Abstract

This study aims to determine the antimicrobial activity produced by lactic acid bacteria isolated from breast milk (ASI) against pathogenic bacteria Vibrio cholerae. The research design used in this study is the experimental method with 3 treatments, antimicrobial activity FCS (Free Cell Supernatant), FCSN (Free Cell Supernatant Neutral), and FCSHN (Free Cell Supernatants were Heated Neutral). The variables measured were the formation of inhibition zones produced by the presence of the antimicrobial activity of 9 isolates of LAB against pathogenic bacteria Vibrio cholerae. Data were presented in tables and figure and descriptive discussed. The results showed that the inhibitory activity against pathogenic bacteria Vibrio cholerae on FCS to isolate the A1, A3, A6, and B10b each produce inhibition diameter is 2.35 mm, 2.95 mm, 2.75 mm and 1.90 mm. the treatment FCSN inhibitory activity shown by A1 isolates diameter is 1.40 mm inhibition, and isolates A6 inhibition diameter is 1.00 mm. whereas the inhibitory activity on FCSHN treatment indicated by A1 isolates inhibition diameter is 0.40 mm.

Abstract

This study aims to determine the effect of hanjeli flour and dried snake fruit to the characteristics of snack bar produced and the right ratio of hanjeli flour and dried snake fruit that is able to produce snack bar with the best characteristics. The Completely Randomized Design was used in the research with treatment that is the ratio of hanjeli flour and dried snake fruit which consist of 5 levels: 90%:10%; 80%:20%; 70%:30%; 60%:40%; 50%:50%. The treatment was repeated 3 times to obtain 15 units of experiment. The data obtained were analyzed by variance and if the treatment had an effect on the observed variable then continued with Duncan test. The result showed that hanjeli flour and dried snake fruit had a significant effect on water content, ash content, fat content, protein content, carbohydrate content, coarse fiber content, hardness, color (hedonic), aroma (hedonic), texture (hedonic and scoring), taste (hedonic) and overall acceptance (hedonic). Comparison of 50% hanjeli flour : 50% dried snake fruit produces snack bar with the best characteristics, namely: water content 18.43%, ash content 1,82%, fat content 16.63%, protein content 7.84%, carbohydrate content 55.29%, crude fiber content 3,14%, calori total 402,10 kcal, color liked, aroma very liked, texture little crumbly and liked, taste liked and overall acceptance liked.

Abstract

This study was aimed to determine the effect of ginkgo nut powder comparison with dried pineapple to the characteristics of snack bar and the exact comparison between ginkgo nut powder with dried pineapple that was able to produce snack bar with the best characteristics.The experimental design used was Completely Randomized Design with the treatment composition of ginkgo nut powder and dried pineapple consisting of 5 levels: 70%:30%; 60%:40%; 50%:50%; 40%:60% and 30%:70%. The treatment was repeated 3 times to obtain 15 units of experiment. The obtained data was analyzed by ANOVA and if the treatment had significant effect on the observed variables then continued with Duncan,s Multiple Range Test (DMRT). The comparison of ginkgo nut powder and dried pineapple fruit significantly affected water content, ash content, fat content, protein content, carbohydrate content, total calories, antioxidant activity, color (hedonic test), aroma (hedonic test), texture (hedonic and scoring test), taste (hedonic test) and overall acceptance (hedonic test) of the snack bar. Comparison of 30% ginkgo nut powder: 70% dried pineapple had the best characteristic of snack bar with criteria water content 15.23 %, ash content 3.08 %, fat content 18.90 %, protein content 3.84 %, carbohydrate content 58.92 %, total calories 421.26 kkal, antioxidant activity 66.74 %, color was normal, aroma was normal, taste was normal, overall acceptance was moderately liked and texture was a bit hard and normal.

Abstract

This study aimed to determine the effect of the ratio of chicken meat and red bean sprouts flour to the characteristics of the meatballs and to determine the appropriate ratio of chicken meat and red bean sprouts flour to get the best meatball characteristic. Thisstudyused the completely randomized design, with ratio of chicken meat and red bean sprout flour treatmen consisted 5 level,namely (B0) 100% : 10%, (B1) 90% : 10%, (B2) 80% : 20%, (B3) 70% : 30%, (B4) 60% : 40%. Each treatment was repeated 3 times, in order to obtain 15 experimental units. The data obtained were using analysis of varianceandif thetreatmenthada significanteffect,itwascontinuedwiththe DuncanMultiple Range Test.The results showed that the ratio of chicken meat and red bean sprouts flour had an effect on moisture content, fat content, crude fiber content, texture, hedonic, aroma, taste, texture, and overall acceptance. And scoring on color, taste, and texture. The meatball with a ratio of chicken meat and red bean sprout flour of 90%: 10% was the best meatball characteristics with the criteria: water content of 68.86%, protein content of 23.22%, fat content of 8.03%, crude fiber content of 32.35 %, texture 6.63 N, color sensory test, aroma, taste, texture, and overall acceptance are liked.

