Abstract

Sorgum merupakan tanaman serealia yang sangat berguna sebagai sumber karbohidrat alternatif dalam program diversifikasi pangan. Sorgum memiliki kandungan protein yang lebih tinggi dibandingkan beras dan berprospek baik untuk dikembangkan di Indonesia. Banyak penelitian telah menunjukkan bahwa sorgum sangat baik untuk kesehatan, antara lain untuk mengurangi resiko penyakit degeneratif. Penelitian secara in vitro sebelumnya, menunjukkan bahwa serealia ini mampu meningkatkan proliferasi limfosit manusia, yang menunjukkan perbaikan sistem imun. Tujuan penelitian ini adalah untuk mempelajari efek sorgum terhadap sistem imun dan kapasitas antioksidan secara in vivo pada tikus. Tiga kelompok tikus diberi pakan kontrol, pakan mengandung 50 persen atau 100 persen sorgum sebagai sumber karbohidrat selama 7 minggu. Hasil penelitian menunjukkan bahwa kelompok tikus yang diberi pakan mengandung 50 persen atau 100 persen sorgum mengalami peningkatan aktivitas proliferasi mencapai berturut-turut 70 persen dan 63 persen, aktivitas antioksidan hati (DPPH) mencapai 38 persen dan 29 persen, aktivitas enzim superoksida dismutase (SOD) mencapai 98 persen dan 91 persen, aktivitas enzim katalase (CAT) mencapai 28 persen dan 21 persen, dan aktivitas glutation peroksida (GPx) mencapai 57 persen dan 33 persen, akan tetapi mengalami penurunan kandungan malondialdehid (MDA) hingga 22 persen dan 16 persen. Penelitian ini menunjukkan bahwa sorgum mempunyai aktifitas imunostimulani dan aktivitas perbaikan antioksidan sehingga baik bagi kesehatan.Sorghum is a cereal that would be useful as alternative carbohydrate source in food diversification program. It has higher protein content than rice and good prospect to be developed in Indonesia. Researches have shown that sorghum has functions in health, such as to decrease degenerative disease risk. Previous in vitro study of sorghum showed that this cereal could increase human lymphocyte cell proliferation in vitro, indicating immune system improvement. The objectives of this research were to study the effects of sorghum on the in vivo immune system and liver antioxidant capacity in rats. Three groups of rats were fed control diet, diet containing 50 percent or 100 percent sorghum as sources of carbohydrate. The results showed that the rats fed with 50 percent or 100 percent sorghum displayed increase in, respectively, proliferation activity by 70 percent and 63 percent; liver antioxidant activity (DPPH) by 38 percent and 29 percent, super dioxide dismutase enzyme activity (SOD) by 98 percent and 91, catalyst enzyme activity (CAT) by 28 percent and 21 percent, and glutathione peroxides enzyme activity (GPx) by 57 percent and 33 percent; but decreased in malondialdehyde (MDA) by 22 percent and 16 percent. This research showed that sorghum has immunostimulation and antioxidant improvement activities and will be very good as source of carbohydrate diet.

Abstract

The purpose of this study were to determine which part of tamarind (asam) that had highest antioxidant activity and which formula of kunyit asam baverages had highest antioxidant activity and preferred by consumers. The experiment was conducted in two stages namely: part of tamarind and formula of kunyit asam baverages. The results showed that tamarind leaves with cooking time 2.5 minutes had the highest antioxidant activity with total phenol 0.75 g GAE/100g tamarind leaves extract; antioxidant capacity 0.053% evaluated by DPHH method and vitamin C: 0.252 mg/100 g. The kunyit asam baverages which the highest antioxidant activity and preferred by consumers, produced from formula: 5 part of turmeric, 25 part of tamarind leaves, 70 part of water, with total phenol: 1.06 g GAE/100g formula baverages, antioxidant capacity: 0.123% and vitamin C: 0.688 mg/100 g.ABSTRAKTujuan penelitian ini adalah untuk menentukan bagian asam yang menghasilkan aktivitas antioksidan tertinggi dan formulasi minuman kunyit asam yang memiliki aktivitas antioksidan tertinggi dan disukai panelis. Penelitian ini dilakukan dalam dua tahap yaitu bagian asam dan formulasi minuman kunyit asam. Hasil penelitian menunjukkan bagian daun asam dengan pemasakan 2,5 menit memiliki aktivitas antioksidan tertinggi dengan total fenol 0,75 g GAE/100 g ekstrak daun asam; aktivitas antioksidan 0,053% diuji dengan metode DPPH dan vitamin C 0,252 mg/100 g. Minuman kunyit asam yang memiliki aktivitas antioksidan tertinggi dan disukai panelis adalah pada formula 5 bagian kunyit, 25 bagian daun asam, 70 bagian air dengan total fenol 1,106 g GAE/100 g formula minuman kunyit asam, aktivitas antioksidan 0,123% dan vitamin C 0,688 mg/100 g.

