Abstract

Keanekaragaman pangan berperan penting dalam pemenuhan kebutuhan gizi masyarakat pedesaan yang masih menghadapi tantangan ketahanan pangan. Penelitian ini bertujuan menganalisis hubungan antara keberagaman pangan dan status gizi pada kelompok dewasa di Desa Air Keruh, Kecamatan Rambang, dengan desain cross-sectional dan melibatkan 50 responden yang dipilih melalui purposive random sampling. Data dikumpulkan menggunakan Food Frequency Questionnaire (FFQ) untuk menilai keberagaman pangan serta pengukuran Indeks Massa Tubuh (IMT) sebagai indikator status gizi, kemudian dianalisis secara deskriptif dan inferensial. Hasil menunjukkan mayoritas responden berusia rata-rata 46 tahun dan memiliki IMT rata-rata 23,15 kg/m² yang umumnya termasuk kategori normal. Sebagian besar responden (74%) tergolong tahan pangan dan 86% memiliki pola konsumsi sangat beranekaragam, sementara hanya sebagian kecil yang mengalami kerentanan pangan ringan hingga sedang atau pola konsumsi kurang beranekaragam. Temuan ini menunjukkan bahwa tingginya keanekaragaman pangan berkontribusi positif dalam mendukung status gizi yang baik, meskipun masih terdapat kelompok masyarakat yang rentan terhadap masalah ketahanan pangan. Temuan ini menegaskan bahwa pentingnya peningkatan konsumsi pangan beragam sebagai strategi perlindungan terhadap gangguan gizi dan mendukung pencapaian status gizi optimal. Berdasarkan hasil tersebut, disarankan agar upaya perbaikan gizi di masyarakat pedesaan difokuskan pada peningkatan keragaman konsumsi pangan dan penguatan ketahanan pangan lokal secara berkelanjutan.

Abstract

Health education activities are one of the promotive and preventive efforts in instilling the values ​​of clean and healthy living behavior (PHBS) from an early age. In the context of implementing the community service program, an educational activity with the theme "Ayo Bersih, Ayo Sehat" was carried out at SDN 13 Rambang on May 26, 2025. The target of the activity was 44 students in grades 4 to 6 who were given learning through Participatory Learning and Action approach. The main focus of this activity is the introduction and direct practice of Washing Hands with Soap (CTPS) and sorting types of waste as part of healthy and environmentally friendly behavior. Students are given an explanation of the material using leaflets and demonstrations then invited to practice the six steps of CTPS using a decorative bucket facility specially designed for this activity. The CTPS song is also used to help students remember the stages of washing their hands more easily. In addition, an understanding of the types of waste is conveyed through interactive sticker map media, which makes it easier for students to classify organic, inorganic, and B3 waste. The results of the activity show that creative and interactive educational methods can improve students' knowledge and skills in maintaining personal and environmental hygiene. The high enthusiasm of students and the accuracy in practice indicate that learning involving visual media and direct activities is more effective in forming healthy behavior. Therefore, similar activities can be an applicable health education model in other elementary school environments

Abstract

Family food security is one of the determining factors for quality of life, especially for people in rural areas. The “Locally Nutritious for Us (LOKALITA)” program in Air Asam Village was implemented as an effort to improve the knowledge and skills of housewives in processing local food ingredients into healthy snacks through the creation of "Sempotel" (carrot tofu sempol). This activity involved 20 participants and included a series of activities in the form of filling out a pre-test, counseling on stunting and the benefits of local food ingredients, Sempotel making practice, product trials, and post-tests. The evaluation of the results showed a significant increase in knowledge in all indicators measured. Sempotel has been proven to have good nutritional value in one serving (3 pieces), namely 268.8 kilocalories of energy, 6.6 grams of protein, 16 grams of fat, and 25.8 grams of carbohydrates, so it is worthy of being categorized as an alternative healthy snack. The use of educational methods based on direct practice has been proven to be able to increase public awareness in utilizing local food potential optimally. This innovation is expected to support the realization of sustainable family food security in the future.

