Abstract

The remaining food percentage is a simple indicator to evaluate the success of hospital nutritional services. One of the factors influencing is the level of knowledge of low salt diets and the perception of taste. The amount of food remaining will have an impact on patient nutritional status and patient recovery. Based on hospital nutritional guidelines, Standard indicator of food waste ≤ 20%. The purpose of this research is to find out about the Difference Of Patient Food Waste Based On Knowledge Levels Of Low Salt Diets And Flavor Perception At RSUD Wangaya Denpasar City. This research draft is cross sectional with a total of 62 inpatient samples. Food waste data is obtained by food weighing method. The level of knowledge of low salt diets and the perception of taste collected with questionnaires. The results of the research found that the patient's waste were classified as little is about 33 persons (53,2%), the level of knowledge is good which is about 58 persons (93,55%), and the perception of taste is in the good category which is about 56 persons (90,3%). Research results after the chi square test show no significant difference between foods waste with low salt diet knowledge levels (p=0,082). While analyzed difference food leftovers with taste perception showed (p=0,000) that means there is a significant difference.Keywords : Food Waste, Knowledge Levels of Low Salt Diets, Flavour Perception.

Abstract

Hipertensi atau penyakit tekanan darah tinggi adalah suatu gangguan pada pembuluh darah yang mengakibatkan suplai oksigen dan nutrisi, yang dibawa oleh darah, terhambat sampai ke jaringan tubuh yang membutuhkan.. Hipertensi erat kaitannya dengan pola makan yang salah. Hipertensi sering ditemukan di masyarakat dengan konsumsi lemak berlebih terutama lemak jenuh yang berasal dari hewani seperti daging-dagingan kususnya daging merah. Tujuan dari penelitian untuk mengetahui hubungan, tingkat konsumsi lemak hewani dengan kejadian hipertensi di Desa Banjarangkan, Kecamatan Banjarangkan, Kabupaten Klungkung. Jenis penelitian yang digunakan adalah observasional dengan rancangan cross sectional. Sampelpenelitian berusia 38 - 55 tahun sebanyak 63 orang yang diambil secara proporsional random sampling. Data yang dikumpulkan meliputi data, identitas sampel,  tingkat konsumsi lemak hewani, dan tekanan darah. Data diolah dan dianalisis secara univariat dan bivariat. Hasil penelitian menemukan sebanyak42,9 % mengalami hipertensi. Yang didapatkan dari kejadian hipertensi yaitu dari 63 sampel yang telah diteliti, dari 36 sampel dengan status tekanan darah normal, sebagian besar tingkat konsumsi lemak hewani sampel kurang yaitu sebanyak 23 sampel  (63,9%). Pada 27  sampel dengan status hipertensi seluruhnya (100,0%) tingkat konsumsi lemak hewani sampel tersebut tinggi. Dari uji koralasi product moment pearson yang dilakukan diperoleh nilai  p=0,001 yang artinya pada taraf signifikan 5%  ada hubungan tingkat konsumsi lemak hewani dengan kejadian hipertensi

Abstract

The food waste is the amount of food that is not consumed. The food waste in addition to causing inadequate nutritional needs of patients also causes wasted costs. The purpose of this study is to determine the factors that influence the occurrence of leftovers in inpatients at Bangli District Hospital. The type of research used was observational with a cross-sectional study design, and samples were taken by purposive sampling which was 30 samples. The type of data collected are data characteristic of the sample by interview using the identity form, and external factors by answering the questionnaire, food waste data with weighing methods, while hospital overview data, number of patients hospitalized, and number of nutritionists and waiters are taken from the data annual reports or records related to the required data. Data analysis uses frequency distribution tables and cross tables then be described descriptively. The results of this study indicate that the dominant internal factor influencing the occurrence of food waste is the gender 56.66%. While the external factors that predominantly influence the occurrence of food waste are food aroma 53.33%.Keywords: food waste, internal factor, external factor

Abstract

DASHAT merupakan kegiatan pemberdayaan masyarakat dalam upaya pemenuhan gizi seimbang bagi keluarga berisiko stunting yang memiliki calon pengantin, ibu hamil, ibu menyusui, baduta/balita stunting terutama dari keluarga kurang mampu. Kampung KB merupakan  satuan  wilayah  setingkat  RW, dusun atau setara yang memiliki kriteria tertentu dimana terdapat keterpaduan program KKBPK yang dilakukan secara sistemik dan sistematis. Kegiatan ini dilaksanakan di desa Penarungan Kabupaten Badung  merupakan salah satu Kampung KB dengan kualifikasi Paripurna/berkelanjutan,  dasar pemilihan Desa sebagai lokasi karena jumlah penduduk Usia Subur di desa Ini Cukup tinggi  sehingga perlu diberikan edukasi dan pendampingan dalam melaksanakan program DASHAT, karena Penduduk PUS kelak akan melahirkan generasi sehat penerus Bangsa. Tujuan untuk memberikan edukasi tentang stunting melalui dapur DASHAT. Kegiatan ini melibatkan 30 orang peserta yang terdiri dari kader Posyandu. KB dan remaja yang aktif dimasyarakat ,berlangsung dari bulan Juli sampai dengan Oktober 2023 Kegiatan yang dilaksanakan berupa edukasi Gizi dan Nutricooking klas makanan sehat. Antusias masyakat dalam mengikuti kegiatan ini sangat tinggi,  dengan hasil perbaikan pengetahuan  dari  awal sebelum edukasi ada 56,67 % dengan katagori kurang baik dengan nilai pengetahuan dibawah 60 dan setelah  edukasi, seluruh peserta 100 % memiliki pengetahuan baik dengan nilai diatas 80.

