Abstract

Tempoyak is one of traditional food from Jambi Province. The innovation product of tempoyak that commonly consumption in community is Sambal Tempoyak. The processing of tempoyak into sambal is intended to improve the taste, but the shelf life is short. Vacuum packaging is expected to be able to maintain the quality of Sambal Tempoyak. This quantitative experimental research is analyzed descriptively to draw conclusions. Tempoyak used in this research comes from traditional markets in the Jambi city. Sambal tempoyak made with herbs and spices adding. After cooked and cooled, the sambal tempoyak was packed with plastic and vacuumed using a vacuum sealer. The products storage in two temperatures; room temperature and cold temperatures and then, test of levels of microbial contamination using the Total Plate Count test. Test starting from the first day of processing (0 days of storage), 7th day, 14th day, and  21th day. The results showed the number of sambal tempoyak microbes stored at room temperature lower than sambal tempoyak which is stored in the refrigerator temperature and storage age of the product until the 21st day after processing, but Klabsiella Ozaenae contamination occurred in the 14th day sample. Further research, suggested to examine the  bacteria that contaminate this product so the prevention about this bacterial can applied by hazard analysis critical control point.

Abstract

Overweight in female adolescence can disrupt growth and increase the risk of non-communicable diseases. Many determinants of overweight include sleep quality and nutritional intake. Late-night sleep can reduce sleep quality, trigger imbalances in leptin and ghrelin hormones, increase appetite, and lead to excessive nutritional intake. The aim of this study was to determine the relationship and the magnitude of the risk between sleep quality and nutritional intake on overweight in female adolescence. This research employs a case-control design and multistage sampling technique. 160 female students participated in the study who were divided base on normal nutritional status and overweight. The research was conducted in the city of Jambi in May 2023. Sleep quality measurement used the IPAQ (Pittsburgh Sleep Quality Index) questionnaire, and nutritional intake was assessed using a 3x24-hour recall form. BMI screening was conducted before interviewing the respondents. Data analysis utilized chi-square tests and logistic regression. The chi-square test results showed a significant relationship between sleep quality, energy intake, carbohydrate intake, and protein intake with overweight (p<0.05). Sleep quality, energy intake, and carbohydrate intake simultaneously influenced overweight occurrence in female adolescence by 11.1%. Adolescents are advised to diversify carbohydrate types and increase protein portions. Physical activities should be adjusted to optimize sleep quality.

Abstract

Adolescents, as human resources assets of a country, are vulnerable to health and nutrition problems, one of which is overweight. The prevalence of overweight in teenagers increases every year. Overweight during adolescence can increase the risk of non-communicable diseases and musculoskeletal disorders. Female adolescents are the key to the chain of life because they will become mothers in the future and pass on genetics to their descendants. Behaviour, lifestyle, nutritional adequacy, and sleep habits are determinants of adolescent overweight. This study aimed to examine the differences in body image and physical activity between overweight and non-overweight adolescent groups. The research design was a case-control study with 160 respondents aged 15-17 years in the city of Jambi in May 2023. Sample selection used a multistage sampling technique with inclusion criteria. BSQ and IPAQ are questionnaire scales used to measure individual body image and physical activity. Statistical tests used the Mann-Whitney test and Chi-Square. The Mann-Whitney test shows a difference in body image between overweight and non-overweight adolescents (p<0.05). However, there is no difference in physical activity between overweight and non-overweight adolescents. There is a significant relationship between body image and physical activity with overweight (p<0.05). Overweight adolescents have a negative body image; it is hoped that adolescents will exercise regularly and pay attention to their diet by consuming more nutritious and healthy foods.  Keywords: Adolescent, body image, overweight, physical activity

Abstract

A teenager must be able to carry out his role in family development tasks. The condition of adolescents who attend SMPIT Nurul Ilmi mostly come from well-off families and tend to live with being served in terms of taking care of themselves. This condition is feared to have an impact on the thinking and behavior of adolescents who tend to be less independent, thinking that they still have parents who will help them and solve their problems. The purpose of this activity is for adolescents to understand their role in the family so that they are able to become strong, independent, responsible and have a leadership spirit. The activity was carried out on November 1, 2022 at SMPIT Nurul Ilmi Jambi. The implementation method used is the direct face-to-face method with participants to provide health education by means of face-to-face, discussion and combined with the EMO-DEMO technique. The expected contribution from participants is that all participants participate in all series of activities so that they can provide optimal activity results. The result of this activity is that students as adolescents become more understanding of their role in the family, seen from the reactions that arise after the activity adolescents write down all their wishes for the future and promise to be responsible humans, protect and love their families wholeheartedly. Interested parties such as schools, teachers and parents can continue the condition of students who begin to open themselves to be responsible for themselves, their families and the nation. Sharpen adolescents' awareness, independence, discipline and increase compassion for their families and environment.

