During some later years, several calamities had occurred several times in the country. Landslides and floods come during wet season and in the opposite drought happened in dry season. Just wet season end, drought comes and threat all activities of human life in most region in the country. In some places all of these conditions change very quickly. Mostly, all those occurred due to inappropriate management of water resources. This paper aims at discussing some prospects of water resources research in the future. One knows that the existence of water resources in the earth is a complex system and satisfies some certain natural laws to form an natural equilibrium, so, it more easily if management of water resources research is approached by applying system analysis. The paper also discussed application of new paradigm as well as several new research methods in social, economical and engineering aspects in water resources management.

Komposisi Kimia, Sifat Fisik dan Organoleptik Bakso Daging Kambing dengan Bahan Pengenyal yang Berbeda Nafly Comilo Tiven; Edi Suryanto; Rusman Rusman

The experiment was conducted to determine the chemical composition, physical and organoleptic properties of goat meat ball using different gelling agents (albumen, baking powder and borax). The meat ball was prepared from goat meat with the addition of gelling agent at 0.2 percent. The meat balls were analyzed their chemical composition and physical and organoleptic properties. Data of chemical composition and physical properties were analysed using analysis of variance from completely randomized design. The difference of means the treatments were tested by Duncan’s New Multiple Range Test. Data of organoleptic properties analysed with analysis of nonparametric of Kruskal and Wallismethod. The results indicated that the gelling agents had a significant effect (P<0,01) on pH and tenderness, and also had a significant effect (P<0,05) on fat and protein contents, but no significant effect on water content. Gelling agents had a significant effect (P<0,05) on texture, but not significant effect on colour, taste and elasticity. In conclusion, goat meat ball with different gelling agents had different chemical composition, physical and organoleptic properties. ABSTRAKPenelitian ini bertujuan untuk mengetahui komposisi kimia, sifat fisik dan organoleptik bakso daging kambing yang diberi bahan pengenyal putih telur, soda kue dan boraks. Bakso disiapkan dari daging kambing yang sudah dipisahkan jaringan lemaknya dengan penambahan salah satu bahan pengenyal tersebut diatas dengan dosis 0,2 persen. Parameter yang diamati adalah komposisi kimia, sifat fisik dan organoleptik bakso. Data komposisi kimia dan sifat fisik dianalisis dengan analisis variansi acak lengkap pola searah. Perbedaan diantara perlakuan diuji lanjut dengan Duncan’s New Multiple Range Test. Data sifat organoleptik dianalisis dengan analisis non parametrik metode Kruskal dan Wallis. Hasil analisis statistik terhadap komposisi kimia dan sifat fisik bakso menunjukkan bahwa bahan pengenyal berpengaruh sangat nyata (P<0,01) terhadap pH dan keempukan serta berpengaruh nyata (P<0,05) terhadap kadar lemak dan protein, tetapi berpengaruh tidak nyata terhadap kadar air. Hasil analisis statistik terhadap sifat organoleptik bakso menunjukkan bahwa bahan pengenyal berpengaruh nyata (P<0,05) terhadap tekstur, tetapi tidak berpengaruh nyata terhadap warna, rasa dan kekenyalan. Dari hasil penelitian ini, dapat disimpulkan bahwa bakso daging kambing dengan bahan pengenyal yang berbeda mempunyai komposisi kimia, sifat fisik dan organoleptik yang berbeda.