Abstract

Tamarillo is an underutilized fruit in Indonesia, despite the fact that it contains two pigments (anthocyanin and carotenoid) with different properties (polar and non polar). Besides, there is a scarce information about extraction of anthocyanin and carotenoid of Tamarillo using sonication extraction. This study was aimed to investigate the comparison of extraction methods of sonication with maceration on antioxidant potency of anthocyanin and carotenoid of Tamarillo. Two pigmen types (anthocyanin and carotenoid) were extracted using two different methods (sonication and maceration). The parameters of analysis were yield, antioxidant activity (DPPH) with IC50, Ferric Reducing Antioxidant Power (FRAP), anthocyanin total, carotenoid total, phenolic total and scanning electron microscope of cover cell of material. The antioxidant potencies for both anthocyanin and carotenoid by sonication method were higher than those of obtained by maceration method. The results showed that both sonication and maceration were suitable for extraction of anthocyanin and carotenoid from Tamarillo.

Abstract

This study aimed to determine the purple sweet potato pigment extract concentration in soft candy formulation and its stability during storage. The research was conducted in two steps i.e. the addition of purple sweet potato pigment extract concentration in soft candy and of soft candy’s red pigment stability during storage. Firstly, the soft candy formulation was added with the red pigment of purple sweet potato extract in various concentrations, i.e. control (0% extract); 0.25% concentration of the pigment extract; 0.50%; 0.75%; and 1%. Secondly, the stability examination of pigment extract in soft candy was carried out at various storage temperatures: at refrigerator temperature (4 °C); at room temperature (27 ℃); and at 35 °C within the observation period of every 2 days for 14 days. The results showed that soft candy with the purple sweet potato red pigment extract addition of 0.75% concentration gave the highest value on panelists’ acceptance in terms of color, odor, texture, taste and overall acceptance as follows: 6.08 (like); 4.02 (neutral); 5.58 (like); 5.46 (rather like); and 5.92 (like), respectively, with the following levels of anthocyanin, total phenolic and antioxidant activity: 12,74±0,06 mg/100 g; 0,73±0,02 g/100 g and 0,76±0,02 g AAE/100 g, respectively. Stability of soft candy’s red pigment extract during storage at a temperature of 35 °C for 14 days showed a decline in the value of a* (redness), but an increase in the value of b* (yellowness) and the value of L (brightness), as a significant indicator of the purple sweet potato red pigment extract color change on soft candy, meanwhile at refrigerator (4 ℃) and room temperatures (27 ℃) after 14 days observation has not shown the loss or a significant reduction of red pigment color.

