media had an impact on understanding of balanced nutrition (p 0.05), but had no impact on breakfast behaviors (p > 0.05). It is preferable to implement balanced nutrition advice, and one of them is establishing a breakfast routine because it can stimulate the brain and aid in concentration and focus while learning.

Abstract

The nutritional status of school children can be influenced by food consumption and snacking habits, potentially leading to malnutrition and obesity. This study aims to identify the profile of macro-nutrient intake, snacking habits, and the nutritional status of elementary school children at UPT SDN 86 Gresik. It is descriptive in nature and involves 82 students as respondents. The survey method was utilized, employing questionnaires and interviews for data collection. The research conducted at UPT SDN 86 Gresik revealed that 46.7% of students had an energy deficit, 62.2% had a protein deficit, 64.4% had a fat deficit, and 57.8% had a carbohydrate deficit. Additionally, 42.2% exhibited poor snacking frequency, and 60% consumed unhealthy snacks. Based on the research findings, it can be concluded that 4 students (8.9%) had poor nutritional status, 32 students (68.9%) had a normal nutritional status, 2 students (4.4%) had excess nutritional status, and 7 students (15.6%) were obese

Abstract

The growth and development of elementary school-aged children require adequate nutrition. A preliminary study conducted on 10 students of Latukan Elementary School revealed that 20% of them were overweight, 60% had good nutritional status, and 20% were underweight. However, this preliminary study failed to provide a comprehensive understanding of the knowledge, snack consumption behavior, and nutritional status of students at Latukan Public Elementary School in Lamongan Regency. To address this gap, a descriptive study was conducted to determine the knowledge, consumption behavior of school snacks, and nutritional status of elementary school students in Latukan, Lamongan Regency. The study population comprised 66 students, with a sample size of 40 students selected through proportional random sampling. Data were collected through interviews using questionnaires and food frequency questionnaires. The findings revealed that 55% of the students had good knowledge, 55% exhibited moderate behavior, 57.5% consumed school snacks frequently, and 62.5% had good nutritional status. Moreover, 22.5% of the students were categorized as having more nutritional needs. This research aims to raise awareness among the community regarding the importance of nutritional knowledge and healthy snack consumption habits among school-aged children.

Abstract

Adolescence, which lasts from ten to twelve years, is a period of growth and development of the body that requires adequate nutritional intake to prevent problems such as malnutrition and decreased concentration in studies. According to basic data collected in October 2020, 30% of teenagers had normal nutritional status and 70% had poor nutritional status or were underweight. The purpose of this study is to ascertain how nutritional status and intake are related the focus of adolescent learning at the Ahludz Dzikri Al-Qur'an Assembly. This research uses an analytical observational method with a cross-sectional approach. Thirty students from the Ahludz Dzikri Al-Qur'an Council participated in this study. The Spearman test was employed to examine the non-probability sampling methods used in this investigation. The research results showed that there is a relationship between nutritional status and nutrient intake, and that nutrient intake and nutritional status are related, and then learning should be focused, so it is better for students to consume a variety of foods to improve the students' nutritional status and concentration.
