Abstract

Previous research indicates that individuals who engage in social eating tend to consume larger amounts of food and purchase foods with higher energy content than individuals who eat alone. This excess energy intake can lead to excess weight in a person, which can later have an impact on increasing the risk of developing various non-communicable diseases. Social eating factors found to influence energy intake include eating companions, activity while eating, and cooking practices. This study aims to analyze the relationship between social eating factors and energy intake. The methodology used is quantitative research with a cross-sectional study design and data analysis using the chi-square test. The research sample was taken based on the Indonesian Food Barometer (IFB) study using a probability sampling technique with a systematic random sampling type, which then obtained a sample of 450 subjects aged 25-45 years in urban areas of Indonesia. The results showed that 2.4% of subjects had an excess energy intake, 56% of subjects ate with others, 71.9% of subjects ate while doing other activities, and 54.9% of subjects had their food cooked by others. The statistical test results showed no significant relationship between social eating (eating companion, activity while eating, cooking practices) and energy intake (p values: 0.605; 0.996; 0.555, respectively). It can be concluded that social eating factors are not significantly related to energy intake in adult age groups in urban areas of Indonesia.

Abstract

Overweight is a condition caused by abnormal fat accumulation in adipose tissue that has an impact on body health, such as high cholesterol, hypertension, diabetes mellitus, and heart disease. Fiber intake, fast food consumption, and consumption of sugar-sweetened beverages are factors in eating habits that influence the occurrence of overweight. The problem of overweight in children can continue into adulthood, increasing the risk of disease complications and premature death. This study aims to determine the relationship between fiber intake, fast food consumption, and consumption of sugar-sweetened beverages with overweight in students of SDN Pesanggrahan 03 Jakarta. This study was conducted in February–April 2023. The research method used was quantitative observational with a cross-sectional approach. A total of 115 subjects were selected using a proportional random sampling technique. Data collection on the overweight variable was carried out by measuring body weight and height, data on the fiber intake variable using the Semi Quantitative-Food Frequency Questionnaire (SQ-FFQ), while data on fast food consumption and consumption of sugar-sweetened beverages using the Food Frequency Questionnaire (FFQ). Data were collected univariately and bivariately using the Chi Square test. The study found that 38.3% of subjects were overweight, there was a relationship between fiber intake and consumption of sugar-sweetened beverages with overweight (p<0.05), while fast food consumption had no relationship with overweight (p>0.05).

Abstract

Overweight and obesity is one the serious health problems whose prevalence continues to increase every year and the fifth largest risk factor for death in the world. Many factors cause overweight and obesity in adolescents, one of which is consumption behavior and sedentary behavior. The purpose of this study was to determine the relationship between energy intake and macronutrients, consumption of vegetable and fruit, sedentary lifestyle, and body image with the nutritional status of students in MAN 21 Jakarta which was held in May 2022. This research is an quantitative study with a cross-sectional study design. Samples of 88 students was selected using simple random sampling. Data were collected through direct interviews using a 2x24 hours food recall form and Semi Quantitative Food Frequency Questionnaire (SQ-FFQ) and records using a modified Adolescent Sedentary Activity Questionnaire (ASAQ) and Body Shape Questionnaire (BSQ-34). Data taken in the form of nutritional status based on IMT/U index, student characteristics (gender and age), energy and macronutrient intake, consumption of vegetables and fruits, sedentary lifestyle, and body image using pearson and spearman rank correlation statistical test. The result of statistical test showed there was a significant relationship between energy intake (p<0.05), protein (p<0.05), fat (p<0.05), carbohydrates (p<0.05), body image (p<0.05) and the nutritional status of students at MAN 21 Jakarta. However, there was no significant relationship between vegetable and fruit consumption (p>0.05) and sedentary lifestyle (p>0.05) with the nutritional status of MAN 21 Jakarta students.