Egg protein (ovalbumin, conalbumin and phosvitin) and iron were added to oxytetracycline solution heated at 70°C and 80°C for 20 minutes. After heating, the antibacterial activities of oxytetracycline at 70°C for 20 minutes and retarded on the decrease of antibacterial activity of heated oxytetracycline 80°C for 20 minutes, where as iron contributed on the loss of antibacterial activity of the heated oxytetracycline. Cobalbumin and phosvitin reduced the ability of iron to lose the antibacterial activity of oxytertracycline, however iron decreased antibacterial activity of oxytetracycline heated with egg protein significantly (p>0.05).ABSTRAKProtein telur (albumin, konalbumin dan fosvitin) dan zat besi ditambahkan pada larutan oksitetrasiklin yang kemudian dipanaskan pada suhu 70°C dan 80°C selama 20 menit. Setelah pemanasan, aktivitas anti-bakteri oksitetrasiklin diuji. Hasil menunjukkan bahwa protein telur dapat mempertahankan aktivitas anti-bakteri oksitetrasiklin yang dipanaskan 70°C selama 20 menit dan menghambat penurunan aktivitas anti-bakteri oksitetrasiklin yang dipanaskan 80°C selama 20 menti, sedangkan zat besi dapat menghilangkan aktivitas anti-bakteri oksitetrasiklin yang dipanaskan. Konalbumin dan fosvidin dapat mengurangi kemampuan zat besi dalam menghilangkan aktivitas anti-bakteri oksitetrasiklin, namun demikian zat besi secara nyata menurunkan aktivitas anti-bakteri oksitetrasiklin yang dipanaskan bersama-sama protein telur (p>0,05)

Profil Fermentasi “Rusip” yang Dibuat dari Ikan Teri (Stolephorus sp) Neti Yuliana

The objective of this research was to study rusip characteristic of anchovies (Stolephorus sp.) during fermentation to dig its fermentation profile up. The experiment was conducted in 3 replications and onserved periodically: 0, 4, 8, 12, 16, 20, days. The lactic acid fermentation was observed in rusip as indicated by lactic acid bacteria presence during fermentation. Throughout 20 days fermentation, the moisture content, total lactic acid, TVN, TMA, and soluble protein increased while the pH, fat, and reducing sugar contents decreased. CHemical profile of rusip at day 20 fermemtation was characterized by pH 5.07; 22.20% total lactic acid, 1.5% fat. 82.34 mg N/100 g TVN; 14.9% mg N/100g TMA; 3.68% reducing sugar, and 6.36% soluble protein.ABTRAKTujuan penelitian ini adalah untuk mempelajari karakteristik rusip dari ikan teri selama fermentasi untuk mendapatkan profil fermentasi rusip. Percobaan dilakukan sebanyak tiga kali yang diamati secara priodik pada hari ke 0, 4, 8, 12, 16, dan 20 hari. Fermentasi rusip merupakan fermentasi asam laktat yang diindikasikan oleh keberadaan bakteri asam laktat selama fermentasi. Selama 20 hari fermentasi, kandungan air, total asam laktat, TVN, TMA dan protein terlarut meningkat sementara pH, lemak dan gula reduksi menurun. Profil kimia rusip pada hari ke 20 fermentasi adalah sebagai berikut, pH 5,07; total asam laktat 22,20%; lemak 1,5%; TVN 82,34 mgN/100 g; TMA mg N/100 g; gula reduksi 3,68% dan protein terlarut 6m36%.

Heat penetrated slowly during conventional roasting of cocoa resulting in possibly less effective and gradation change. In this experiment microwave energy was applied to reast cocoa nib. The objective of this research was to study changes of temperature, moisture content, color, polyphenol content and antioxidative activity during microwave roasting of ground cocoa nibs. Ground cocoa nib passing through 20 mesh screen wa contained on glass bowl, and then heated in a microwave oven for 2-12 min. Conventional roasting using electric oven at 140ºC for 40 min was conducted for comparison. The result indicated that microwave roasting took a shorter time compared to that using conventional method as shown by the increasing temperature rate and the decreasing rate of moisture and polyphenol contents, i.e.10, 11 and 13 times faster than those given by the conventional roasting, respectively. Microwave roasting was more suitable for high roasting to get dark brown product. The trends of inhibition of linoleic acid oxidation by the product roasted using micorwave energy were similar to that of conventionally roasted, ground cocoa, i.e. 85-90%. A longer roasting of ground cocoa nibs was caused the polyphenol content in product more minimize, but this matter did not have an effect on reality to antioxidative activity of this product.ABSTRAKPada penyangraian biji kako cara konvensional proses pemanasan berlangsung lambat, sehingga tidak efisien dan senyawa dalam biji kako banyak mengalami perubahan terutama kandungan polifenol dan aktivitas antioksidatifnya. Penelitian ini bertujuan untuk menentukan pengaruh penyangraian keping biji kakao menggunakan enerji gelombang mikro (EGM) terhadap perubahan suhu, kadar air, warna, kandungan polifenol dan aktivitas antioksidatif produk yang dihasilkan, dibandingkan dengan penyangraian konvensional. Hancuran keping biji kako lolos ayakan 20 mesh sebanyak 50 g, ditempatkan dalam mangkok gelas, dipanaskan dalam oven EGM 900 watt, 2450 MHz selama 2 sampai dengan 12 menit pada power 20%. Penyangraian konvensional dilakukan menggunakan oven listrik pada suhu 140ºC selama 20 menit sampai dengan 140 menit. Hasil penelitian menunjukkan bahwa penyangraian dengan EGM menghasilkan kenaikan suhu 10 kali lebih besar, penurunan kadar air dan kansungan polifenol masing-masing 11 dan 13 kali lebih besar, dibandingkan dengan penyangraian konvensional. Penyangraian menggunakan EGM lebih cocok untuk penyangraian tingkat berat dengan produk yang berwarna coklat kehitaman. Pola perubahan aktivitas penghambatan oksidai asam linoleat selama penyangraian menggunakan EGM adalah serupa dengan pola perubahan pada penyangraian konvensional, dengan nilai antara 85-90%. Selama penyangraian kandungan polifenol menurun, dengan pola mendekati garis lurus. Perubahan kandungan polifenol selama penyangraian tidak berkorelasi secara nyata dengan perubahan aktivitas penghambatan oksidasi asam linoleat.