Abstract

In adolescent girls, the need for iron increases because they experience regular menstruation/menstruation which releases a certain amount of iron every month. The increase in the need for total blood volume is often not followed by adequate iron consumption, especially when entering adolescence, girls tend to want to have a slimmer body, so they often make various efforts, including going on a strict diet. Based on data from the 2022 Indonesian Nutritional Status Survey (SSGI), the prevalence of Stunting in Toddlers in Tabanan Regency is still above the prevalence of Stunting in Bali Province (8.0%) while Tabanan Regency is 8.2%. With the nutritional counseling that has been carried out, it has not been enough to increase knowledge and especially the attitudes of adolescents towards the risk factors for stunting, therefore the community service will conduct a Skills Improvement Training for Adolescent Posyandu Cadres in preventing Anemia and Stunting with Balanced Nutrition in Tunjuk Village, Tabanan District. The prioritized solution is to carry out Skills Improvement Training for Adolescent Posyandu Cadres in preventing Anemia and Stunting with Balanced Nutrition in Tunjuk Village, Tabanan District by providing training. The method used to achieve the objectives of this community service is to carry out training which is carried out for 2 days on 50 adolescent Posyandu Cadres. This community service activity was carried out in Tunjuk Village, Tabanan District, Tabanan Regency from July to October 2024. There was a significant increase in the knowledge, attitudes and skills of adolescent posyandu cadres in preventing anemia and Stunting with Balanced Nutrition.

Abstract

Based on the 2013 and 2018 Riskesdas, the prevalence of anemia in adolescents in Indonesia has increased from 18,4% to 32%. And there are 21,4% of young women forget to take iron tablets. The purpose of this study was to determine differences in knowledge and hemoglobin levels before and after giving nutrition education videos to female students of SMAN 1 Singaraja. The type of research used is quantitative research with a quasi-experimental design using the one-group pretest-posttest design method. The number of samples in this study were 61 female students. Using a nonparametric test, namely the Wilcoxon Test. The characteristics of the sample were 32 samples (51,6%) aged 16-20 years, while 30 samples (48,4%) aged 10-15 years. The results of data collection show that the average age of the sample is 16 years, where the average sample has a BMI of 20,18 kg/m2 which is a normal nutritional status. There was an increase in the average value of the sample's Hb level of 0,3 from 14,2 to 14,5. The knowledge of the sample experienced an increase in the average value of 6,7 from 71,2 to 77,9. Wilcoxon Test Results On the Hb level variable, the sig. 0,159 (sig. >α ; α = 0,05) so that there is no significant difference in the results of Hb levels between before and after the nutrition education intervention is given.In the knowledge variable, the sig value is obtained. 0,000 (sig. <α ; α = 0,05), where there is a difference in the results of knowledge between before and after the nutrition education intervention is given. Therefore nutrition education is needed in any media to maintain health and prevent anemia in female students

Abstract

Based on Riskesdas Bali based on occupational groups, data from Riskesdas in 2018, people in the employee profession experienced an increase in nutritional problems compared to 2013. The number of overweight people increased from 13.7% (2013) to 20.0% (2018), as well as with obesity increasing from 17.1% (2013) to 33.7% (2018). The World Health Organization (WHO) predicts that work stress will become a major threat to human health by 2020. The aim of this research is to determine the relationship between work stress and food consumption and the nutritional status of employees at Bhayangkara Hospital, Denpasar. The type of research used was Descriptive Analytical with a Cross Sectional survey method, with a sample size of 61 people, using the Chi-Square test. A total of 31 samples (50.8%) had normal nutritional status, with light work stress levels in 59 samples (96.7%). Most of the samples had energy consumption in the deficit category, 48 samples (78.7%), protein consumption in the adequate category, 26 samples (42.6%), fat consumption in the adequate category, 25 samples (41.0%) and carbohydrate consumption in the adequate category. deficit 57 samples (93.5%). There is no significant relationship between energy, protein, fat and carbohydrate consumption and work stress, shown by p 0.05. There was no significant relationship between energy, protein, fat and carbohydrate consumption and nutritional status, as shown by p 0.05.