Abstract

The aim of this research was to determine the content of flavonoid and antibacterial activity of ethanol extract of sintrong leaf (Crassocephalum crepidiodes) on Bacillus cereus. This research used a Completely Randomized Design (CRD) with treatment concentrations extract which were 20%, 40%, 60%, 80%, and 100% with three replications and resulting in 15 experimental units. Data were presented with tables and pictures and analyzed in descriptive statistic. Ethanol extract of sintrong leaf contained flavonoid compounds of 1,75% and was able to inhibit the growth of Bacillus cereus at a concentration of 20% with an average 12,3 mm and strong inhibition categories, also has a bacteriostatic character with percentage range death of Bacillus cereus 80,9% - 93,7%. Abstract

The objective of this research was to observe the effect of grape skin waste on the characteristic of jelly drink and to determine the appropiate treatment that produces jelly drink with the best characteristics. Data was analyzed using completely randomized design (CRD) with five levels such as 100g of grape skin waste, 200g of grape skin waste, 300g of grape skin waste, 400g of grape skin waste, and 500g of grape skin waste. Data were analyzed with analysis of variance and continued with Duncan’s Multiple Range Test. The result showed that the effect of each treatment gave significant effect to total phenol, vitamin C, anthocyanin, antioxidant activity and gave significant effect to characteristic of color, aroma, taste, and overall acceptance. The best treatment to produce jelly drink was 500g of grape skin waste, that gave average value total phenol 83.64 mg GAE/100g, vitamin C 35.92 mg/100g, anthocyanin 3.90 mg/100g, IC50 3872.36 ppm, color dark purple, aroma very typical grape, and texture slightly chewy, taste and overall acceptance was liked.

Abstract

The research aim to determine the effect of ratio purple sweet potato flour and soybean flour on characteristics functional flakes and determine the exact ratio of purple sweet potato flour and soybean flour which can produce functional flakes with the best characteristics. The Completed Randomized Design was used in this research consisting ratio of purple sweet potato flour and soybean flour including (P1) 90% : 10%, (P2) 80% : 20%, (P3) 70% : 30%, (P4) 60% : 40%, (P5) 50% : 50%. The data obtained were analyzed by variance and if the treatment had significant effect followed by Duncan Multiple Range Test (DMRT). The result showed that flakes with comparison of 70% purple sweet potato flour and 30% soybean flour is the best treatments with criteria moisture content of 3.05%, ash content of 2.09%, protein content of 17.04%, crude fiber 3.76%, anthocyanin total 21.07 mg/100g, antioxidant activity 39.55%, water absorption 165.66% and color is purple and like, aroma is like, texture is crispy and like, taste is like and overall acceptance is like.

Abstract

This study aims to determine the effect ratio of semolina and black rice flour to the characteristics of wet fettucine paste and to know the right ratio for semolina and black rice flour to produce wet fettucine paste with the best characteristics. This study used a Completely Randomized Design (RAL) with a comparison treatment of semolina and black rice flour : 100% : 0%; 90% : 10%; 80% : 20%; 70% : 30%; 60% : 40%; and 50% : 50%. The treatment was repeated 3 times to obtain 18 units of the experiment. The data obtained were analyzed by variance and if there was influence between treatments followed by Duncan test. The results showed that the use of semolina and black rice flour had significant effect on water content, ash content, antioxidant capacity, total anthocyanin, flavor, taste, texture, and overall acceptance of wet fettucine pasta. Ratio of 50% semolina and 50% black rice flour had the best characteristics with 56,49% water content, 0.69% ash content, 2.26 mg/100g total anthocyanin, 23.02% antioxidant capacity, color purplish black and ordinary, texture rather supple and rather liked, flavor rather liked, taste rather liked and overall acceptance ordinary.

This study aims to determine the effect of cowpea sprout paste and seaweed paste to the characteristics of analogue cowpea sausage, and to know the right ratio of cowpea sprout paste and seaweed paste on the characteristics of analogue cowpea sausage. The experimental design used was completely randomized design with the treatment ratio of cowpea sprout paste and seaweed paste, which consists of 5 levels such as: 90% cowpea sprout paste : 10% seaweed paste, 80% cowpea sprout paste : 20% seaweed paste, 70% cowpea sprout paste : 30% seaweed paste, 60% cowpea sprout paste : 40% seaweed paste, and 50% cowpea sprout paste: 50% seaweed paste. The treatment was repeated 3 times to obtain 15 units of experiments. The data were analyzed by variance analysis and if the treatment had a significant effect then continued with DMRT (Duncan Multiple Range Test). The results showed that cowpea sprout paste and seaweed paste ratio had a significant effect on water content, protein content, fat content, carbohydrate content, coarse fiber content, elasticity, taste (hedonic), texture (hedonic and scoring) and overall acceptance (hedonic). Comparison of 50% cowpea sprout paste and 50% seaweed paste had the best characteristics analogue cowpea sausage, with 69,88% water content, 2,16% ash content, 3,77% protein content, 2,92% fat content, 21,27% carbohydrate content, 1,50% coarse fiber content, elasticity 6,65 N, color and aroma rather liked, texture chewy and liked, taste and overall acceptance liked.

Abstract

This study aims to determine of various carrageenan concentrations that affect the characteristics from fruit leather of red dragon fruit peel and find out the exact carrageenan concentration to produce fruit leather of red dragon fruit peel with the best characteristics. The experiment used Completely Randomized Design (RAL) with 5 levels of carrageenan concentration treatment ie 0 ; 0.3% ; 0.6% ; 0.9% ; 1.2% of 100 g of red dragon fruit peel. Each treatment was repeated 3 times to obtain 15 units of experiment. The resulting data is then analyzed using anova, and if there is significant effect of the treatment on the observed parameters, then it will be followed by Duncan test.The results showed that the addition of carrageenan treatment had a significant effect on the water content, crude fiber, tensile strength, color, texture. The best treatment was obtained at the treatment of 1,2% of carrageenan with water content of 10.41%, crude fiber 7.02%, antioxidant capacity 0.74%, total sugar 54.24%, tensile strength 2.19 MPa, Sensory evaluation with scores and hedonic test is color very red and liked, texture is chewy and rather liked, aroma and flavor rather liked, overall acceptance liked.
