Abstract

Penelitian ini bertujuan untuk mempelajari kemampuan antimikroba bubuk biji kepayang sebagai pengawet alami cuko pempek untuk  meningkatkan umur simpan hingga 12 hari penyimpanan. Metode yang digunakan yaitu RAK non faktorial dengan enam taraf perlakuan yaitu penambahan bubuk biji kepayang 0% (B0), 1% (B1), 2% (B2), 3% (B3), 4% (B4), dan 5% (B5) dengan 3 replikasi. Parameter yang diamati yaitu total asam, pH, Total Plate Count (TPC), uji organoleptik aroma dan rasa. Total asam cuko pempek tertinggi sebelum penyimpanan adalah B5 yaitu 0,604%, diikuti oleh B4, B3, B2 B1 dan B0 secara berurutan yaitu 0,602 %, 0,600 %, 0,599%, 0,598 % dan 0,596 %. Setelah 12 hari penyimpanan, total asam tertinggi terdapat pada B0 yaitu 1,427 sedangkan total asam terendah pada B3 yaitu 0,805 %. Sebelum penyimpanan, nilai pH terendah terdapat pada B5 yaitu 4,80 dan pH tertinggi terdapat pada B0 yaitu 4,92. Setelah 12 hari penyimpanan, pH terendah terdapat pada B0 yaitu 3,10  dan tertinggi pada B3 yaitu 4,63. TPC tertinggi terdapat pada B0 yaitu 2,6 x 102 CFU/mL setelah 12 hari penyimpanan sedangkan TPC terendah terdapat pada B3 yaitu 9,0 x 10 CFU/mL. Setelah 12 hari penyimpanan aroma dan rasa cuko perlakuan B3 paling disukai oleh panelis dengan skor 4,05 dan 4,25. Aroma dan rasa paling tidak disukai panelis terdapat pada B0 dengan skor yang sama yaitu 2,45. Penambahan bubuk biji kepayang 3% (B3) pada cuko pempek efektif menghambat pertumbuhan mikroba kontaminan selama 12 hari penyimpanan dan paling disukai oleh panelis dari segi aroma dan rasa.

Abstract

Kopi bubuk merupakan produk industry kecil yang banyak ditemukan di pasar dan dikonsumsi oleh sebagian besar masyarakat. Umumnya kopi bubuk dijual dalam kemasan plastic tanpa disertai dengan informasi masa simpan/masa kedaluarsa. Penelitian ini bertujuan untuk mempelajari perubahan mutu dan masa kopi bubuk dalam kemasan dari sisi kontaminasi mikrobiologi. Penelitian ini disusun menggunakan rancangan acak lengkap yang disusun secara factorial. Faktor pertama adalah jenis kemasan yang terdiri dari kemasan berbahan ALP dan kemasan berbahan PET. Faktor kedua adalah waktu simpan yang terdiri dari 0,2,4,6,dan 8 bulan. Perubahan kontaminasi mikrobiologi dilakukan melalui pengamatan angka lempeng total dan cemaran kapang/khamir menggunakan metode SNI. Hasil pengamatan menunjukkan bahwa terjadi penurunan angka lempeng total dan cemaran kapang/khamir pada kopi bubuk selama penyimpanan. Kemasan berbahan ALP memberikan perlindungan terhadap cemaran mikroba yang lebih baik  dibandingkan PET.

Abstract

A study on the effect of ozone concentration on the microbial contamination on the bottled drinking water has been done. The objective was to get the optimum concentration of ozone in disinfection in the bottled drinking water production. The treatment was concentrating ozone in mixing tank 0.1 ppm; 0.2 ppm; 0.3 ppm; 0.4 ppm; 0.5 ppm and 0.6 ppm. Experiment were done for two bottled drinking water producers in Palembang, and Bengkulu. Treated Samples were sent to accredited laboratory to be tested for Total plate count, coliform and salmonella by using SNI 01-2897-1992 test method for microbiological contamination.Test results showed that drinking water which were treated with ozone concentration below 0.3 ppm still contain Total plate count more than 102 CFU,while those were treated with ozone concentration 0.3 ppm and more comply to requirement for Total plate count according to SNI 01-3551-2006 (Indonesia National Standard for bottled drinking water) for line production where the Total Plate count less than 100 CFU. All untreated samples do not contain salmonella. Test result for Coliform showed that all treated samples have coliform less then 2 colonies. This mean that all treated samples comply to the requirement of to SNI 03-3551-2006 (Indonesia National Standard for bottled drinking water) for Coliform and salmonella.Keywords: The bottled drinking water, ozone, SK 705/MPP/Kep/2003, disinfection AbstrakPenelitian ini bertujuan untuk mendapatkan konsentrasi ozon yang optimum pada proses disinfeksi air minum dalam kemasan. Percobaan dilakukan pada dua pabrik air minum dalam kemasan di Palembang dan Bengkulu. Perlakuan yang diberikan adalah konsentrasi ozon pada tangki pencampur masing masing 0,1 ppm; 0,2 ppm; 0,3 ppm; 0,4 ppm; 0,5 ppm dan 0,6 ppm. Terhadap contoh hasil perlakuan dilakukan pengujian Angka Lempeng Total (ALT), coliform dan Salmonella menggunakan SNI 01-2897-1992 cara Uji Mikroba pada laboratorium terakreditasi. Hasil pengujian menunjukkan bahwa air minum dalam kemasan hasil perlakuan dengan kadar ozon kurang dari 0,3 ppm masih mengandung ALT lebih dari 100 CFU. Sedangkan air minum dalam kemasan hasil perlakuan dengan kadar ozon 0,3 ppm atau lebih memenuhi persyaratan ALT menurut SNI 01-3553-2006 untuk lini produksi, dimana ALT <100 CFU. Semua contoh air baku tidak mengandung Salmonella. Hasil pengujian terhadap Coliform menunjukkan bahwa semua contoh hasil perlakuan mengandung coliform < 2 koloni. Ini berarti bahwa semua contoh hasil perlakuan memenuhi persyaratan SNI 01-3553-2006 untuk coliform dan salmonella.Kata Kunci: Air Minum Dalam Kemasan, Ozon, SK 705/MPP/Kep/2003, Disinfeksi

