Abstract

seaweed contains bioactive compounds that can be used to support human health. One of the seaweeds that are widely found in Indonesia is seaweed / brown algae. An example of brown algae, one of which is Padina australis. Padina australis is a seaweed that contains many bioactive compounds, such as alkaloids, flavonoids, saponins, tannins, and antioxidants. However, Padina australis is not widely applied and used in processed food products. So in seaweed research, Padina australis is used as seaweed tea. In this study, Padina australis seaweed tea was carried out the difference in length of immersion with hot water and the treatment of immersion time is 0 minutes, 5 minutes, 10 minutes, and 15 minutes. The bioactive compounds studied are alkaloids, flavonoids, saponins, tannins, and antioxidant activity. The results showed that the difference in immersion time there are bioactive components in the form of phytomias contained in Padina australis tea, among others: alkaloids, flavonoids, tannins, and saponins in each treatment (0 minutes, 5 minutes, 10 minutes, and 15 minutes). In the test the highest antioxidant activity on P4 treatment (15 minutes) was 47.7% and for the lowest on treatment P2 (5 minutes) by 44.8%.

Abstract

The abundance of shrimp waste is a problem that has not yet been completely resolved and research is still ongoing. One effort that can overcome this problem is to use it as a raw material for making shrimp paste. The purpose of this research was to utilize shrimp shell waste as a food additive.  The research method used was experimental with five treatments, namely A1B1 (0:100), A2B2 (25:75), A3B3 (50:50), A4B4 (75:25) and A5B5 (100:0). Meanwhile, storage time was P1 (1 day), P2 (4 day), P3 (7 day) and P4 (30 day). The tested parameters were moisture content, pH and organoleptic (descriptive).  The results showed that the best formulation was the ratio of shrimp shell waste and anchovy of 25:75 (A2B2) with P3 storage time. The value of moisture content was 8.1% and pH was 7,3.  The smell of shrimp paste was not too strong with a reddish yellow color and a slightly rough texture.

Abstract

lemuru fish is a pelagic fish that is widely found in Indonesian waters that have an economical selling price. Fish is a food that is easily damaged so it requires good and correct handling. The purpose of this study was to determine the effect of temperature and storage time on the number of microbes in fresh lemuru fish. This study uses a quantitative research design. The treatment in this study was carried out with 2 treatments of differences in temperature and time. The number of microbes obtained at 00C at storage time for 0 hours (10,1 x 104 colonies / ml), 24 hours (8,8 x 104 colonies / ml), and 48 hours (6,3 x 104 colonies/ml). At 50C at storage time for 0 hours (10,2 x 104 colonies/ml), 24 hours (9,8 x 104 colonies/ml), and 48 hours (9,0 x 104 colonies/ml). At 270C at storage time for 0 hours (10,4 x 104 colonies/ml), 24 hours (23,3 x 104 colonies/ml), and 48 hours (29,8 x 104 colonies/ml). In conclusion, the longer the storage time of lemuru fish with low temperatures, the number of microbes that grow is small.

Abstract

Seaweed is a marine plant that is found in many Indonesian waters. Seaweed has various types, one of which is Eucheuma cottonii seaweed.  So far, Eucheuma cottonii is only used as functional food in the food sector, but there are still few who use it as a functional drink. The purpose of this study was to determine the chemical characteristics of kombucha tea seaweed Eucheuma cottonii. The research method used is experimental. The results of the chemical characteristics obtained in the best treatment are treatment D (12%) with a total sugar content value of 7.67%, total ash content of 0.773%, polyphenol content of 0.177% and tannin content of 0.202%.