Abstract

The growth of children in infancy is very rapid. If at this time the toddler's nutritional needs are not met, it will cause disturbances in the growth and development of toddlers. Underweight in toddlers occurs as a result of acute malnutrition. In the long term, children with underweight will experience cognitive impairment, decreased learning achievement, behavioral disorders, and increase the risk of death. Nutritional status in children can be influenced by several factors such as maternal knowledge regarding nutrition, diet, and complementary feeding behavior. The purpose of this study was to determine the relationship between nutritional knowledge, diet, and complementary feeding behavior with nutritional status at the age of 6-12 months in Cigeulis Village, Banten Province in 2022. This study was conducted in February-July 2022. The number of samples is 38 babies and baby mothers. This research has a cross-sectional design. Data were collected by measuring body weight and interviewing questionnaires to determine nutritional knowledge, eating patterns, and complementary feeding behavior. The results showed that 65.8% of toddlers had normal nutritional status, 65.8% of mothers had good nutritional knowledge, and 63.2% demonstrated appropriate complementary feeding practices. The dietary patterns of toddlers indicated adequate energy intake (65.9%), protein intake predominantly in the excessive category (47.4%), insufficient fat intake (60.5%), and adequate carbohydrate intake (50%). There was a significant association between complementary feeding practices and the nutritional status of toddlers. However, no significant relationship was found between energy, protein, and fat intake and the nutritional status of toddlers. In contrast, carbohydrate intake was significantly associated with the nutritional status of children under five (p<0.05).

Abstract

Type 2 Diabetes Mellitus (DM) is a chronic disease characterized by impaired insulin action, resulting in uncontrolled blood glucose levels. Dietary management, including adherence to recommended meal timing, portion size, and food choices, is a fundamental component of type 2 DM management. However, dietary adherence among patients with type 2 DM remains a major challenge in routine health care practice. This study aimed to describe the educational level, nutritional knowledge, and dietary adherence among patients with type 2 DM. This quantitative study employed a cross-sectional design. The study subjects were patients with type 2 DM receiving outpatient care at Karawang District Hospital in 2017, selected using purposive sampling. Data were collected through interviews using structured questionnaires to obtain information on subject characteristics, educational level, nutritional knowledge, and dietary adherence. The results showed that none of the subjects demonstrated adherence to the recommended dietary guidelines. These findings indicate that poor dietary adherence remains a key issue in the management of type 2 DM, regardless of patients’ educational level and nutritional knowledge. This condition highlights the need for strengthening continuous nutrition education and implementing more intensive and accessible nutrition counseling approaches. Increasing patient engagement in nutrition counseling services is expected to improve understanding and application of appropriate dietary management, thereby supporting optimal glycemic control in patients with type 2 DM.

Abstract

Rebon shrimp is a local food source of heme iron with relatively high iron content; however, its acceptability among adolescents remains low due to its strong odor and less appealing appearance. Processing dried rebon shrimp into dim sum may enhance both acceptability and nutritional value. This study aimed to evaluate the effect of dried rebon shrimp substitution on the organoleptic characteristics, proximate composition, and iron content of dim sum. An experimental study was conducted using a completely randomized design with five substitution levels of dried rebon shrimp: F1 (20%), F2 (40%), F3 (60%), F4 (80%), and F5 (100%). Organoleptic evaluation was performed using a 7-point hedonic scale involving 35 semi-trained panelists. Data were analyzed using the Kruskal–Wallis test followed by the Mann–Whitney post hoc test. The results demonstrated that different substitution levels significantly affected the aroma, texture, taste, and color of dim sum. The formulation with 40% dried rebon shrimp substitution showed the highest acceptability. Proximate composition and heme iron analyses of the selected formulation revealed a moisture content of 63.71%, ash content of 1.49%, carbohydrate content of 24.01%, protein content of 7.57%, fat content of 3.22%, and heme iron content of 1.20 mg/100 g. Although dried rebon shrimp substitution increased the heme iron content of dim sum, the product does not yet qualify as a source or high-heme iron food.