Abstract

Tujuan penelitian adalah menetukan aktivitas antioksidan dan kadat total antosianin rotimanis dari tepung ubi ungu modifikasi selama penyimpanan dan perbaikan formulasi. Metodepenelitian terdiri dari dua tahap. Tahap 1) menggunakan rancangan acak kelompok denganperlakuan lama penyimpanan, terdiri dari 7 level (0 hari ; 1 hari; 2 hari; 3 hari; 4 hari; 5 hari dan6 hari). Tahap 2) perbaikan formulasi roti manis ubi ungu, terdiri dari 3 formula (P1; P2; danP3). Parameter yang diamati total antosianin dan aktivitas. Hasil penelitian adalah Perbandingantepung ubi ungu modifikasi dengan terigu pada perbandingan 60:40 selama penyimpanan rotiselama 7 hari mengalami penurunan kadar total antosianin dari 0.465 mg/100 g menjadi 0.35mg.100 g dan aktivitas antioksidan dari 42.83 mg GEAC/100 bahan menjadi 32.49 mgGEAC/100 g bahan. Perbaikan formulasi roti ubi ungu modifikasi perbandingan 60:40 denganpenambahan gula mengakibatkan meningkatnya kadar total antosianin dari 0.19 mg/100 g bahanmenjadi 0.31 mg/100 g bahan dan penurunan aktivitas antioksidan dari 49.05 mg GEAC/100 gbahan menjadi 47.64 mg GEAC/100 g bahan.

Abstract

Proso millet (Panicum miliaceum L.) was evaluated as a source of dietary fiber. Preprocessing of millet flour could increase dietary fiber. The dietary fiber is considered to provide benefits as a prebiotic. The purpose of this study was to analyze the effect of preprocessing on millet flour dietary fiber and its ability to stimulate the growth of probiotic Lactobacillus rhamnosus SKG34. The research was conducted in two stages, i.e. preprocessing millet flour and viability of probiotic bacteria (Lactobacillus rhamnosus SKG34) on different broth media. First, millet flour was made in various preprocessed method: without preprocessing, germination preprocessing, fermentation preprocessing, germination – fermentation preprocessing. Second, the viability of Lactobacillus rhamnosus SKG34 was carried out on various media broth: glucose-free MRS (control), MRS, adding dietary fibers extract from millet flour with different preprocessing. The results showed that millet flour with fermented preprocessing (F) provided the highest dietary fiber of 22.38% with a water content of 11.97% and a tannin content of 0.08%. L. rhamnosus SKG34 exhibited the highest viability when grown in MRS broth. The addition of dietary fiber extract did not significantly enhance the viability of L. rhamnosus SKG34 compared to the glucose-free MRS broth (control), which showed a viability of 5 log10 CFU/mL. Thus, it can be concluded that millet preprocessing with fermentation (F) can significantly increase the dietary fiber of millet flour. However, dietary fiber millet has no potential as a suitable prebiotic candidate for promoting probiotic bacterial growth. Abstract

Ubi jalar ungu mempunyai prospek yang baik sebagai bahan baku industri pangan terutama dalam bentuk tepung. Akan tetapi, tepung ubi jalar ungu mempunyai beberapa kelemahan seperti kelarutan dalam air yang rendah, daya serap air yang rendah dan bentuk gel yang dihasilkan kurang seragam. Modifikasi tepung ubi jalar ungu dengan pregelanisasi telah banyak dikembangkan, namun terjadi penurunan kadar komponen aktif antosianin dan antioksidannya. Tujuan dari penelitian ini adalah untuk mengetahui suhu dan waktu pregelatinisasi yang tepat untuk menghasilkan tepung ubi jalar ungu termodifikasi terbaik dan untuk mengetahui perbandingan tepung ubi jalar ungu termodifikasi dan tepung daun kelor untuk menghasilkan flakes dengan karakteristik terbaik. Penelitian ini dibagi menjadi dua tahap. Tahap pertama yaitu ubi jalar ungu dipregelatinisasi dengan suhu pengukusan 70oC, 80oC dan 90oC serta lama pengukusan 5 menit, 10 menit dan 15 menit. Hasil terbaik dari penelitian tahap pertama kemudian diaplikasikan pada penelitian tahap kedua yaitu pengaruh penambahan tepung daun kelor terhadap flakes ubi jalar ungu dengan beberapa taraf yaitu 0%, 3%, 6%, 9% dan 12%. Hasil penelitian tahap pertama menunjukkan bahwa perlakuan pengukusan dengan suhu 70oC dan lama waktu pengukusan 5 menit menghasilkan tepung ubi jalar ungu termodifikasi terbaik dengan karakteristik rendemen sebesar 24,90%, kadar antosianin sebesar 25,65 mg/L, kadar pati sebesar 63,10%, kadar amilosa sebesar 28,73%, kadar amilopektin sebesar 34,37%, kadar antosianin 25,62 mg/L, viskositas 2597 cP, daya serap air 113,27% dan daya serap minyak 110,68%. Tepung ubi jalar ungu termodifikasi dengan perlakuan terbaik digunakan dalam pembuatan flakes ubi jalar ungu yang ditambahkan tepung daun kelor. Perlakuan dengan penambahan tepung daun kelor 12% menghasilkan serpihan ubi jalar ungu terbaik dengan karakteristik rendemen 59,41%, kadar antosianin 8,02 mg/L, aktivitas antioksidan 19,31%, dan uji organoleptik dengan karakteristik aroma suka, agak pahit dan suka, tekstur agak renyah dan suka serta penerimaan panelis secara keseluruhan suka.