Abstract

Local food is food that grows and is available in the local area. One example of potential local food is purple sweet potato, which is rich in fiber and antioxidants that make purple sweet potato a good food for diabetes prevention through cooking demonstrations. The goal was to improve the skills of the community in making healthy snacks made from local food purple sweet potato. The method used was participatory education in the form of cooking demonstrations. As a result, the participants were able to do a cooking demonstration of making purple sweet potato candies independently, they were also enthusiastic about participating in the activity. The conclusion is that the skills of the community in making healthy snacks made from local food purple sweet potato and increasing the awareness of the Gunung Raja Village community about the importance of diabetes prevention.

Abstract

Masa sekolah dasar merupakan periode penting dalam pembentukan kebiasaan makan sehat anak. Pemahaman tentang gizi seimbang perlu ditanamkan sejak dini untuk mencegah masalah gizi dan mendukung pertumbuhan optimal. Kegiatan penyuluhan pedoman “Isi Piringku” dilaksanakan di SD Negeri 7 Lubai Ulu, Kabupaten Muara Enim dengan sasaran siswa kelas 5 sebanyak 29 orang. Metode pelaksanaan meliputi ceramah interaktif menggunakan media visual seperti poster, presentasi, dan lagu edukatif. Evaluasi dilakukan melalui pre-test dan post-test menggunakan lima soal pilihan ganda untuk mengukur peningkatan pengetahuan siswa. Hasil analisis menunjukkan adanya peningkatan rata-rata nilai dari 3,31 menjadi 4,79, dan hasil uji statistik menunjukkan nilai p = 0,000 (p < 0,05), yang mengindikasikan perbedaan signifikan sebelum dan sesudah penyuluhan. Penyuluhan gizi menggunakan media yang menarik terbukti efektif dalam meningkatkan pemahaman siswa mengenai pentingnya pola makan seimbang. Kegiatan ini diharapkan dapat menjadi model edukasi promotif yang berdampak positif dalam mendukung kebiasaan makan sehat sejak usia sekolah dasar.

Abstract

The problem of excess nutrition, such as overweight and obesity, is a major concern in Sukarami Village due to the high incidence and its association with non-communicable diseases. This study aims to evaluate the effectiveness of nutrition education interventions and MOBIYU local snack cooking demonstrations in improving nutritional knowledge and perceptions of healthy snacks. The research method used a quantitative approach with a pre-experimental one group pretest-posttest design. Respondents were housewives who were selected purposively. The intervention was carried out once in the form of counseling and cooking practice. Data were collected through questionnaires before and after the intervention, Subsequently, the data were analyzed using univariate analysis to describe the characteristics of each variable individually. The results showed a increase in nutritional knowledge and positive perceptions of local healthy snacks. The local food-based approach has proven to be applicable and potential as a promotive effort to prevent obesity, although further evaluation is needed for the development of a more sustainable and equitable program.

Abstract

The problem of toddler nutrition in Menanti Village is still high due to the lack of family knowledge about balanced nutrition and low consumption of animal protein. This community service activity aims to improve the understanding of mothers of toddlers through counseling and innovation in providing additional food made from catfish nuggets, which are easily available and have high nutritional value. The methods used include pre-test, interactive counseling, leaflet distribution, and post-test to measure changes in knowledge. The results showed an increase in the average value of mothers' knowledge from 73.60 to 96.80 after the intervention, with a statistically significant difference. This activity proves that nutrition education combined with local food innovation can improve family nutrition knowledge and practices, thus potentially improving the nutritional status of toddlers in similar areas.