Abstract

This research aims to determine the effect of quantitative differences in temperature and storage time on physical changes, TPC values and pH in fresh tilapia fish (Oreochromis mossambicus). The analytical method used is quantitative descriptive analysis. The results showed that the physical characteristics changed in terms of color, texture and aroma with temperature and storage time. The TPC value results were obtained at a temperature of 0 with a storage period of 0 hours, 24 hours, and 48 hours, namely 9.6 x 104 colonies /mL, 9.5 x 104 colonies /mL and 9.4 x 104 colonies/mL. The results of the TPC value were obtained at a temperature of 5  with a storage duration of 0 hours, 24 hours, and 48 hours, namely 9.8 x 104 colonies/mL, 9.7 x 104 colonies/mL and 9.6 x 104 colonies/mL. The TPC value results were obtained at a temperature of 27  with a storage period of 0 hours, 24 hours, and 48 hours, namely 9.9 x 104 colonies/mL, 14.3 x 104 colonies / ml and 18.8 x 104 colonies/mL. The pH value is obtained at a temperature of 0  with a storage duration of 0 hours, 24 hours, and 48 hours, namely 7.1, 7.2 and 7.3. The pH value is obtained at a temperature of 5  with a storage period of 0 hours, 24 hours, and 48 hours, namely 7.1, 7.7 and 7.8. The pH value is obtained at a temperature of 27  with a storage period of 0 hours, 24 hours, and 48 hours, namely 7.2, 5.7 and 5.6. Based on the results of the research conducted, it can be concluded that the treatment of storage temperature and storage duration can affect physical characteristics, Total Plate Count (TPC) value and pH value in tilapia which shows the quality of freshness of the fish.

Abstract

Cemara Beach is a beach located in Pakis Village of Banyuwangi Regency, East Java. The catches of Cemara Beach fishermen are mostly fish and seaweed. The seaweed obtained by Cemara Beach fishermen is usually quite a lot when it has reached the seaweed catch season. The purpose of this service is to provide training and counseling on the processing of diversified seaweed products. Through the community of Cemara Beach can apply the results of this service for the welfare of the Cemara Beach community itself. The method of this service is a combination of anger, demonstration and direct practice. This is done by training and counseling using several stages, namely opening, core and closing regarding the processing of diversified Eucheuma cottonii seaweed products in the form of healthy drink Eucheuma cottonii seaweed kombucha tea . The results of this activity are 2 things. First: the community of Cemara Beach received training on the processing of diversified Eucheuma cottonii seaweed products in the form of healthy drink Eucheuma cottonii seaweed kombucha tea. Second: the people of Cemara Beach received counseling on appropriate technology in processing Eucheuma cottonii seaweed kombucha tea using a cabinet dryer. This cabinet dryer makes it easier for the people of Cemara Beach to dry seaweed which can beadjusted in time and temperature. Therefore, through this activity at Cemara Beach, the Cemara Beach community can obtain training and counseling on the processing of diversified Eucheuma cottonii seaweed products in the form of healthy drink Eucheuma cottonii seaweed kombucha tea and on appropriate technology in processing Eucheuma cottonii seaweed kombucha tea using a cabinet dryer.

Abstract

Eucheuma cottonii juga memiliki manfaat bagi kesehatan sebagai antioksidan, anti peradangan, anti diabetes dan anti kanker. Kelimpahan hasil laut pada rumput laut Eucheuma cottonii juga melimpah diperairan Indonesia. Dengan adanya hal tersebut, Eucheuma cottonii dapat dimanfaatkan sebagai teh kombucha. Penelitian ini bertujuan untuk mengetahui bahwa perbedaan pemberian gula dapat mempengaruhi sifat fisik dan nilai pH teh kombucha rumput laut Eucheuma cottonii. Metode yang digunakan metode eksperimental kuantitatif dengan perbedaan pemberian gula 9%, 10%, 11% dan 12% pada teh kombucha rumput laut Eucheuma cottonii. Hasil penelitian yang didapatkan pada warna teh kombucha yang awalnya kuning bening menjadi kuning pucat pada semua perlakuan. Pada hasil ketebalan nata tertinggi pada perlakuan D (12%) sebesar 0,37 cm. Pada hasil berat nata tertinggi pada perlakuan D (12%) sebesar 54,67 gram. Pada hasil pH terendah didapatkan pada perlakuan D (12%) dengan nilai 2,89. Berdasarkan hal tersebut dapat disimpulkan bahwa pemberian konsentrasi gula mempengaruhi sifat fisik dan nilai pH teh rumput laut Eucheuma cottonii.