Abstract

Anemia in pregnant women is a health problem that can cause serious complications for both the mother and the fetus. Anemia prevalence among pregnant women in Indonesia was 48.9% in 2024, while at the Wonggeduku Barat Community Health Center from January to March 2023, the rate was 25.6%. This study aims to analyze the determinants associated with the incidence of anemia in pregnant women in the Wonggeduku Barat Community Health Center working area. This study was an observational analysis with a case-control study design. The sample consisted of 78 pregnant women (39 cases and 39 controls), matched by gestational age in the first, second, and third trimesters. The data were collected through interviews and hemoglobin laboratory tests. Data analysis used the odds ratio test with SPSS Statistics version 25, with a 95% confidence level. Data analysis was performed using the Odds Ratio test with SPSS version 25 and a 95% confidence level. The statistical test results showed that compliance with iron tablet consumption (OR=3.053) and dietary patterns (OR=2.970). It was concluded that iron tablet consumption and dietary patterns were risk factors for anemia in pregnant women. Therefore, it was recommended that access to better health services be improved, and that education on the importance of a nutritious diet for pregnant women in preventing anemia be provided.

Abstract

Beras kencur (Kaempferia galanga) is a traditional Indonesian herbal beverage with potential to be developed into an instant product through drying technology. This study aimed to analyze the effect of different maltodextrin concentrations on organoleptic characteristics, proximate composition, total flavonoid content, and yield of instant beras kencur produced using the spray-drying method. A completely randomized design (CRD) was employed with three maltodextrin concentrations, namely 20%, 25%, and 30%. The organoleptic evaluation consisted of hedonic and sensory quality tests for both the powder and reconstituted beverage, while proximate and total flavonoid analyses were conducted on the best formulation (P3). The results showed that variations in maltodextrin concentration did not result in significant differences in organoleptic characteristics. The formulation containing 30% maltodextrin (P3) showed the highest mean sensory acceptance, particularly in terms of color and overall acceptance, and was therefore selected as the optimal formulation. The best product was characterized by high water and carbohydrate content. Total flavonoid content slightly decreased after the spray-drying process, from 0.24 ppm before drying to 0.22 ppm after drying. In addition, increasing maltodextrin concentration contributed to a higher yield of instant beras kencur powder.

Abstract

The incidence of anemia in Enrekang Regency in 2021 was 12.2% and increased by 22.75% in 2022. This study aims to determine the effect of education using social media, such as Instagram, on changes in nutritional behavior to prevent anemia. This study employed a quasi-experimental design with a one group pretest-posttest approach. The sample used in this study were 75 female students in grades 10 and 11 at SMA Model Negeri 5 Enrekang. The sampling technique was stratified random sampling. Before being given education through social media, such as Instagram, knowledge and behavior were measured. Three days later, education was given for two weeks, and posttests 1 and 2 were conducted with a two weeks interval. Data analysis used the Wilcoxon test. The average knowledge score before being given education was 10.24 and after treatment increased by 32.7% to 13.59 in posttest 1 and posttest 2 increased by 64.4% to 16.83. The average behavioral score before education was 23.15, and after treatment, it increased to 28.53 in posttest 1 and 35.23 in posttest 2. There was an influence of education on changes in adolescents' knowledge (p=0.000) and behavior (p=0.000) regarding anemia prevention. It is recommended that education regarding the consumption of iron-rich foods and the benefits of consuming iron tablets for adolescents be provided.

Abstract

Dry pasta, such as spaghetti, is a hygroscopic food product susceptible to quality degradation due to moisture absorption from the environment. This study aims to predict the shelf life of an innovative dry pasta made from a sago starch and oyster mushroom composite using the critical moisture content method (Labuza Model). The shelf life estimation was conducted based on the Labuza equation with input parameters including an initial moisture content (Mi) of 0.139 g/g solids, equilibrium moisture content (Me) of 0.218 g/g solids, and critical moisture content (Mc) of 0.164 g/g solids. The product was packaged in aluminum foil with an effective surface area (A) of 0.024 m² and a packaging permeability (k/x) of 0.024 g/day.m².mmHg. The results showed that at a storage temperature of 30 °C with a saturated vapor pressure of 31.80 mmHg and a slope value (b) of 0.227, the product has a predicted shelf life of 11.86 months (355.89 days). These findings indicate that the use of aluminum foil packaging is effective in maintaining the quality of sago starch and oyster mushroom-based pasta for long-term storage.