Kajian Penguapan Air dan Penyerapan Minyak pada Penggorengan Ubi Jalar (Ipomoea batatas L.) dengan Metode Deep-Fat Frying Ratnaningsih Ratnaningsih; Budi Rahardjo; Suhargo Suhargo

Deep-fat frying was a process of cooking and drying through contact with hot oil and it involves simultaneous heat and mass transfer. The aims of this research was to study the misture loss and fat uptake phenomenon during sweet potatoes frying using deep-fat frying method. Sweet potatoes were shaped in bar-strip measuring 1x1x5 cm3 and fried with varying temperature of 160, 170 and 180ºC. The moisture loss and oil uptake phenomenon can be analogicially modeled referring to Newton's Law of Cooling, by equation (R2=0,997), (R2=0,997) and (R2=0,997) for moisture loss and (R2=0,95), (R2=0,94) and (R2=0,98) for fat uptake on 160,170, and 180ºC frying temperature, respectively. The activation energies were 2,72 kJ/mol for moisture loss and 4,19 kJ/mol for oil uptake. Moisture and fat content had linier relationship for 170 and 180ºC and non-linier relationship for 160ºC.ABSTRAKDeep-fat frying merupakan proses pemasakan dan pengeringan yang terjadi melalui kontak dengan minyak panas dan ini meliputi perpindahan panas dan massa secara simultan. Penelitian ini bertujuan untuk mengkaji phenomena penguapan air dan penyerapan minyak yang terjadi selama proses penggorengan ubi jalar dengan metode penggorengan deep-fat frying pada berbagai suhu penggorengan. Ubijalar dibentuk irisan balok dengan ukuran 1x1x5 cm3, kemudian digoreng pada suhu 160,170, and 180ºC. Model analogi Hukum Pendinginan Newton dapat menjelaskan dengan baik laju penguapan air dan penyerapan minyak pada penggorengan ubi jalar menggunakan metode deep-fat frying dengan persamaan MR= e-0,0052.t (R2=0,997), MR= e-0,0054.t (R2=0,997) dan MR= e-0,0064.t (R2=0,997) untuk penguapan air dan OR= e-0,0015.t (R2=0,95), OR= e-0,0018.t (R2=0,94) dan OR= e-0,0023.t (R2=0,98) untuk penyerapan minyak pada suhu 160,170 dan 180ºC. Energi aktivasi untuk penguapan air adalah 2,72 kJ.mol dan untuk penyerapan minyak adalah 4,19 kJ/mol. Kadar air dan minyak ubi jalar selama penggorengan berhubungan secara linier pada 170 dan 180ºC dan nonlinier pada 160ºC.

