Abstract

Setiap tahun permintaan bahan pangan baik untuk memenuhi kebutuhan dalam negeri maupun kebutuhan ekspor semakin meningkat. Kebutuhan pangan yang semakin meningkat menyebabkan bahan pangan alternatif mulai dikembangkan salah satunya yaitu umbi porang. Porang sangat di minati oleh masyarakat dunia karena kaya akan manfaat dan kegunaan. Berdasarkan data dari Kementrian Pertanian setiap tahunnya ekspor porang pengalami peningkatan. Peningkatan permintaan ekspor porang membuat semakin banyaknya petani yang membudidayakan tanaman tersebut. Kabupaten Maros adalah salah satu sentra produksi porang yang berada di Sulawesi Selatan dan memiliki lokasi yang strategi karena berada dekat dengan pabrik pengolahan porang dan merupakan daerah yang memiliki area penanaman porang yang cukup luas. Penelitian ini bertujuan untuk menggambarkan rantai pasok porang yang terjadi di Kabupaten Maros. Penelitian ini berlangsung di Kecamatan Cenrana, Kabupaten Maros yang merupakan sentra produksi porang. Metode yang digunakan untuk pengambilan sampling yaitu dengan metode snowball sampling Total sampel petani dalam penelitian ini yaitu sebanyak 34 orang. Analisis FSCN (Food Supply Chain Network) digunakan untuk menggambarkan kondisi rantai pasok porang yang terjadi di Kabupaten Maros. Sasaran rantai pasok, struktur rantai pasok, manajemen rantai pasok, sumberdaya rantai pasok, dan proses bisnis rantai pasok menjadi pembahasan utama dalam penelitian ini. Adapun Kesimpulan dalam penelitian ini yaitu rantai pasok porang yang terjadi di Kabupaten Maros sangat tergantung dengan permintaan eskpor karena seluruh hasil produksi porang diserap sepenuhnya oleh pabrik pengolahan kemudian diekspor keluar negeri. Mekanisme penentuan harga yang terjadi antar petani dan tengkulak mengikuti harga yang diterima dari pabrik pengolahan porang.Kata Kunci : Rantai Pasok, Porang, eksporĀ

Abstract

Advances in technology in production, rice processing, and community welfare are changing consumer behavior. The purpose of the study is to analyze consumer preferences in rice procurement. This study was conducted in the city of Makassar, South Sulawesi Province with a survey method on 60 households of respondents who were randomly selected in three residential clusters, namely housing complexes, suburban areas, and the middle of the city. The data analyzed is based on the income level of the household. There are two groups of a factor in rice procurement, rice properties and buying methods. Rice properties consist of, characteristics, varieties, buying preferences, and packaging sizes. The buying process consists of methods, buyers, places, sellers, and information sources for rice procurement. The data is analyzed by using the descriptive method and presented on the frequency table matrix. The results showed that households buy rice with considerations, such as variety, price, and buying habits. While the purchase method is carried out either by the wife or husband, packaging 10-25 kg, and shopping at traditional markets and small groceries for low-income households. In contrast, supermarkets and small grocery places are chosen as places to shop for rice for high-income households. The source of information about the quality and price of rice is obtained at the place of purchase. The ease of obtaining rice is affected by packaging, place of purchase, and quality information are factors that must be considered in the development of rice marketing in the city.

Abstract

Food price volatility often occurs and cannot be avoided, including food price volatility that occurs in Parepare City. The effect of movement or changes in food prices appears to influence inflation, which in turn becomes the purpose of this study, namely to analyze the effect of changes in food prices on inflation in Parepare City. The analysis method used is multiple linear regression analysis. The data used is secondary data in the form of monthly time series from July 2018 to June 2021. The independent variables in this study are the food prices of rice, chicken meat, red chili, chicken eggs and granulated sugar. The results showed that the food prices of rice and chicken eggs have an increasing trend while the prices of chicken meat, red chili, and granulated sugar tend to decrease. The coefficient of determination test results shows that changes in food prices simultaneously positively and significantly affect inflation. The t-statistical test shows that partially changes in food prices of rice and chicken meat have a positive and significant effect on inflation while changes in food prices of red chili, chicken eggs and granulated sugar have a positive but insignificant effect on inflation. This research has implications for public policy to develop food prices stabilization policies, such as food reserve policies, market regulations, incentives for food producers, or social assistance programs to alleviate the impact of food inflation.
