Abstract

Serangkaian penelitian dilaksanakan untuk menganalisis kelembagaan pembibitan sapi Madura di Pulau Madura dan sebagai rekomendasi skenario perbaikan sumber daya genetiknya. Penelitian dilaksanakan di Pulau Sapudi Kabupaten Sumenep dan di wilayah sentra sapi sonok Kabupaten Pamekasan dengan metode observasi. Data dianalisis dengan menggunakan analisis deskriptif dan uji t. Hasil penelitian menunjukkan bahwa pembibitan sapi madura di Pulau Madura sangat ditentukan oleh pelestarian plasma nutfah sapi madura di Pulau Sapudi dan pemanfaatan sumberdaya genetik sapi madura di wilayah sentra sapi sonok. Kondisi yang melingkupi pembibitan di Pulau Sapudi adalah ketersediaan jumlah sapi pejantan kurang, masih ditemukan sapi PO dan persilangannya dan minimnya ketersediaan pakan pada musim kemarau. Performan sapi Madura di sentra sapi sonok tergolong unggul, sapi pejantan di wilayah ini sangat nyata lebih tinggi ukuran linier permukaan tubuhnya dibandingkan pejantan di Pulau Sapudi. Oleh karena itu untuk menjaga kesinambungan populasi sapi Madura, sebaiknya perlu perluasan wilayah sumberdaya genetik sapi madura khususnya di wilayah sentra sapi sonok. Abstract

ASBTRAKKarkas merupakan bagian dari ternak yang telah disembelih yang terdiri dari daging dan tulang, tanpa kepala, kaki, kulit dan jeroan. Berat karkas yang diperoleh sangat dipengaruhi oleh perlakuan ternak sebelum dipotong.  Penelitian ini bertujuan untuk mengetahui hubungan bobot hidup terhadap bobot karkas, rasio karkas sapi madura terhadap bobot hidupnya, dan memperoleh formulasi pendugaan bobot karkas berdasarkan bobot hidup. Penelitian dilaksanakan di Kecamatan Waru Kabupaten Pamekasan dengan menggunakan 50 ekor sapi yang dipotong di tempat pemotongan tersebut. Metode penelitian menggunakan metode observasi. Variabel yang diukur pada penelitian ini meliputi bobot hidup dan bobot karkas sapi madura. Teknik pengambilan data dilakukan dengan cara menimbang sapi yang akan menjadi sampel untuk memperoleh bobot hidup. Data dianalisis dengan menggunakan analisis persamaan regresi linier dan korelasi dengan menggunakan microsoft excel for Windows 2010. Hasil penelitian menunjukkan bahwa bobot hidup memiliki hubungan yang erat dengan bobot karkasnya dengan nilai koefisien determinasi sebesar 0.889 dan persamaan regresi linier y = 0,4716x + 12,295 dengan bobot karkas mencapai 143,0 kg (52,14%) dengan bobot hidup rata-rata 275 kg.  Bobot hidup dapat digunakan untuk memprediksi bobot karkas pada sapi Madura.Kata Kunci:  bobot karkas, bobot hidup, estimasi, sapi madura  ABSTRACTThe carcass is part of cattle that have been slaughtered consisting of meat and bones, without head, legs, skin, and viscera. The carcass weight obtained is strongly influenced by the treatment of livestock before slaughter. This study aims to determine the relationship of life weight to carcass weight, the ratio of the carcass to live weight, and to obtain a formulation of carcass weight estimation based on the life weight of madura cattle. The study was conducted in Waru District Pamekasan Regency using 50 madura cattle. The survey method was used in this study. The variables measured in this study include life weight and carcass weight of Madura cattle. For data collection, cattle were weighed to obtain life weight.  Data were analyzed using linear regression equations and correlations using the Microsoft Excel for Windows 2010.  The results showed that life weight had a close relation with carcass weight with a coefficient of determination of 0.889 and linear regression equation y = 0.4716x + 12.295 on carcass weight reached 143.0 kg (52.14%) with an average body weight of 275. Live weight can be used to predict carcass weight in Madura cattle.Keywords: carcass weight, estimation, life weight, madura cattle

Abstract

The Sonok cattle culture also supports the development of culture-based tourism while maintaining local values and social harmony, and can boost the local economy. One of the obstacles to the development of the Sonok cattle culture is that Sonok cattle breeding is still limited to certain areas in Madura, due to the limited market for Sonok cattle, which is still conventional in nature. This study aims to obtain clear data on the quantitative characteristics of Madura Sonok cattle and to improve the marketing of Madura Sonok cattle. To support the development of the local Sonok cattle culture and increase the marketing of Sonok cattle through digital markets. This research was conducted from July 2025 in the Sonok cattle breeding area in Pamekasan Regency, Madura. Research methods The methods used in this research were direct surveys at the contest site or at the homes of cattle owners, as well as interviews with Sonok cattle owners, judges, and Sonok cattle experts. Research Results Sonok cattle were divided into two age groups, namely 12-18 months and above 24 months, with the following results for body length, height, and chest circumference (cm): 124.82 ±4.28; 124.64 ± 3.14; 148.73 ±10.39 and 137.71 ±5.06; 137.26 ±4.74; 174.13 ±9.97. Meanwhile, the biggest obstacles and threats to the development of the Madura Sonok cattle breed in Pamekasan Regency are related to the limited availability of specialised capital and conventional trading venues (markets). The conclusion of this study is that the average body size of Sonok cattle exceeds the 2023 SNI standard, and marketing breakthroughs are needed through digital markets.

Abstract

This study aims to understand the meaning, role, and potential of tangghe cow racing tradition in Madura as a cultural tourist attraction as well as economic opportunities based on local wisdom. The research approach used is qualitative with case study design that focuses on Langsar Village, Saronggi District, Sumenep regency. Data were obtained through in-depth interviews, participatory observations, and documentation, and analyzed using Miles and Huberman interactive models through the stages of data reduction, data presentation, and verification. The results showed that the bull race tangghe ' is not only seen as a race, but also as a symbol of identity and pride of the Madurese community. This tradition has a considerable tourist attraction because it attracts audiences from various regions, so it has the potential to be developed as a leading cultural tourist attraction. In addition, tangghe’ bull race has a positive economic impact on the community through trading activities, services, and rental of cattle and race equipment. Local wisdom values such as mutual cooperation, solidarity, and village Honor are maintained in the practice of this tradition. However, there are challenges in the form of stigma of violence in traditional Bull Racing, which can be minimized by promoting the tangghe’ model as a revitalization of non-violent culture. This study concludes that karapan sapi tangghe’ can be developed as a sustainable cultural tourism that is aligned with ethical values, religious norms, and animal welfare, while contributing to the improvement of the local economy.
