Abstract

Water loss is a main cause of deterioration because it results not only in direct quantitative losses, but also in losses in appearance (wilting and shriveling), textural quality (softening, flaccidity, limpness, loss of crispness and juiciness), and nutritional quality. Transpiration is a physical process that can be controlled by applying treatment to commodity e.g. waxes or wrapping with plastic film or by manipulating the environment. Temperature management is the most effective tool for extending the shelf life of fresh horticultural commodities. The aimed of this experiment was to study the effect of modified atmosphere packaging of polyethylene (PE) plastic on physical quality of caisim during cooling storage. For that experiment, caisim were packed into PE plastic without hole (P1), 2 holes (P2), 4 holes (P4), 6 holes (P6), and 8 holes (P8). Products as controls were provided without packed. Then, products were stored in cold storage on 0 – 5oC for 4 days. The results of this experiment shows that packaging were significantly affected the decreasing of weight, moisture content, and the value of physical quality of caisim for 4 days, in spite of colors. Packaging of polyethylene plastic without hole can delay the deterioration or change physical quality of caisim more than 4 days.

Abstract

Target of this research was to obtain solvent type, toobtain ability on antiradical, and to find out optimumconcentration of extract powder of fennel seed. This researchconsisted of two phases that the first phase wasdetermination of total phenol and antioxidant activity usingTBA method at various solvent type. Solvent used forextraction was ethanol and acetate ethyl. The concentrationsof the solvent were 0, 15, 30, 45, 60, 75 and 90%.Antioxidant activity resulted from each variation of type andconcentration of solvent was used for the examination in thesecond phase in determining antiradical activity by DPPH.Variation of concentration of fennel extract was 100, 250,500, 750 and 1000 ?g/ml yielded from type of ethano l andacetate acid solvents.Obtained data of each treatment was plotted in a graph.Data validity was analized using appropriate regressionanalysis on plotted data in graph. Result of research indicatedthat antioxidant active compound extracted using acetateethyl solvent was higher than that using ethanol solvent.Optimum concentration of extract of fennel powder fromethanol and acetate ethyl solvent in scavenging free radicalwas 975 ppm and 850 ppm.

Abstract

The objectives of this research are: (i) to know the influence of concentration of sugar and starter to heavy metal content; (ii) the level of acceptance by panelists on wine produced from jambu mete; (iii) to know how much sugar and starter should be added in producing wine of jambu mete in order to obtain the most accepted to by panelists. Abstract

A series of field experiments have been conducted to estimate values of thermal parameters of a heat exchanger, such as overall heat transfer coefficient (U), number of transfer units (NTU), and effectiveness (?), in a nocturnal cooling system. Accumulated experimental data showed that these parameters are proportional to the logarithmic relation to mass flow rate of water flowing into the heat exchanger. Empirical correlation developed for this purpose indicated that correlation coefficient of U was 0.76. the correlation function developed for cross-flow is applicable to predict outlet air temperature with an average error of 0.10C.

Abstract

The research objective was to study the soluble protein change during process seedgermination. Seed sprout were made in dark room at the room temperature (30 0C) withseveral combination treatment of 3 factor in 5 levels for each factor. The factors are (i)duration of germination process; (ii) duration of soaking process; and (iii) pH of soakingsolution. The analysis of soluble protein was undertaken from extracted sprouts. Data wasanalysed by using the Respon Surface Methodology (RSM) with the central compositedesign (CCD). The research results indicated that the minimum of soluble protein (theincubation of 24 hour in temperature 50 0C with minimum value 4,54% wet weight) wasobtained from the process of 36 hours of germination process, 100 minute of soakingprocess and in pH of 5,65.