Abstract

Penelitian ini bertujuan untuk mengetahui bahwa ubi jalar kuning (Ipomeas batatas L) dapatdimanfaatkan dalam pembuatan bolu kukus, mengetahui pengaruh perbandingan ubi jalar kuning kukusdengan terigu terhadap karakteristik bolu kukus serta mengetahui persentase perbandingan ubi jalarkuning kukus dengan terigu yang tepat sehingga dihasilkan bolu kukus dengan karakteristik terbaik.Rancangan yang digunakan adalah Rancangan Acak Lengkap (RAL) dengan perlakuan perbandingan ubijalar kuning kukus dengan terigu dengan level 0% : 100 %, 10% : 90%, 20% : 80%, 30% :70%, 40% :60%. Persentase berdasarkan jumlah berat terigu dan ubi jalar kuning kukus. Seluruh perlakuan diulangsebanyak tiga kali sehingga diperoleh 15 unit percobaan. Data yang diperoleh dianalisis dengan sidikragam, apabila terdapat pengaruh pada perlakuan maka dilanjutkan analisis dengan Uji Duncan’s.Parameter yang dianalisis dalam penelitian ini antara lain kadar air, daya kembang, dan uji sensoris.Hasil penelitian menunjukkan bahwa perlakuan 80% terigu dan 20% ubi jalar kuning kukus menghasilkanbolu kukus dengan karakteristik terbaik dengan kriteria kadar air 35,77 %, daya kembang 85,71 %,warna putih kekuningan, tekstur biasa, aroma agak suka, rasa agak suka, dan penerimaan keseluruhanagak suka.

Abstract

Fruit leather is a sheet-shaped food product with a slightly tough texture, easy to roll, attractive color, and made from dried fruit puree. Kintamani Siamese orange can be processed into fruit leather, but its elasticity is lacking, so that the addition of a binder is required. The use of a combination of natural and synthetic binders in fruit leather has been widely studied, but combining natural binders is still rarely explored. Seaweed as a natural binder needs to be combined with other natural binders, such as basil seeds, to improve elasticity. This study aimed to determine the effect of the ratio of seaweed puree to basil seeds on the characteristics of fruit leather and to find the best ratio to produce Kintamani Siamese orange fruit leather with optimal characteristics. A Completely Randomized Design was used with six ratios of seaweed to basil seeds: 100%:0%, 80%:20%, 60%:40%, 40%:60%, 20%:80%, and 0%:100%, each with three replications. Data were analyzed using ANOVA at a 95% confidence level, followed by Duncan's multiple range test if significant effects were found. The results showed that the seaweed-basil seed ratio significantly affected (p<0,05) moisture content, tensile strength, elongation, elasticity, and hedonic values (appearance, overall acceptance). The best treatment was 60% seaweed and 40% basil seeds, with 12.13% moisture, 0.11 MPa tensile strength, 17.75% elongation, 0.64% elasticity, 41.55% total sugar, 4.06% crude fiber, slightly preferred texture and taste, and preferred appearance, aroma, and overall acceptance.
