Abstract

PTPN VII (Persero) Pagaralam Business Unitstarted developing the processing of black tea (CTC). Only after several times the processing quality CTC teas produced unsatisfactory. The Company continues to optimize the performance ofthe processingand quality control of CTC tea. This study aims to determine the effect of the quality of shootsandwilting percentage of the physical and organoleptic properties of CTC tea. This research was conducted in PTPN VII (Persero) Act Pagaralam. The results showed that all of the top quality withvalue range 62% to 70% and the percentage of wilted 65% to 72% no real effect on the physical and organoleptic properties. The water content and density of CTC tea has fulfilled SNI and enterprise standards. CTC tea produced medium quality (Fair made).

Abstract

Processing fresh pineapple into dried sweet pineapple can preserve product during storage. Durability dry sweet products can be maximized by combining sugar with other preservation techniques such as paesterisasi treatment, enhance sodium benzoate, and packaging technology. The objective the study is to find out durability time product dry sweet pineapple. The study design used experiments making dried sweet pineapple which consists of several stages. There are stripping, washing, cutting, boiling, cooking, soaking, drying and packaging. Drying is done for 3 days under the sun. The durable time have known by observations during storage; dry sweet pineapple with packaging and stored without packaging. Product damage during observed indicated by physical appearance, color and texture. Durability dry sweet pineapple without packaging lower than product with packaging

Abstract

Recently around 60% of the hazelnut shell has the potential to become wasted material. The purpose of this research is to exploit waste hazelnut shell by examining the mechanical properties of composite   from the powder of hazelnut shell. Epoxy resin acts as a matrix mixed with a hazelnut shell powder as a filler with a composition of 20%, 30% and 40% wt. Both materials are mixed using a mechanical mixer with varying speed and stirring times. The resulting composite material is then tested by tensile, impact and hardness testing. The Taguchi method is used to optimize forming process parameters of the epoxy-powder hazelnut shell composite. Research shows that the forming process parameters give different effects for each different mechanical property. Research found out maximum tensile strength of composite material at 30% wt of powder hazelnut shell. Overall, the result of taguchi optimization for the forming process parameters in this study was 43.68 N/mm2 for tensile strength, 0.074 106 J/mm2 for impact strength and 98.57 SHN for hardness.Keywords: .

Abstract

This research aimed to study of the material quality characteristics of rubber (bokar) in accordance with the SIR 20 and determine of the rubber material (bokar) public who go to the factory in accordance with the original supplier territory. The experiment was conducted in PTPN VII (Persero) Unit Padang Pelawi by collecting primary data and secondary data using survey and observation method, then analysis descriptive. The results showed that all though the rubber material (bokar) from public who go to PTPN VII (Persero) Unit Padang Pelawi doesn’t quality requirements of the Company and National Standardization Agency or BSN, while based on the dry rubber content or Kadar Karet Kering (KKK) of the rubber material (bokar) best is from Kaur.

Abstract

Mie merupakan produk makanan yang sangat populer dan banyak dikonsumsi oleh masyarakat Indonesia. Namun ternyata mie bukanlah merupakan makanan yang dianggap istimewa, hal ini terjadi karena umumnya kandungan gizi produk mie dan olahannya masih rendah, terutama kandungan protein dan mineralnya (Prananto, dkk.2003). Bila ditinjau dari segi nilai gizi, mie sarat akan karbohidrat dan zat tenaga (energi) dengan kandungan protein yang relatif rendah. Kandungan gizi mie sangat bervariasi, tergantung pada jenis, jumlah dan kualitas bahan penyusunnya, serta cara pembuatan dan penyimpanannya. (Astawan, 2005). Salah satu bahan yang dapat meningkatkan nilai gizi mie adalah tulang ikan tenggiri. Unsur utama dari tulang ikan tenggiri terdiri dari kalsium, fosfor, dan karbonat sedangkan yang terdapat dalam jumlah kecil adalah magnesium, sodium, fitat, klorida, sulfat, strontium. Persantase berat kalsium pada ikan secara umum adalah 0,1 – 1,0%, dimana rasio kalsium dan fosfor adalah 0,7 – 1,6% (Anonim, 2007). Penelitian ini bertujuan untuk mengetahui tingkat kesukaan panelis terhadap mie basah dengan penambahan tepung tulang ikan tenggiri serta menentukan mutu kimia mie basah yang meliputi kadar air, dan kadar kalsium. Hasil penelitian memperlihatkan bahwa penambahan tepung tulang ikan tenggiri pada pembuatan mie basah menyebabkan tingkat penerimaan panelis yang berbeda nyata pada warna dan aroma, sedangkan kelengketan dan tekstur  berbeda tidak nyata. Mie basah yang paling disukai adalah perlakuan dengan penambahan 10%.  Kadar air mie yg paling disukai panelis masih memenuhi nilai standar yaitu sebesar 24,5%, serta kadar kalsium dapat meningkat sebanyak 4,53% bila dibanding perlakuan kontrol.

