Abstract

Pumpkin is a potential source of/3-carotene, therefore, can be used for )3-carotene enrichment of food such as cassava noodle, and then the cassava noodle can be used to increase the vitamin A intake of people. A base material to make cassava noodles are cassava flour; pumpkin flour and gluten. The objective of the research was to know the effect of the b-carotene enrichment of cassava noodle by pumpkin flour on the cassava noodle characteristics. The enrichment of the cassava noodle was made by adding pumpkin flour in various proportions i.e. 0, 5, 10, 15, and 20%. The cassava noodle were analyzed for the chemical, physical, and sensory propierties. The results showed that the cassava noodle that was enriched by 15 % pumpkin flour could be accepted by panelists. It can supply 147 RE/100 g of0-carotene. The chemical characteristics of cassava noodle were 74,85 % moisture, 2,99% ash, 15,75% protein, 3,44% fat and 77,83% carbohydrate contents.

Abstract

The objective of this experiment was to develop novel restructured products from fresh avocado fruits puree and calcium-alginate gel forming method (internal setting). Gel forming by internal setting the calcium is released under controlled conditions simultaneously throughout the system. Restructuredfruit products were evaluated for pH, color, and sensory properties. Sodium chloride (0.5% and 1.0%) did not give better flavor for restructured avocado compare to product without it. The addition of sodium chloride precisely increases the sourness of the product. Restructured avocado product with citric acid concentration 0.05% and 0.1% were much preferred than product with citric acid concentration 0.5%. The addition of sugar (5%) to the restructured product significantly reduced the sourness. Compared to the addition of sodium chloride (0.5%), products with addition of sugar (2.5% and 5%) were significantly more preferable and the flavors were closer to fresh-cut avocado fruit.

Abstract

This research was aimed to determine the influence ofpurification on the concentration of tar and benzopyrene of prifiede liquid smoke and to simulate the concentration of benzopyerene during deeping of fish in the purified liquid smoke. The purification was done using several methods included sedimentation, filtration, adsorbtion, and redistillation at up to 100 C, 125 C, 150 C, and 200 C. The results of the research showed that during sedimentation, filtration, adsorbtion, redistillation at up to 100, 125, 150 and 200 C the concentration of tar was 1.24%, 1.19%, 0.45%, 0.44%, 0.59%, 0.72% and 1.20% respectivelly and the concentration of benzopyrene was 305 ppm, 110 ppm 0.196 ppm, 0.196 ppm, 0.196 ppm and 0.196 respectively. The stimulation of the dipping offish in redistillate liquid smoke showed that the fish dipped in 5% solution of redistillate liquid smoke for 15 minutes to 120 minutes the concentration of benzopyrene in fish was less than 1 ppb. That was indicate that redistilled liquid smoke was safe for dipping offish.

Abstract

The emergence of the food deficient phenomena in many localities proved that aggregative progress in food security does not necessarily guarantee the attainment of local food security in every village of the country. Anticipating that fact, therefore, this research was conducted to identify possible intervention strategies for intervening local social capacity in self-strengthening local food security system at village level based on selected typological character of village samples in Central Java. Four poor villages representing village typology were selected purposively to represent both the food-exporting and food-importing areas. Based on human right based approach, this comparative research found out a set of significantly different strategies in developing local capacity in food security through both demand and supply management. Supply capacity of exporting village must be strengthened through effective supply and storage system, whereas demand-based importing village capacity must be strengthened through income protection and management to improve purchasing power in meeting daily need for imported food. In addition, local empowerment centralized on institutional capacity building is hereby recommended for both the food exporting and importing villages to enable local institution to be skillful in resource mapping, effective in advocating people participation, and powerfill in facilitating participative decision making.

Abstract

Work ethic have strategic role beyond company because its have many implication. One of theories which explain about work ethic is Webers Theory. Webers Theory tries to make a connection between success in business world and religious belief Weber 's Theory can be applied into various religious beliefs and do not focus only in one belief. Unfortunately, most researches about work ethic tend to using work ethic in Protestant Work Ethic framework, this framework may be fit to use in western countries. There is little research which tries to scrutinize Islamic work ethic. On the contrary, in eastern countries such as Indonesia which Islam was became major religion of its citizens, Islamic Work Ethic concept was more appropriate to used rather than Protestant Work Ethic. This research studied the impact of lslamic Works Ethic and organizational commitment toward job satisfaction and life satisfaction of PT BPR SKA Divisi Agrodana employees. Population in this research is 72 employees of PT BPR SKA Divisi Agrodana employees. All populations member were became respondent in this research. Questionnaire method used in this research to collect the data. Structural Equation Modeling was used as data analysis technique. To simplify its computation, AMOS 4.01 computer program were used. The result show that Islamic Work Ethic and organizational commitment have positive and significant impact toward job satisfaction, further more job satisfaction have positive and significant impact toward life satisfaction. Model proposed in this study was met the goodness of fit criterions, thus this model were fit both theoretically and empirically.