Abstract

Food security is an important pillar of sustainable development in Indonesia, covering food availability, access, utilization and stability. Muara Enim Regency, including Pagar Gunung Village, still faces challenges in food diversification, high stunting, and limited access to clean water. To answer these challenges, the PBL student team of FKM Sriwijaya University implemented a family empowerment program through two main activities, namely GERTAKK (Family Consumption Food Planting Movement) and CERIA Fertilizer (Environmentally Friendly Liquid from Rice Water and Onion Peels). This program aims to improve household food security by utilizing narrow yards through the BUDIKDAMBER (Fish Farming in Buckets) method and processing household waste into liquid organic fertilizer. The activity was carried out on June 11, 2025 in the yard of the Pagar Gunung Village Head's house with an educational and participatory approach, involving 20 residents from six hamlets. The results of the activity showed an increase in knowledge, enthusiasm, and willingness of residents to utilize yard land and household organic waste independently. This simple and contextual strategy is effective in strengthening family food security in supporting a sustainable local food system.

Abstract

Penyembelihan hewan kurban merupakan praktik keagamaan tahunan yang berpotensi menimbulkan permasalahan kebersihan dan keamanan pangan apabila tidak dilakukan sesuai prosedur yang tepat. Program pengabdian masyarakat ini dilaksanakan di Desa Prabumenang dengan tujuan untuk meningkatkan pengetahuan dan kesadaran masyarakat terkait prinsip food safety dan food security melalui kegiatan penyuluhan terpadu. Kegiatan dilaksanakan dalam bentuk ceramah interaktif dan penyampaian materi menggunakan media leaflet serta powerpoint. Evaluasi dilakukan dengan metode pre-test dan post-test. Hasil menunjukkan adanya peningkatan signifikan pemahaman peserta pada hampir seluruh aspek yang diuji, seperti teknik penyembelihan, pengelolaan limbah, penyimpanan daging, dan etika penyembelihan. Masyarakat menunjukkan perubahan perilaku nyata saat Idul Adha, antara lain penggunaan alat pelindung diri, pengolahan dan penyimpanan daging sesuai standar, serta pengelolaan limbah secara lebih ramah lingkungan. Edukasi yang dilakukan mahasiswa kesehatan terbukti efektif dalam membangun kesadaran dan kapasitas masyarakat dalam menerapkan praktik kurban yang higienis, sesuai syariat, dan mendukung ketahanan pangan lokal.

Abstract

Desa Jiwa Baru, Kecamatan Lubai, Kabupaten Muara Enim menghadapi dua tantangan utama, yaitu ketahanan pangan dan pengelolaan limbah rumah tangga. Berdasarkan hasil survei, sebanyak 26% masyarakat tergolong rawan pangan ringan, sedangkan pengelolaan sampah belum optimal dengan 54% responden masih membakar sampah dan hanya 12% memanfaatkan TPS. Salah satu limbah organik yang melimpah namun belum dimanfaatkan adalah kulit pisang, padahal memiliki kandungan gizi tinggi dan potensi ekonomi. Menanggapi permasalahan tersebut, dilaksanakan program pengabdian masyarakat “KULIT EMAS (Kulit Pisang, Energi Masa Depan Sehat)” sebagai inovasi untuk meningkatkan ketahanan pangan dan pengelolaan limbah organik. Program ini bertujuan untuk meningkatkan pengetahuan dan keterampilan ibu rumah tangga dalam mengolah kulit pisang menjadi pangan bergizi berupa nugget. Metode yang digunakan mencakup edukasi, demonstrasi memasak, serta evaluasi melalui pre-test dan post-test. Pelaksanaan kegiatan ini dilakukan pada hari Rabu, 11 Juni 2025 di Poskesdes Jiwa Baru dan diikuti oleh 34 orang ibu-ibu. Hasil analisis menunjukkan adanya peningkatan signifikan pengetahuan peserta, dari nilai rata-rata pre-test sebesar 74,71 menjadi 95,29 pada post-test (p < 0,05). Temuan ini menunjukkan bahwa pendekatan berbasis demo masak dan penyuluhan interaktif efektif dalam meningkatkan pemahaman masyarakat terhadap pemanfaatan limbah organik sebagai sumber pangan sehat dan berkelanjutan. Program ini juga mendorong diversifikasi pangan lokal serta membuka peluang usaha mikro di tingkat rumah tangga.