This study was aimed to find out the household economic condition, to compare food budget according to each consumption pattern of main food so that margin value can be known, to find out influence between rice and traditional food consumption toward food budget and influence of household income toward traditional food consumption, and to analyze the role of traditional food toward food security contemplated of household economical perspective. The measurement of income, budget and food consumption pattern was carried out using questinnaire distributed to household through structured interview technique. The comparison of food consumption pattern was carried out by grouping the main food sonsumption pattern based on type difference and consumption number and then converted in rupiah value. The result showed that traditional food consumption pattern can be a complement of the main food except rice, that were able to provide economical accessibility to enough food and have a low price, so real income of household can be increased. Traditional food in the food security could have a role as survival strategy for poor people that have limited income so they could built up the capacity to help their self and their family in providing cheapest main food.ABSTRAKPenelitian ini bertujuan untuk mengetahii kondisi ekonomi rumah tangga masyarakat, membandingkan pengeluaran pangan pada tiap pola konsumsi makanan pokok sehingga diketahui nilai margin yang dapat diperoleh, mengetahui pengaruh konsumsi makanan tradisional dan beras terhadap pengeluaran pangan serta pengaruh pendapatan rumah tangga dan konsumsi beras terhadap konsumsi makanan tradisional serta menganalisa peran makanan tradisional terhadap ketahanan pangan ditinjaui dari perspektif ekonomi rumah tangga. Pngukuran pendapatan, pengeluaran dan pola konsumsi pangan masyarakat dilakukan dengan menggunakan kuisioner kepada rumah tangga melalui teknik wawancara terstruktur. Perbandingan pengeluaran pangan pada tiap pola konsumsi makanan pokok dilakukan dengan mengelompojjan pola konsumsi makanan pokok berdasarkan perbedaan jenis dan jumlah konsumsi, kemudian dikonversi dalam nilai rupiah. Hasil penelitian menunjukkan bahwa pola konsumsi makanan tradisional dapat menjadi pelengkap makanan pokok selain beras, yang pada sisi lain dapat memberikan kemudahan ekonomis terhadap kecukupan pangan dan dengan harga rendah, sehingga pendapatan riil rumah tangga bisa meningkat. Makanan tradisional di dalam ketahanan pangan dapat berperan sebagai suatu survival strategy untuk orang miskin dengan pendapatan terbatas sehingga mampu membangun kapasitas dan kemandirian untuk menolong diri sendiri dan keluarganya dalam memenuhi kebutuhan makanan pokom termurah.

This paper deals with supply chain management within bakery industry from the perspectuve of material management. A better material requirement planning was proposed. The result showed that the proposed MRP can decrease cumulative material investment that the existing operation. By considering the impact of product-retur precentage scenarios (75%, 50%, 25%, 0%) to comapny's hplding cost, it was known that the decreasing of product-retur percentage is not significantly reduce the retrenchment of cost paid by the company. A low percentage level of product-retur might sacrify customer service because the retailer can not assure the product availability. On the other hand, a high percentage lebel ,ay give high level of customer service, however the cost is more expensive resulting in the reducing of the profit. This, represents a trade-off between profit to be obtained by the company and customer service level.ABSTRAKTulisan ini membahas tentang pengelolaan supply chain di dalam industri bakery dari perspektif manajemen material. Sebuah perencanaan kebutuhan material (MRP) yang lebih baik kami usulkan. Hasil penelitian menunjukkan bahwa usulan MRP dapat menurunkan jumlah investasi material daripada yang ada sekarang. Dengan mempertimbangkan pengaruh skenario persentase product-retur (75%, 50%, 25%, 0%) terhadap biaya persediaan perusahaan, diketahui bahwa penurunan persentase product-retur tidak begitu berpengaruh pada penghematan biaya yang menjadi beban perusahaan. Pada suatu tingkatan product-retur yang rendah akan bisa berakibat pada turunnya customer service karena retailer tidak bisa menjamin ketersediaan produk. Pada sisi lain, product-retur dalam jumlah banyak akan memberikan customer service lebih baik namun dengan biaya yang mahal sehingga akan ada pengurangan keuntungan. Hal ini menunjukkan adanya suatu trade-off antara keuntungan yang diperoleh oleh perusahaan dengan customer service level di dalam suatu supply chain. Oleh karena itu kita perlu mengoptimalkan keseimbangan antara keuntungan dan customer service level.