Abstract

Anemia, particularly iron deficiency anemia, is a significant global health problem, with a high prevalence among adolescent girls. In Indonesia, the prevalence of anemia reaches 23.7%, and adolescent girls are among the most vulnerable groups due to menstruation and unhealthy diets. One risk factor is the habit of consuming tea, especially black tea, which contains tannins and can inhibit the absorption of non-heme iron. Conversely, consumption of iron-enhancing foods such as vitamin C and animal protein is known to increase iron absorption. This study aims to determine the relationship between tea consumption habits and consumption of iron-enhancing foods with hemoglobin levels in adolescent girls. This study used a quantitative design with a cross-sectional approach and was conducted in May 2025 at SMPN 5 Jambi City. A sample of 77 female students was randomly selected from a population of 358 people. Data were collected through the SQ-FFQ questionnaire and hemoglobin levels were measured using the Hbchecker tool. Data analysis was performed univariately and bivariately with the Chi-square test (α < 0.05). The results showed that 74% of respondents had a high tea consumption habit, and 54.5% had anemia. There was a significant relationship between tea consumption habits and hemoglobin levels (p = 0.000). However, no significant relationship was found between consumption patterns of iron-enhancing foods and hemoglobin levels (p > 0.05). In conclusion, tea drinking habits are associated with an increased risk of anemia, while consumption of iron-enhancing foods has not shown a significant effect

Abstract

Pemberian Makanan Pendamping ASI (MP-ASI) yang tepat sangat penting bagi tumbuh kembang anak. Ragam media penyuluhan—tatap muka, video, modul cetak, pesan singkat, aplikasi, hingga kampanye massa—semakin banyak digunakan namun bukti komparatifnya tersebar. Penelitian ini bertujuan untuk merangkum bukti terkini mengenai efektivitas berbagai media penyuluhan gizi yang menargetkan ibu dalam meningkatkan pengetahuan dan praktik MP-ASI, serta merumuskan implikasi desain program. Metode penelitian ini dilakukan melalui tinjauan cepat (rapid review) terhadap 11 artikel (2016–2025) yang mengevaluasi media penyuluhan dengan luaran pada ibu (pengetahuan, sikap, perilaku, indikator praktik MP-ASI seperti MDD (Minimum Meal Frequency)/MMF (Minimum Meal Frequency)/MAD (Minimum Acceptable Diet). Sumber meliputi uji acak terkontrol klaster, quasi-eksperimental, evaluasi program skala-besar, serta tinjauan sistematik. Data diekstraksi ke tabel ringkas dan disintesiskan secara naratif. Adapun hasil penelitian menunjukkan peningkatan bermakna pada pengetahuan dan praktik MP-ASI. Intervensi berlapis yang menggabungkan konseling interpersonal (IPC) + media cetak + media massa/video + pesan digital (SMS/WA) paling konsisten meningkatkan indikator MDD/MMF/MAD. Video dan modul cetak sama-sama efektif meningkatkan skor pengetahuan/perilaku; video seringkali lebih praktis dan menarik. Pesan digital (WA/SMS) meningkatkan kepatuhan dan penguatan perilaku, terutama jika disesuaikan (tailored), terjadwal, dan disertai rujukan/dukungan tenaga kesehatan. Kampanye skala nasional memperluas jangkauan dan kesadaran, tetapi dampak perilaku paling kuat ketika dikombinasikan dengan IPC.

Abstract

Anemia is a common nutritional problem experienced by adolescent girls. Anemia-affected girls are at risk of developing anemia during pregnancy. Anemia also increases the risk of impaired concentration in learning and decreased academic achievement. The purpose of establishing the Anemia Ambassador Team is to improve the knowledge and skills of cadres about anemia and anemia screening. The Community Service activities were carried out from April to August 2025, with intensive mentoring conducted in July 2025 at the Al Hidayah Islamic Boarding School in Jambi City. The target of this community service was the 10 ORSADA CADRES of Al Hidayah Islamic Boarding School. The methods used were lectures, discussions, and questions and answers, pre-tests, and post-tests. The results of the activities showed The implementation of the Community Service Program (PkM) demonstrated that the formation of the Anemia Ambassador Team successfully improved ORSADA cadres' knowledge and skills regarding anemia, from understanding its causes, signs and symptoms, to prevention and management. Furthermore, cadres were able to conduct anemia screening in a more efficient and standardized manner. Strengthening peer cadres such as ORSADA Cadres has proven to be more effective in influencing adolescent behavior than a top-down approach, due to the sense of trust and emotional closeness

Abstract

One of the nutritional problems often experienced by adolescent girls is anemia. Adolescent girls are categorized as having anemia if the hemoglobin (Hb) level in the blood is less than 12 gr/dl. The type of anemia that often occurs is iron deficiency anemia, which is generally caused by blood loss during menstruation and increased iron requirements during puberty. As an effort to overcome this, a sustainable anemia prevention program was designed through the formation and strengthening of the Anemia Ambassador Team. This strengthening is carried out by providing education about anemia to adolescent girls. The purpose of this strengthening is to form peer cadres who play an active role in the prevention and control of anemia in the school environment on an ongoing basis. This activity was carried out in Al Hidayah Islamic Boarding School, Jambi City. The target of the activity was 13 people, with the FGD method and guidance. The results of the community service were obtained by forming ORSADA Cadres selected from peers who are expected to have a strong influence and be able to convey information about anemia, an increase in the knowledge of cadres about preventing anemia
