Abstract

Pork meat is one of the foods that is susceptible to contamination and damage caused by microbial growth that can affect the quality and safety of pork meat. Efforts can be made to maintain the quality and safety of pork meat by adding garlic juice that has antimicrobial content. This study was aimed to determine the effect of garlic juice concentration (Allium sativum L.) on the physical, chemical and microbiological characteristics of pork meat and to determine the right concentration of garlic juice (Allium sativum L.) in producing the best physical, chemical and microbiological characteristics of pork meat. This study used a complete randomized design consisting of 7 levels of garlic and aquadest comparison, that is without the addition of garlic and aquadest, 10:90, 20:80, 30:70, 40:60, 50:50 and 60:40. The treatment was repeated 3 times to obtain 21 experimental units. The data obtained was analyzed by variance and if the treatment had a significant effect then it was followed by Duncan's Multiple Range Test (DMRT). The results of this research showed that concentration of garlic juice (Allium sativum L.) had a significant effect on the physical characteristics namely water holding capacity (WHC), texture, pH, chemical characteristics namely moisture content, protein content, and microbiological characteristics namely TPC (Total Plate Count), Coliform and E. coli of pork meat. The ratio of 60% garlic and 40% of aquadest had the best pork meat characteristics with physical characteristics that is water holding capacity (WHC) 39.08%, texture 17.12 N, pH 5.79, chemical characteristics that is moisture content 73.25%, protein content 25.98% and microbiological characteristics that is 1.78 x 105 cfu/g Total Plate Count, 3.40 MPN/g Coliform and 0 cfu/g E. coli.

Abstract

The purpose of this study was to determine the effect of different levels of leaf aging on the characteristics of soursop leaf herbal tea and to determine the level of soursop leaf aging which can produce soursop herbal tea with the best characteristics. This study used a completely randomized design (CRD) with 3 levels of leaf aging treatment, namely young leaves, half old leaves and old leaves. Parameters observed in this study included water content, ash content, crude fiber content, extract content in water, total phenol, total flavonoid, tannin content, antioxidant activity, and sensory assessment which included color, aroma, taste, and overall acceptance ( hedonic test) soursop herbal tea and color and taste (scoring test) soursop herbal tea. The results showed that the difference in the level of leaf aging had a very significant effect on water content, ash content, crude fiber content, extract content in water, total phenol, total flavonoid, tannin content, antioxidant activity, and sensory characteristics including color and aroma. Soursop herbal tea prepared from young leaves had the best characteristics with criteria of water content 7.69%, ash content 5.86%, crude fiber content 17.62%, extract in water 121.25%, total phenol 2.76%, total flavonoids 2.66%, tannin content 3.26%, antioxidant activity 55.87%, the hedonic sensory characteristics of color, aroma, taste, and overall acceptability were neutral, and the scoring sensory characteristics of color was reddish yellow and taste was a little bitter.

Abstract

This study aims to determine the effect of the comparison between red dragon fruit skin extract on the characteristics of jelly drink and to get the right red dragon fruit skin extract ratio to produce jelly drink with the best characteristics. The design used in this study was a completely randomized design with treatment consisting of 5 levels of concentration ratio of red dragon fruit skin extract namely: 20%, 24%, 28%, 32%, dan 36%. Each was repeated 3 times in order to obtain 15 experimental units. The data obtained were analyzed by analysis of variance and the treatment had a significant effect, then followed by the Duncan Multiple Range Test. The result showed that ratio of red dragon fruit skin extract had a significant effect on moisture content, color intensity (l,a,b), scor color, hedonic color, texture, overall acceptance, non significant effect to total anthocyanin, antioxidant capacity, aroma, and taste. The ratio of red dragon fruit skin extract concentrations of 32% produced the best characteristics, moisture content 88.02%, color intensity l* 40.83, a* 58.86, dan b* 33.36, total anthocyanin 0.98 mg/L, antioxidant capacity 9.95 mg GAEAC/100g, color liked and carmine, aroma, texture, taste, overall acceptance is liked.