Pacal Irrigation System in Bojonegoro District is an irrigation system designed to apply surface irrigation gravitationally. Pump uses to abstract irrigation water from canals to irrigate rainfed area outside the system was against the original design. This paper aims to develop the decision making model to decide optimum pump use to achieve optimum operation pattern. The choice of optimum operation pattern was developed using the Analytical Hierarchy Procees (AHP) method to meet the irrigation management aspects. Alternatives of pump operation used were no pump, 68 pumps, 47 pumps, and 21 pumps. Criterias to choose pump operation pattern were RWS, RIS, KPA, efektiveness dan eficiency. The results showed that main criterias to affect the choice of pump operation patteren were RWS and RIS with proportion as 40,73% and 28,19% respectively. Considering all criterias, the optimum pump operation pattern was operation with 47 pumps.ABSTRAKDI Pacal di Kabupaten Bojonegoro adalah sistem irigasi teknis yang didesain untuk menerapkan irigasi permukaan dengan cara gravitasi. Penggunaan pompa yang mengambil air dari saluran irigasi untuk mengairi lahan tadah hujan di luar wilayah DI Pacal tidak sesuai dengan desain awal sistem irigasi teknis tersebut. Tujuan penelitian ini adalah membuat model pengambilan keputusan untuk penggunaan pompa dalam operasi sistem irigasi untuk mendapatkan pola operasi optimal. Pemilihan pola operasi optimal menggunakan metode The Analytical Hierarchy Procees (AHP) dengan penyesuaian dari aspek manajemen irigasi. Alternatif pola operasi yang digunakan adalah operasi tanpa pompa, operasi 68 pompa, operasi 47 pompa dan operasi 21 pompa. Kriteria yang mempengaruhi pemilihan pola operasi berupa RWS, RIS, KPA, efektivitas dan Efisiensi. Hasil analisa menunjukkan bahwa kriteria utama yang mempengaruhi pemilihan pola operasi optimal adalah RWS sebesar 40, 73% dan RIS sebesar 28,19%. Ditinjau dari berbagai kriteria, alternatif operasi dengan 47 pompa merupakan pola operasi optimal.

This paper aims to make a comparation between the performance of irrigation system in early irrigation policy reform and that of the recent condition. Van der Wijck Irrigation System in Yogyakarta was chosen as case study. Early data was collected through questioner and participatory method. Fuzzy set theory was employed to determine the most unsustainable aspect for the irrigation system. It revealed that economic aspect was the most threaten aspect. Because of abundant water, farmers in the upper area of Van der Wijck grow rice in the entire year. However, farmers received very small amount income from their land. Recently most of them convert their rice fields into shrimp ponds because it financially gives more benefit. On the other hand this sectoral development created upper-lower conflicts among water users within the system. This policy change would affected technology and management in the system.ABSTRAKPaper ini bertujuan untuk membandingkan kinerja sistem irigasi pada awal pemberlakuan reformasi kebijakan irigasi dengan kinerja saat ini. Daerah Irigasi Van der Wijck di Yogyakarta dipilih sebagai kajian kasus. Data awal dikumpulkan dengan kuesioner maupun secara partisipatif. Teori himpunan kekaburan digunakan untuk mengetahui aspek yang paling tidak berlanjut dalam sistem irigasi. Hasilnya menunjukkan bahwa aspek ekonomi merupakan aspek yang paling terancam. Karena banyaknya air, petani di daerah hulu Daerah Irigasi Van der Wijck membudidayakan padi sepanjang tahun, namun petani tidak menerima banyak keuntungan dari budidaya ini. Beberapa tahun terakhir ini, banyak petani mengkonversi sawahnya menjadi tambak udang yang secara ekonomis memberikan banyak keuntungan. Meskipun demikian, pengembangan secara sektoral ini menimbulkan konflik hulu-hilir antar pengguna air dalam sistyem irigasi. Perubahan kebijakan ini dapat berpengaruh pada teknologi dan manajemen di dalam sistem irigasi.