Abstract

This study aims to determine the physical, chemical and organoleptic quality of pempek from various comparisons of mocaf with tapioca. The study was conducted using a non-factorial randomized block design with five levels of treatment, namely M0 (0% mocaf and 100% tapioca), M1 (25% mocaf and 75% tapioca), M2 (50% mocaf  and 50% tapioca), M3 (75% mocaf  and 25% tapioca), and M4 (100% mocaf  and 0% tapioca), with four repeated. The research data were analyzed by ANOVA and further test with a real difference honestly. The results showed that the higher the percentage of mocaf used, the higher the protein and fiber content. The highest protein and fiber content were 9.15 % and 1.88% respectively in the M4 treatment with a score of 4 color, aroma, taste values (preferred by panelists) and the best level of elasticity. Based on the results of the study, it was concluded that the higher the substitution of mocaf flour, the higher the protein content and fiber content, but the highest preference values for the hedonic test of color, taste, aroma and elasticity test resulted in the lowest substitution of mocaf flour M1 (25% moca and 75% tapioca).

Abstract

This study aims to explore the impact of using Tinkercad and digital measuring tools in basic electronics training for physics students. The training involved 60 students who were given the opportunity to design and test electronic circuits using Tinkercad as a simulation platform and digital measuring tools to measure key parameters in electronics. The analysis of surveys and practical tests showed a significant improvement in students' technical skills, particularly in designing electronic circuits and using digital measuring tools such as multimeters to measure voltage and current. Students' perceptions of the ease of use of Tinkercad and the benefits of digital measuring tools were highly positive, with an average score of 82% for most of the evaluated aspects. These findings support previous research showing that technology-based learning can enhance conceptual understanding and practical skills in electronics education. Overall, the study emphasizes that the integration of digital technologies, such as Tinkercad and digital measuring tools, can make a significant contribution to improving the quality of electronics education and equip students with relevant skills to face challenges in the industrial world.

Abstract

This research aims to determine the influence of good corporate governance, capital intensity, and political connections on tax avoidance. The population of this research involves banking companies listed on the Indonesia Stock Exchange (BEI) during the 2019-2023 period. The type of research applied is quantitative research with an associative approach. The data used in this research is secondary data. Samples were selected using a purposive sampling method, and from this method 140 data samples were obtained. The analytical method used is multiple linear regression with panel data, with data processing carried out using the Eviews 13 program. The results of this research show that good corporate governance, capital intensity and political connections simultaneously have a positive effect on tax avoidance. However, partially, the results show that good corporate governance as measured through the proxies of the independent board of commissioners and audit committee has no effect on tax avoidance. Furthermore, capital intensity and political connections partially have a positive effect on tax avoidance.

Abstract

Students must possess fundamental mathematical abilities to comprehend and utilize the complex mathematical models that are integral to the understanding of physical concepts. The objective of this study is to analyze the basic mathematical skills of the incoming class of 2023 students enrolled in the Physics Education Study Program at FMIPA UNM, with particular attention to the ongoing impact of the global pandemic. A descriptive quantitative approach was employed with a total of 93 research subjects. The data were collected via multiple-choice tests covering five principal areas: series and numbers, algebra, geometry, group data analysis, and mathematical modeling. The results of the study indicated that the mean student score was 11.27 out of a maximum score of 25, which is indicative of a low ability category. 89.02% of students exhibited a lack of proficiency, with only one individual scoring above 16 points. This low ability presents a significant challenge to learning physics, which requires a firm grasp of mathematical concepts to fully comprehend topics such as mechanics, optics, and thermodynamics. Factors such as the suboptimal quality of mathematics instruction at the high school level and student selection methods that are not tailored to the specific demands of the study program contribute to this outcome. This study proposes the implementation of remedial mathematics programs and curriculum enhancements to enhance the fundamental mathematical competencies of physics students.