Abstract

The objectives of the study were to examine antioxidant activity of ethanol extracts of different varieties of sweet potato and the effect of heating on the antioxidant activity of the extracts. The varieties of sweet potato used were Cilembu, Tambakromo, and Gunung Kawi. After the peel was separated from its flesh, each fraction was dried, grounded and extracted with ethanol. Total phenol was analyzed with Folin-Ciocalteu reagent using gallic acid as a standard. Sweet potato ethanolic extracts were made into three concentrations at 100, 150, and 200 ppm in ethanol. Antioxidant activity was determined by DPPH radical scavenging method. Ethanolic extracts of sweet potato flesh and peel were heated at 100 °C for 20, 30, and 40 minutes to examine the effect of heating on the antioxidant activity. All ethanolic extracts of sweet potato exhibited antioxidant activity. There was no difference in antioxidant activity between ethanolic extracts of Cilembu, Tambakromo and Gunung Kawi varieties. Antioxidant activity of the peel extract was higher than that of the flesh for all varieties. In general, antioxidant activity increased as the concentration of the peel extract increased. Heating at 100 °C for 20 and 30 minutes increased the antioxidant activity of the extract, but decreased after heating for 40 minutes.

Abstract

The kinetics of thermal and light induced degradation of natural bixin in a mixture of ethanol and 2 % acetic acid (80 : 20) was studied as a function of temperatures 80, 98, and 125 OC for 120 minutes. Illumination was carried out either under fluorescent or incandescent lights, both at 4000 lux for 300 minutes. The bixin concentration during heating and illumination was analysed using HPLC. The method to determine the degradation rate constant for the decay of the products from bixin was obtained using a linear regression according to first order reaction.  The results indicated that the degradation rates of bixin at 125 OC were 5.5 and 3.8 times faster than that of 80 OC and 98 OC, respectively. The energy activation of bixin was 9.82 kcal/mol. The photodegradation rate constants of bixin under incandescent or fluorescent illumination was 2.8 x 10-3 and 3.3 x 10-3 minutes-l, respectively.

Abstract

This study investigated the changes in trypsin inhibitor (TI) activity, amino acid composition and protein patterns after 36 hours germination of soybeans. TI was extracted by a combination of pH precipitation and centrifugation. TI activity of seeds and germinated soybean were 1.64 and 1.68 IU/mg seeds (db) respectively. Heating of crude TI decreased heat stability of TI. The decrease of TI activity of germinated soybeans due to heating was lower than seeds. The amino acid composition and protein patterns of soybeans changed after 36 hours germination. Thr, Ala, Trp, Met and Lys decreased significantly, while Asp, Glu, Val, Phe, and Ile  increased significantly. The SDS-PAGE analysis showed that the seeds contain high-molecular weight of proteins which were degraded after 36 hours germination result in smaller molecular weight of proteins.

Abstract

The objectives of the study are : (1) to design  land  suitability database for cultivation of the national valuable fruits, (2) to design the activation information of  fruits production, including land preparation until primary postharvest handling, and (3) to design the decision support system for valuable fruits on people’s orchads to produce fresh fruits. The study was conducted in Yogyakarta Special Region, from November 1999 until March 2000.  Two kinds of data used in this study were: (a) primary data, from the direct discussion with the experts, and direct observation in the fruits production center, and (b) secondary data were collected from library studies and Agriculture Agency Offices in each regency or municipality of the Yogyakarta Special Region.  The data in the salaccias production center was established from farmers which owned orchad more than one hectare. The results of  the study were : (1) land suitability database for national valuable fruits cultivation based on relational data, (2) computerize information system, namely Salaccia (Pondoh cultivar) and Mango (Arumanis, Manalagi, Golek, and Gedong cultivar) included : land preparation, planting, fertilizing, cultivating, pest and disease control, pruning, irrigating, harvesting, cleaning of fruits, sorting of fruits, grading of fruits, ripening (specially for mango), and storage of fruits, and (3) the system has been done to determine land suitability for fruits in Yogyakarta Special Region, and the result showed that 62.39 % was suitable between output system designed and the fruits produced by the farmer, namely manggistas, pineapples, mangoes, rambutans, durians, salaccias, and lawzons.

Abstract

The world demand of raw-silk provides a great opportunity to the development of raw-silk production in Yogyakarta. Recently, only 21% of the overall world demand of raw-silk is fulfilled, whereas Indonesia contributes only 0.1% per year. The main problem is the lack of quality of raw-silk. The optimum growth of silkworm depends on micro environments, i.e. temperature, humidity, aeration, and light intensity. The research aimed at designing an automated “on/off” control technology in the silkworm rearing environmental monitoring in the farming system, while the expected result was high-grade quality of cocoon. In the research, two different conditions of silkworm growing environments were compared, i.e. controlled environment (in the rearing box) and uncontrolled environment. The result indicated that there was increase in  the quality of cocoon. Test of cocoons in laboratory showed that the average thickness of cocoons in controlled rearing environment and in rearing environment was 0.033 cm and 0.029 cm, respectively. The percentage of cocoons in controlled rearing environment was higher than cocoons in normal environment.