Abstract

Indonesia is a country that is ranked 17th among 117 countries with nutritional problems with stunting, wasting and overweight (Kemenkes RI, 2016). Based on data from Basic Health Research (Riskesdas) in 2013, the prevalence of stunting in adolescents 16-18 years is 31.4% (7.5% very short and 23.9% short) (Health Research and Development Agency, 2013) and the results of monitoring status Nutrition (PSG) 2017 was obtained nationally by 37% stunting (6.6% very short and 30.4% short) and Bali Province 20.7% (1.5% very short and 19.2% short) (Directorate Public Nutrition, 2017).Based on the situation analysis that has been described, the identification of problems is made as follows: Measurement of anemia in adolescent girls in Sukawati sub-district found that from 50 targets examined, 14 targets (28%) were anemia and 36 targets (72%) were not anemia, Measurement of KEK in adolescents women in Sukawati sub-district found that out of 50 targets examined, 17 targets (34%) experienced KEK and 33 targets (66%) did not experience KEK and the level of knowledge about anemia and KEK most of the young women had less knowledge about anemia and KEK, namely 84% Fair 14% and good 2%The prioritized solutions are conducting training for adolescents on anemia, KEK and stunting, forming youth groups "Anti-Stunting Milineal Generation (GenMAS) and providing assistance to the GenMAS group.The method used to achieve this community service goal is to carry out training and form the Anti-Stunting Millennial Generation (GenMAS) group with training that has been carried out 2 times. This community service activity was carried out in Gianyar Subdistrict, Gianyar Regency in September 2020. The conclusion obtained was that before education, the level of good knowledge of young women in Gianyar District, Gianyar Regency about Stunting, Anemia and KEK was 32%, Providing education about Stunting, Anemia and KEK in preventing anemia and KEK in Gianyar District, Gianyar Regency has succeeded in increasing good knowledge to 52% and there are differences in the level of knowledge of young women in Gianyar District before and after education about Stunting, Anemia and KEKKeywords: Stunting, Anemia, Chronic Energy Deficiency, Adolescent     Girls

Abstract

Young women are susceptible to nutritional problems, one of which is anemia. The cause of anemia is the lack of consumption of macro and micronutrients, such as iron and zinc. The problem of anemia in adolescent girls will cause adverse effects such as causing babies born with low weight, stunting babies, and high prenatal mortality. The purpose of this study was to determine the relationship between zinc and iron consumption and hemoglobin levels in high school students Negeri 1 Gianyar. The type of data in this study is analytical using a cross sectional design. The population in this study was grade 11 and 12 students with a sample of 60 people selected by random sampling. Data on zinc and iron consumption were obtained using a 24-hour food recall questionnaire processed using the 2007 Nutri Survey program, and hemoglobin levels were obtained by digital multicheck method, namely with GCHb Easy Touch. Data were analyzed using bivariate analysis using the spearman rank test. The results showed the level of zinc and iron consumption was still lacking.  The average consumption of zinc and iron after the data was processed was zinc consumption which was 4.3 mg and iron consumption which was 3.95 mg. Consumption of zinc and iron is lower than the daily needs, namely zinc 9 mg and iron 15 mg. There was no significant association (p0.05) between zinc consumption and hemoglobin levels. TThere was no significant association (p0.05) between iron and hemoglobin levels in adolescent girls.

Abstract

Anemia is a condition in which there is a total shortage of red blood cells or hemoglobin levels less than normal or decreased levels of red blood cells/hemoglobin in the blood so that the body's physiological needs are not fulfilled (Nabilla dkk., 2022). This study aims to determine the consumption of iron inhibitors and enhancers in relation to anemia status in female students of SMAN 6 Denpasar Selatan. The type of research used was observational with a cross sectional design. The research sample was 62 class XI students at SMAN 6 South Denpasar. Data collection was carried out by taking hemoglobin levels in female female students and interviews using the SQ FFQ questionnaire on the consumption of iron inhibitors and enhancers. The data collected included data on anemia status, consumption of inhibitors and consumption of iron enhancers in female adolescents. To determine the relationship between anemia status and consumption of iron inhibitors and enhancers. Pearson's correlation analysis was carried out. Anemia categories are divided into 2, namely not anemia (≥12 g/dL) and anemia (12 g/dL). Based on the research, out of 62 samples, there were 48 female students who were not anemic and 14 female students who were anemic.  The lowest hemoglobin level was 9.1 g/dL, the highest was 17.8 g/dL, the average was 15 g/dL. Consumption of tea (96.7%) and spinach (100.0%), and consumption of oranges (100.0%) and chicken meat (100.0%) in the last 1 month. The results showed that there was a relationship between consumption of iron inhibitors and anemia status in young women (p-value = 0.034). For the analysis test results of consumption of iron enhancers with anemia status in young women showed a relationship (p-value = 0.000).
