Abstract

Sargassum hystrix juice is a functional beverage made from S. hystrix through the immersion process, crushing, filtering, and pasteurization. Therefore, this study aims to determine the effect of S. hystrix concentration on antioxidant activity, level of consumer acceptance, and chemical composition of the juice. The fresh S. hystrix used were washed, immersed for three days, and blended at a concentration of 10, 20, 30, 40, and 50%, respectively. Meanwhile, the qualities of juice that were observed include yield, antioxidant activity, total phenol, water, ash, protein, and fiber content, formol number, total sugar, total plate count, and sensory analysis. The results showed that the S. hystrix juice had a value of yield 43.00-85.67%, pH 7.5, antioxidant activity 20.50-44.57%, total phenolic 32.78-293.11 mg GAE/g, water 93.03-95.39%, ash 0.36-6.34%, protein 0.88-4.96%, crude fiber 0.41-5.04%, formol number 15-21.67 mL N NaOH/100 mL, total sugar 3.10-4.61%, total plate count 2.3x103-4.3x103CFU/mL, sensory of color 1.83-2.95, flavor 2.49-3.29, and taste 2.29-3.50.

Abstract

Mini rice combine harvester adalah mesin pemanen padi yang saat ini banyak dioperasikan di lahan sawah. Penelitian ini bertujuan untuk mengetahui ergonomika mesin mini rice combine harvester dalam pemanenan padi di lahan sawah berukuran sempit. Pengujian ergonomika dilakukan berdasarkan karakteristik mekanis mesin dan karakteristik fisiologi operator. Karakteristik mesin diukur dari getaran mesin, polusi suara serta polusi debu yang dihasilkan. Karakteristik fisiologi operator diukur dari beban kerja yang digambarkan dengan perubahan denyut jantung kerja, suhu tubuh, kesakitan pada anggota tubuh yang dirasakan operator. Hasil penelitian menunjukkan bahwa harvester yang diuji mempunyai getaran mesin sebesar 14,2 m/dt2, kebisingan 92,4 dB, melebihi ambang batas kesehatan yaitu sebesar 6 m/dt2 dan 80 dB. Disarankan operasional mesin dilakukan secara bergantian operator dengan periode untuk setiap operator tidak lebih dari 1 jam. Debu yang dihasilkan menurut ISO 14644-1 termasuk kelas 6 atau bersih dan tidak membahayakan operator. Beban kerja berdasarkan pengukuran denyut jantung operator adalah sangat ringan - sedang. Hasil analisis kesakitan akibat kerja menunjukkan 14% anggotatubuh terasa sedikit sakit dan 3,3% anggota tubuh sangat sakit. Secara umum disimpulkan bahwa untuk dapat memenuhi kelayakan dari aspek ergonomi perlu dilakukan upaya perbaikan disain untuk menurunkan getaran dan kebisingan mesin.

Abstract

Pengembangan produk olahan susu kambing terfermentasi dan diperkaya dengan probiotik Bifidobacterium bifidum merupakan salah satu produk pangan fungsional (Functional Food) yang selanjutnya disebut sebagai Susu Bifidus. Susu bifidus sebagai salah satu produk fermentasi susu dapat dikonsumsi oleh masyarakat yang mengalami kesulitan mencerna laktosa (lactose intolerance). Daya terima konsumen terhadap susu kambing masih tergolong rendah dibandingkan dengan susu sapi, sehingga hal tersebut juga perlu diantisipasi. Penambahan ekstrak cengkeh (Syzygium aromaticum) pada susu Bifidus dapat digunakan sebagai alternatif senyawa aromatik alami, untuk menghilangkan aroma goaty pada susu kambing yang kurang begitu disukai oleh konsumen. Penelitian ini bertujuan untuk mengetahui pengaruh suplementasi ekstrak cengkeh terhadap viabilitas (daya hidup) dan aktivitas antibakteri Bifidobacterium bifidum serta kualitas kimia susu Bifidus. Parameter yang diamati pada penelitian adalah total Bifidobacterium bifidum, total bakteri dan luas zona bening susu Bifidus. Suplementasi ekstrak cengkeh sebesar 2% sebagai bahan suplementasi pada Bifidus milk dapat meningkatkan viabilitas probiotik Bifidobacterium bifidum. Ekstrak cengkeh dalam produk Bifidus milk berperan sebagai agen preservatif, didukung dengan adanya aktivitas antibakteri terhadap Staphylococcus aureus dan Salmonella typhimurium dan penurunan total bakteri pada Bifidus milk.

Abstract

This study was aimed to identify the chemical characteristics of white and yellow turmeric powder, and to investigate the influence of both types with three different solvents on yield, total phenolic content, curcuminoid, antioxidant, and antibacterial activity of curcumin crude extract. The curcumin extraction was performed by maceration using N-hexane, ethyl acetate, and ethanol solvents. The results showed that the proximate analysis excluding carbohydrate content of white turmeric powder were lower compared to the yellow type. Curcumin crude extract of white turmeric powder had lower yield, total phenolic content, curcuminoid, antioxidant, and antibacterial activity compared to yellow turmeric extract. Moreover, turmeric extracted with ethyl acetate had higher total phenolic, curcuminoid, antioxidant, and antibacterial activity compared to turmeric extracted using N-hexane and ethanol. Based on the highest total phenolic (193.26 mg GAE/kg) and curcuminoid content (8.13 mg/L), the best treatment was yellow turmeric extract using ethyl acetate solvent. This treatment had the lowest IC50 (63.38 μg/ mL), and the highest clear zone size of S. aureus (6.59 mm) and E. coli (6.29 mm) at concentration of 2000 ppm.