Abstract

Penanganan ikan harus dilakukan secepat mungkin untuk menghindari kemunduran mutu ikan sehingga dibutuhkan bahan dan media pendinginan yang sangat cepat dalam menurunkan suhu ikan pada pusat thermal ikan. Tujuan dilakukannya kegiatan ini yaitu untuk mengetahui bagaimana proses pasca panen yang dilakukan oleh UD. Karunia dan UD. Berkat Food sebagai penerima bahan baku hasil perikanan dari UPT. PPP Muncar. Penanganan pascapanen ikan di UD. Karunia dimulai dari penerimaan bahan baku, pencucian, penyusunan, pembekuan, penyimpanan dan pendistribusian. Sedangkan penanganan ikan di UD. Berkat Food dimulai dari penerimaan bahan baku, pencucian, penyusunan, pembekuan, dan penyimpanan. Pada kedua perusahaan tersebut yang membedakan adalah suhu pembekuan yang digunakan yaitu UD. Karunia suhunya sekitar -18oC sampai -24oC yang bertujuan menghambat pertumbuhan mikrooganisme dan aktivitas enzim di dalam produk sehingga produk menjadi lebih awet dan tidak mudah rusak dan hasilnya sangat memuaskan dan dapat bertahan selama 1 tahun. Pada UD. Berkat food suhunya sekitar -34oC sampai -40oC yang bertujuan menghambat pertumbuhan mikroganisme yang berada didalam tubuh ikan dan dapat bertahan selama 8 bulan.

Abstract

Rumput laut merupakan salah satu komoditas unggulan yang tersebar hampir di seluruh perairan Indonesia khususnya di Banyuwangi. Rumput laut yang sering ditemukan adalah Ulva lactuca, Sargassum sp., dan Padina australis. Rumput laut Padina australis banyak ditemukan di bibir pantai dan mengandung polisakarida, yaitu jenis alginat yang digunakan sebagai bahan baku industri makanan, dapat dijadikan minuman seduhan. Tujuan dari penelitian ini adalah menganalisis perlakukan terbaik teh rumput laut Padina australis dengan lama perendaman (0 menit, 5 menit, 10 menit 15 menit) pada teh rumput laut Padina australis dengan uji kadar air dan uji hedonik. Analisis yang digunakan menggunakan RAL dengan 4 perlakuan 4 ulangan, yang dijelaskan menggunakan diagram batang. Hasil menunjukkan bahwa perlakuan P4 (15 menit) adalah perlakuan terbaik dibandingkan perlakuan lainnya dengan jumlah kadar air sebesar 5,67%. Begitupula dengan hasil uji hedonik bahwa. Parameter aroma sebesar 6,56. Parameter rasa sebesar 6,56; parameter warna 6,64; parameter kenampakan 7,16; parameter tekstur (serbuk) 6,72.

Abstract

Bulan Maret 2020 Indonesia dilanda wabah penyakit membahayakan yakni adanya virus corona disease atau yang sering disebut pandemic covid-19. Meningkatnya masyarakat Indonesia yang terkonfirmasi positif corona menyebabkan pemberlakukan social distancing sangat ketat di seluruh wilayah atau yang dikenal dengan peraturan PSBB. Tentu pandemic Covid-19 berdampak buruk disemua sektor, terutama pada sektor ekonomi dan pangan. Salah satu daerah yang berdampak dari pandemic Covid-19 adalah Desa Tamanbaru Kecamatan Banyuwangi, sebagai langkah awal untuk penguatan ekonomi dan pangan di Desa Tamanbaru Banyuwangi maka dilakukan pelatihan dan penyuluhan dalam kegiatan pengabdian kepada masyarakat Program Studi Teknologi Hasil Perikanan UNIBA melalui program Budikdamber (Budidaya Ikan dan Tanaman Dalam Ember), budikdamber merupakan perpaduan teknik pertanian dan perikanan yang membutuhkan modal cukup murah dan mudah. Komoditas ikan yang di budidaya adalah ikan lele dan menggunakan tanaman kangkung. Kelompok masyarakat di Desa Tamanbaru Kabupaten Banyuwangi telah berhasil dengan program budikdamber sehingga mampu menciptakan peluang usaha dan mempertahankan gizi pangan ditengah masa pandemic Covid-19.