Abstract

Dried noodles are a type of noodle usually made from wheat flour. This research aimed to determine the effect of comparison wheat flour with modified elephant foot yam flour on characteristics of dried noodles and to determine best ratio of wheat flour and modified elephant foot yam flour produce dried noodles with the best characteristics. The experimental design used was Randomized Block Design with the comparison treatment of wheat flour and modified elephant foot yam flour which consist of 6 levels ratio: 100%:0%, 90%:10%, 80%:20%, 70%:30%, 60%:40%, and 50%:50%. Each treatment was repeated three times to obtain 18 experimental units. The data obtained were then analyzed by the Analysis of Variance and if the treatment had a significant effect, it was continued with the Duncan Multiple Range Test. The result show that comparison of wheat flour and modified elephant foot yam flour had a significant effect on moisture content, ash content, protein content, elasticity, water absorption, cooking loss, color (scoring test) and texture (scoring test). The comparison of 60% wheat flour and 40% modified elephant foot yam flour had the best characteristic of dried noodles with 7.66% of moisture content, 2.04% of ash content, 7.83% of protein content, 10.70% of elasticity, 246.43% of water absorption, 13.07 % of cooking loss, preferred color brown was slightly liked, aroma was slightly liked, preferred texture slightly chewy was slightly liked, taste was slightly liked and overall acceptance was slightly liked.

Abstract

This study aimed to determine the effect of wheat flour and breadfruit flour ratio on the characteristics of cubit cake and to know the best ratio of wheat flour and breadfruit flour to produce cubit cake with the best characteristics. The experimental design used in this research was a Completely Randomized Design (CRD) and a Randomized Block Design (RBD) with a ratio of wheat flour and breadfruit flour as a treatment that consisting of 6 levels, namely 100%:0%, 90%:10%, 80%:20%, 70%:30%, 60%:40%, 50%:50%. The treatment was repeated 3 times to obtained 18 units of the experiment. The data were analyzed by Analysis of Variance (ANOVA) and if the treatment had a significant effect on the variable then continued with Duncan Multiple Range Test (DMRT). The result showed that the ratio of wheat flour and breadfruit flour had a very significant effect on the content of moisture, ash, protein, fat, carbohydrate, crude fiber, strength of expand, criteria hedonic of colour, texture, taste, and overall acceptance and criteria skor of texture, taste, and aroma. Ratio of 70% wheat flour and 30% breadfruit flour produced a cubit cake with the best characteristics with 35.09% water content, 1.61% ash, 6.08% protein, 24.99% fat, 32.22% carbohydrate, 2.18% crude fiber, 17.72% strength of expand, slightly soft texture, taste and aroma rather typical of breadfruit, colour and overall acceptance were liked.

Abstract

This study was aimed to determine the effect comparison of wheat and fermented white sorghum flour on the characteristics of sweet bread and to determine the right ratio of wheat and fermented white sorghum flour to produce sweet bread with the best characteristics. This study used a Completely Randomized Design with treatment ratio of wheat flour and fermented white sorghum flour that consists of 6 levels namely; 100%:0%, 90%:10%, 80%:20%, 70%:30%, 60%:40%, and 50%:50%. The treatment was repeated 3 times to produce 18 experimental units. The data obtained will be analyzed using analysis of variance, if the treatment had a significant effect, it will be continued with the Duncan's Multiple Range Test (DMRT) test. The results showed that the ratio between wheat flour and fermented white sorghum flour had a significant effect on moisture content, ash content, crude fiber content, development power, pore uniformity, bread hardness, hedonic test (color, aroma, texture, taste, and overall acceptance), and scoring test (colors and texture) for the sweet bread. The ratio of 70% wheat and 30% fermented white sorghum flour had the best characteristics of sweet bread with moisture content 22.02%, ash content 1.21%, crude fiber content 4.24%, development power 170.41%, pore uniformity 79.67, bread hardness 7.06 N, with sensory characteristics of color browny-yellow was liked, the texture was soft enough and was liked, and for aroma, taste, overall acceptance was liked.