Abstract

This research was aimed to study the effect of using the tempe flour to substitute the wheat flour on the characteristic of breads produced, as well as to know how much the tempe flour can be used to substitute wheat flour in order to breads that could still be accepted by panelist with the best characteristic. This research was design using Randomized Block Design with 6 level substitutions treatments, namely: 100% wheat flour : 0% tempe flour, 98% wheat flour : 2% tempe flour, 96% wheat flour : 4% tempe flour, 94% wheat flour: 6% tempe flour, 92% wheat flour : 8% tempe flour, 90% wheat flour : 10% tempe flour. There were three replications of each treatments, so that be 18 experiments unit. The data was analyzed with ANOVA and followed by Duncan’s Method if the treatments effected the parameter. The research showed that substitution treatment up to 96g wheat flour: 4g tempe flour has result breads with the best characteristic in which leavening bread loaves was 404,83%, water content was 36,62(%w/w), ash content was 0,72(%w/w), and protein content was 9,31(%w/w). According to sensory analyzed of the breads produced, the colour of breads were yellow-brown, flavor were neutral, like of taste, texture were moderately soft, sponge formation were moderately variant, and overall acceptance were like.

Abstract

The research purpose were to find out the part of plantextract and an extract concentration of Narrow-leaf peacockginger as repellant agent to Aedes aegypti mosquito.The research method used the completed randomizeddesign with two factors in factorial experimental. The bothfactors were 1) the plant part to enclose a stalk-root andtuber; 2) an extract concentration with 5 levels to enclose 0,5, 10, 15, 20% so that there were 10 combination treatmentsthat to be replicated 5 times.The results of the research showed that the tuber andstalk-root extracts of Narrow-leaf peacock ginger had anatural repellant constituent. Narrow-leaf peacock gingertuber extract in 15 and 20% concentration had the highest ofrepellant capacity or to kill mosquito. The longer applicationof the extract decreased the repellant capacity, especially thatto be extracted of the stalk-root and tuber in consentrationapplication of 5 and 10%.

Abstract

Beverage  of “kunyit-asam”  was being familiar  in  the society  as  a  traditional  herbs,  fresh  beverage,  and  potential antioxidant. However,  it’s industry  not  yet much done in home industry scale.This  research aimed to  evaluate  investment  value which needed  and  financial  feasibility  of “kunyit-asam” powderindustry  in home  industry  scale.  The  analysis  which  used in financial  feasibility  i.e. :  Net Present Value (NPV),  InternalRate of Return (IRR),  Pay Back Period (PBP),  Break EvenPoint (BEP), Net Benefit-Cost Ratio (Net  B/C), and sensitivityanalysis.Investment value which needed for planning  of “kunyit-asam”  powder industry  in  home  industry  scale  is  Rp. 52.364.065.  The  analysis  of  financial  feasibility  of  “kunyit-asam”  powder industry in home industry scale is feasible based on some value of investment criteria.

Abstract

The research was aimed to determine the effect of typeand concentration of sugar on the characteristics of producedsalacca wine and to determine the type and concentration ofsugar yielding salacca wines with the best characteristics andpreferred by panelists. Sensory test results showed that themost preferred salaca wine characteristics by panelists wasthose which produced with addition of 25% sucrose sugar(w/v), and the produced wine contained 14.81% of ethanol,2.66% of total sugar, 0.21% of total acid, pH 3.67, 10.5°Brixof total soluble solids, and methanol content was notdetected.

Abstract

The objective of this research was to study the effect of individual sealed packaging using stretching plastic film on quality of mangoesteen fruits with harvest index 4 and 5 during storage at room temperature (28 ?b 2oC) and at 5oC. Mangosteen fruits seal-packed individually using stretching plastic film is very beneficial since the packaging could extend the shelf life and maintain the fruit quality. The fruits with harvest index of 4 were better to be sealed individually with the plastic film as their shelf life were more than 24 days compare to the fruits with harvest index of 5 of which their shelf life were 20 days at room temperature. The result shows that mangosteen fruits were very sensitive to chilling injury which was indicated by the hardening of fruit shell. It was suggested that to prolong the shelf life of mangosteen fruits, the harvesting of mangoesteen fruits should be done on harvest index 4 and packaged them with stretching plastic film individually.
