Abstract

The hope of this research is to establish manateau kanji extract as a formula for bagea production that comes with gonad diadem setosum (sea urchins), which is rich in nutrients and therefore ideal for women pregnant. Cassava kanji extract can be used as a food formula ingredient to make a range of food formula The goal of this study is to examine the formula of bagea made from cassava flour extract and Gonad Diadema Setosum (Sea urchins) as an aging food in pregnant women. Pre-experiment design in the manufacture of bagea solution. The highest favorite amount for cassava flour bagea is BTP 2 (sago flour 50, cassava flour 50) with a value of 3.26. In addition, the highest level of favorite in the manufacture of bagea made from cassava flour and the addition of gonad is BTP 2 (sago flour 50, cassava flour 50 and gonad 20) In order to increase the preferred value of bagea with the addition of cassava flour and gonad, it is important to add certain ingredients to add flavor to remove odor.

Abstract

Background: Providing additional food made from local food is one strategy for handling nutritional problems in malnourished toddlers and SEZ pregnant women. In order to support improving the quality of Indonesian people, strengthening an economic structure that is productive, independent and competitive, the government has targeted an acceleration in reducing the stunting rate under five. In order to support the implementation of the Acceleration of Stunting Reduction which aims to achieve the quality development target by 2030 and the stunting prevalence target of 14% by 2024.Objective: To produce a comprehensive, up to date and effective analysis of supplementary feeding analysis: Accelerating Stunting ReductionResearch Method: This research uses a qualitative approach and design. Participants in this research were leaders and staff of institutions related to stunting prevention, namely: Provincial Health Services, District Services, Community Health Center Nutrition Officers and Posyandu Cadres. Materials and Tools: Questionnaire form, Camera, Video/handycam equipment, other ATK. This research was carried out in the Southeast Sulawesi Provincial Health Service Area, in June-November 2023. Data analysis method: Reading/studying the data, marking key words and ideas that is in the data. The steps in data analysis are data reduction, data presentation and conclusion drawing as follows: Data reduction, data presentation, conclusion drawingResults. PMT activities made from local food can build family independence in providing quality food for pregnant women and toddlers. Malnutrition among toddlers and pregnant women in KEK in Southeast Sulawesi. This problem must be corrected. One program is providing additional local food. Where Southeast Sulawesi is a coastal and island area that has a lot of food. The success of the local feeding program is demonstrated by improvements in the nutritional status of both targets. In toddlers, success can be seen from the weight gain each month. In this activity, the community health center plays a very important role. At the Puskesmas, all activities carried out by cadres can be monitored by the Puskesmas nutrition staff.Suggestion: Improvements in funding are needed, namely additional funds for food distribution to cadres, adequate transportation is needed. It is necessary to evaluate the process of providing additional food made from local ingredients and evaluate weight gain in children under five and increase in LILA size in pregnant women.

Abstract

Background: Stunting is a disorder of growth and brain development in children caused by malnutrition for a long time, including inadequate intake and increased nutritional needs due to repeated infections, and lack of stimulation. The percentage of stunted toddlers in Southeast Sulawesi in 2017 was 36.4% , Konawe Regency by 29.6%. This study aims to determine the relationship between infectious diseases, knowledge of maternal nutrition and diet with the incidence of stunting under five children Method :. This type of research is descriptive analytical research with a cross sectional study approach. It was carried out from March to May 2020, the number of samples was 35 participant. The sampling technique was Proportional Random Sampling. Results: The study showed as many as 54.3% (n=19) under five were women, 57.1% under five aged 12-36 months, 31.4% under five suffering from infectious diseases, there were 85.7% mothers under five had poor nutrition knowledge, as many as 51.4% Stunting toddlers. Conclusion: There is a significant relationship between infectious diseases and the incidence of stunting in toddlers, and there is no significant relationship between knowledge of maternal nutrition and eating patterns with the incidence of stunting. Suggestion: Toddler mothers are given nutrition education to always visit Posyandu regularly so they can monitor their child's growth and development.

Abstract

Fish + moringa biscuits are a functional local food innovation that is easy to obtain and can be a healthy snack that is rich in nutrients to support the growth of toddlers. The dissemination of the use of fish + biscuits is one of the efforts to increase the knowledge and nutritional status of toddlers. The aim of this service is to increase mothers' knowledge about the benefits of sori fish + moringa made into biscuits. The service method is carried out through lectures and questions and answers. This dedication was carried out on December 19 2023 in Kasilampe Village. The target of this activity is 25 mothers who have toddlers who live in the coastal area of ​​Kasilampe Village. Knowledge data was collected using a questionnaire and analyzed descriptively. The results of this community service are that knowledge before counseling about the importance of fish biscuits + moringa is that 40% of mothers do not understand that moringa biscuits can be given from 6 month old babies and do not understand that fish is an animal protein and after counseling 100% of mothers have know that moringa biscuits can be given from babies as young as 6 months and know that fish is a source of animal protein. The conclusion of this community service was that there was an increase in mothers' knowledge after being given counseling about the benefits of fish biscuits + moringa.