Abstract

This research aimed to determine relationships between weight and several physic-mechanical properties of coffee grains. Grains having 12.2% (wet basis) moisture content in average, originated from cherries of different ripening levels identified by green, yellow, red and deep red in colors were used for experiment. Research used regresi linear analysis. Results of experiment indicated that weight of grains positively correlated to length, width, thickness and frontal area with very high values of determination coefficient. Weight of grains correlated positively to sphericity and negatively to porosity. Weight of grains originated from green and red cherries had positive correlation with density whereas weight of grains originated from yellow and deep red cherries possessed no correlation with density. Weight of grains from yellow, red and deep red cherries had negative correlation with true density in contrast weight of grains from green cherries had positive correlation with true density. There were no reliable trend concerning the relationships between weight of grains and coefficient of static friction and angle of repose.

Abstract

Purpose of this research was to explain the effect of alkali type and duration of nibs submersion on the quality of chocolate powder.Type of alkalis being tested were Na2CO3(type1)andCa(OH)2 (type2) and the durations were 30, 60, 90 and 120 minutes. Reasearch was done following RCB design with the type of alkali as the block. The nibs was fermented during 6 days, and dried with temperature 115 °C for 6 hours, and applying the Dutch Processmethod topowder the chololate.  Result of the research showed that the treatments were not significantly influence the water content; significantly influence the microba, verysignificantly influence thepH and softness of the powder. Abstract

The objective of research was to determine the effect of slice thickness and frying temperature on the physical, chemical and sensorycharacteristics of pumpkin chips by vacuum frying method. Research used a Factorial Completely Randomized Block Design with 2 treatments and 3 replications. A factor (the slice thickness: 1, 2, and 3 mm) and B factor (frying temperature : 80, 90, and 100oC). The results showed that the slice thickness had significant effect on the crispy texture, yield, and water content of pumpkin chips. The temperature had significant effect on the lightness, chroma, crispy texture, yield, and moisture content. Interaction slice thickness and temperature had significant effect on the water content of pumpkin chips. A3B3 treatment (slice thickness 3 mm and frying temperature 100oC) was the best treatment with physical characteristic (yield 17.47%, crispy texture 183.6 gf, colour with 54.63% lightness, 42.17% chroma and 54.90o hue), chemical cha-racteristic (1.63% water content, 8.08% ash content) and sensory characteristics by scoring preferences 3.48 crispy texture, 3.2 flavour, 2 colour and 3.32 taste. A3B3 treatment had 1.58 dissoluble fiber content, 12.92 mg/mL IC50 antioxidant activity, 21.90 fat rate,1.46 ppm total carotene.

Abstract

This study aims to determine the effect of temperature and roasting time the quality of cocoa powder by SNI, to determine the effect of roasting time (100oC and 115oC) for the quality of cocoa powder (physical, chemical, biological, and organoleptic) and to determine the effect of roasting time : 30, 60, 90 and 120 minutes of quality cocoa powder. Variables in this study to determine the quality of cocoa powder consists only of fat content, moisture content, pH, microbial contamination is the number of colonies of bacteria, fungi, Escherichia coli, refinement, and organoleptic properties of the cocoa powder. Results obtained show the temperature effect and long penyangraian penyangraian nibs cocoa powder quality results as a whole meet the quality standards. Effect of roasting temperature to produce quality cocoa powder on the observation variables (pH, moisture content, fat content) and different organoleptic properties, whereas the level of tenderness, microbial contamination, cocoa powder is no different. The effect of roasting time to produce quality cocoa powder on the observation variables (pH, moisture content, fat content) and different organoleptic properties. The level of tenderness and microbial contamination non-significant.

Abstract

This study was carried out to investigate the effect of sucrose and pectin on physical, chemical and organoleptic properties of sapodilla jam and to determine the best treatment in accordance with SNI. The evaluation consisted of a 2 X 3 factorial design with three replicates, two Pectin concentrations (0.5%, 0.7%) and three sugar concentrations (35%, 45%, 55%). Experimental data were subjected to ANOVA test followed by Tukey's test 5%. The results showed the proportion of pectin and sugar have significantly different impact on color, aroma, taste, a smear of jam and overall consumers acceptance on sapodilla jam. Results of chemical analysis and physical use of pectin have significantly different impact on total dissolved solids (TDS), but has no effect on pH and a smear of jam. The use of sugar affect the TDS and a smear of jam but pH did not differsignificantly. The interaction between pectin and sugar have significantly different impact on a smear of jam but has no effect on pH and TDS. The best product is the use of pectin 0.5% and sugar 55% , brownish-red color (4.20), sweet taste (4,07). aroma is quite flavorful distinctive sapodilla fruit (2.83), smooth texture and easily applied evenly (4.57). The overall consumers acceptance score (4.57). TDS (94.77%), pH (4.4) and fruit fiber positive (+).