Abstract

Tujuan penelitian ini untuk memperoleh perlakuan terbaik dari kombinasi bubur buah nipah dengan nanas serta penambahan gum arab pada mutu dan karakteristik sensori fruit leather. Penelitian eksperimen dilaksanakan secara acak lengkap faktorial dengan 3 ulangan.  Perlakuan faktor pertama adalah perbandingan bubur buah nipah dengan nanas antara lain B1 (75%:25%), B2 (50%:50%), dan B3 (25%:75%). Faktor kedua adalah konsentrasi gum arab antara lain G1 (1%), dan G2 (1.2%). Analisis sidik ragam dan uji Duncan’s New Multiple Range Test pada taraf 5% digunakan untuk menganalisis data secara statistik. Hasil analisis memperlihatkan perbandingan bubur buah nipah dengan nanas mempengaruhi secara nyata kadar air, abu, serat kasar, gula total, total padatan terlarut, pH, dan pengujian sensori terhadap warna, aroma, rasa, serta tekstur fruit leather. Konsentrasi penambahan gum arab mempengaruhi secara nyata kadar air, abu, serat, total padatan terlarut, pH, dan pengujian sensori terhadap aroma fruit leather. Interaksi kedua faktor mempengaruhi secara nyata pH dan kadar serat fruit leather.  Perlakuan terbaik penelitian ini adalah B3G2 (25% bubur buah nipah:75% bubur buah nanas pada konsentrasi gum arab 1,2%) dengan kadar air 12,83%, abu 0,79%, serat kasar 2,05%, gula total 21,21%, total padatan terlarut 32,08 °brix, dan pH 4,51. Hasil pengujian deskriptif terhadap fruit leather menunjukkkan bahwa fruit leather berwarna kuning (4,23), beraroma buah nanas (3,93), rasa manis sedikit asam (3,43), tekstur agak keras (3,90), dan penilaian keseluruhan secara hedonik disukai panelis (4,06).

Abstract

This study aims to examine the effect of percentage substitute of yellow sweet potato  (Ipomoea batatas  L.) on the physical, chemical and organoleptic characteristics of instant tiwul. It also aims to determine the exact percentage of yellow sweet potato in instant tiwul with high β-carotene content and favored by panelists. The completely randomized design (CRD) method was used with a single factor, namely the percentage substitution of yellow sweet potato (0, 10, 20, 30, 40, and 50%). Each treatment was repeated 3 (three) times while the data obtained were analyzed using the analysis of variance (ANOVA). In addition, when significant differences exist between treatments (α ≤ 0,05), the Duncan new multiple range test (DNMRT) is used, organoleptic data were analyzed using the chi-square test (α ≤ 0.05), meanwhile, to determine the best treatment, an effectiveness test was performed. The results showed that the percentage substitution of yellow sweet potato significantly affected the water content, total β-carotene content, rehydration and swelling power, bulk density, panelists’ preference for color, aroma, taste, texture, elasticity and overall. Based on the effectiveness test, the best percentage substitution of  yellow sweet potato in instant tiwul production was P3 treatment (yellow sweet potato substitution by 30%), which has a total β-carotene content of 0.336 mg/100 g, panelists’ preference for color, aroma, taste, texture, suppleness, and overall of 28, 32,40, 32, 36, and 32% respectively.

Abstract

Coleus tuberosus, also known as black potato, is one of the Indonesian local tubers consumed as a carbohydrate substituent. Therefore, this study aimed to examine the effect of processing and cooling methods on the in vitro digestibility of black potato starch. Furthermore, two factors Randomized Block Design with a 2x3 experimental design was used, which consisted of processing methods (boiling, roasting, and microwave) and cooling at room temperature and 4 °C for 24 hours with 3 repetitions. Black potato flour was compared with the raw form, by assessing some parameters, namely Resistant Starch (RS), Slowly Digestible Starch (SDS), Rapidly Digestible Starch (RDS), and Glycemic Index (GI). Also, the analysis of total starch, moisture, and color was performed, hence raw black potatoes generally have 10% resistant starch (%wb). Different treatments of cooking and cooling had a significant effect (α = 0.05) on moisture content, total starch, RS, RDS, SDS, GI, brightness (L), and yellowness (b). Black potatoes subjected to the processing method followed by cooling had lower RDS and increased RS content. Furthermore, refrigeration at 4°C for 24 hours reduced the digestibility of black potato starch more than cooling at room temperature. Contrarily, microwaved black potato cooled at room temperature showed a higher digestion rate compared to the raw counterpart. Conclusively, processing followed by cooling reduces the GI and increases the RS content of Coleus tuberosus.