Abstract

Ginger wedang was a traditional drink from Indonesia which can be further processed into jelly drink. Jelly drink are different from other types of gel products because jelly drink products are consumed by aspiration (flow) and immediately swallowed like a drink. Jelly drinks generally used carrageenan as a gelling agent but carrageenan has a weakness because has a high syneresis value, the addition of glucomannan can improve the gel properties that are formed into a strong and elastic gel and able to reduce gel syneresis. This research was conducted to determine the effect of adding glucomannan and to obtain the concentration of glucomannan which produces ginger wedang jelly drink with the best characteristics. The experimental design was a complete randomized design with one factor which are consisting 5 levels of glucomannan concentration, namely: 0.05%, 0.075%, 0.10%, 0.125%, 0.15% with three replications. The parameters tested are total soluble solids, syneresis, dietary fiber, and hedonic sensory test (taste, texture, easiness to swallowed, easiness consumed using straw, and overall acceptance). The data analyzed using Analysis of Variance (?=0.05) and continued by Duncan Multiple Range Test (?=0.05). The results showed that the concentration of glucomannan had a significant effect the total soluble solids, syneresis, dietary fiber, taste, texture, easiness to swallowed, easiness consumed using straw, and overall acceptance. The best characteristic of ginger wedang jelly drink was addition 0.1% glucomannan with the total soluble solids of 4.1%, syneresis of 3.91%, dietary fiber of 6.46%, and sensory acceptability are liked.

Abstract

Boba drinks are beverages served with chewy tapioca-based toppings known as “boba”, “bubble”, or “pearl”. These toppings are high in sugar, calories, and carbohydrates but have low amounts of fiber and vitamins. Adding carrot pulp to “Caboom” (Carrot Boba Milk) toppings is expected to increase fiber and vitamin content. However, there's an issue with texture; the boba toppings aren’t achieving the desired chewiness and tends to crumble easily. Therefore, the addition of another ingredient is necessary, and porang (Amorphophallus muelleri Blume) flour is a suitable choice because it’s known for its ability to act as a gelling agent due to its glucomannan content. This research aimed to determine how the ratio of porang flour and carrot pulp affects the characteristics of boba toppings and determine the right ratio for achieving the best boba toppings characteristic. In this research, a completely randomized design was used, involving six treatment levels representing different ratios of porang flour and carrot pulp: 0:100, 25:75, 50:50, 75:25, and 100:0, replicated three times, resulting in a total of 15 experimental units. The collected data underwent analysis through ANOVA and followed by Duncan Multiple Range Test (DMRT). The results revealed that the comparison of porang flour and carrot pulp had a significant effect (P<0,05) on water content, ?-carotene content, hardness, and the hedonic ratings for attributes such as color, aroma, taste, texture, and overall acceptance. Among the different ratios considered, the comparison of 50% porang flour and 50% carrot pulp emerged as the best boba toppings characteristic with water content 68,5%, ?-carotene content 0,94%, hardness 1,65 N, the color is slightly like, the aroma is slightly like, the taste is like, the texture is like, overall acceptance is like, the total dietary fiber content 5,51%, and antioxidant activity 9,62%.

Abstract

Sere kedele is a traditional fermented soybean product. This type of food is processed by home industries, especially in Klungkung Regency and several areas in Gianyar. This research was conducted to obtain information related to the traditional production process and analysis of the quality of sere kedele, especially in the Klungkung Regency, Bali. This research carried out in two stages, namely a survei to determine the production process, raw/additional materials used, presentation method, production area, and distribution of sere kedele in Klungkung Regency. The second stage is to analyze the chemical properties of traditional sere kedele food in Klungkung Regency. The survei results show that there are five producers of sere kedele in the villages of Tusan, Tihingan, Galiran, Tojan, Akah and Besang. The processing of sere kedele is different for each producer, such as the length of boiling, the length of fermentation, and the stage of adding seasonings. The samples used in this study is raw sere kedele and fried sere kedele. Sere kedele mentah in Klungkung Regency contains water content 56.85%-60.85%, ash content 1.21%-1.34%, protein content 14.68%-22.04%, fat content 5.69%-9.62%, and carbohydrate content of 13.64%-15.16%. Meanwhile, fried soybean sere has a water content of 1.42%-4.46%, an ash content of 1.45%-1.83%, a protein content of 13.45%-30.65%, fat content of 36.14%-42,1%, and carbohydrate content is 26.78% -41.49%.
