Abstract

Chicken meat is poultry meat has high nutritional value. Meat chickens are easily damagedby physical impact or microbial activity, requiring precise handling that chicken can bestored longer. Ensuring the quality and safety of chicken meat plays an important role forthe safety and health of consumers. Chain of technical, operational and management affectthe quality of meat produced. Microbiological contaminants is one cause of reduced qualityof chicken meat even be unsafe for consumption. Microbial contamination or spoilagepathogens causing protein degradation is the breakdown of proteins into simpler moleculessuch as amino acids that causes cells to become damaged or rotten meat.Research carried on in the laboratory of Food Microbiology Department of Nutritionpolytechnic Kemenkes Manado, June to September 2012. Design research is anexperimental laboratory with organoleptic and microbiological tests.The results showed that lettuce effective solution to inhibit microbial growth in chicken meatspoilage or damage. However, in contrast to organoleptic tests where the results indicatethe presence of irregularities in terms of aroma, color and texture. It can be concluded thatan effective solution to a long fermentation lettuce shelf life, but are less effectivepreservative used as an alternative in terms of color, flavor and texture of chicken meat. Asa suggestion this research can still be continued in other foodstuffs that require alternativenatural preservative.

Abstract

Background. Anemia is one health problem worldwide and has a high prevalence in variouscountries around the world. Young women were among those prone to suffer from anemiabecause of menstruation each month and is in its infancy. Anemia most often caused by anemiadeficiency anemia besi.Prevalensi sizeable adolescent girls in adolescence occurs due to rapidgrowth ( growth spurt). The prevalence of anemia in adolescents in North Sulawesi by 3% and thenational average rate of 12.8 % .Research Purpose. This study aims to determine the intake of macro-nutrients ( P, L and KH ) ,iron ( Fe ) and zinc with the incidence of anemia in adolescents aged 12-14 yearsTypes of research.This research is a descriptive survey research crossectional.Populasi in thisstudy were all students of class VIII SMP Negeri 3 Manado totaling 418 students , the samplestaken a number of 41 students were female and willing to become respondents , a sample isobtained using a systematic technique random sampling .Research result. Average protein intake of 69.59 g ( 100.86 % ) good , fat intake of 36.23 g ( 51.02% ) enough , Carbohydrate intake 282.51 g ( 96.75 % ) good , iron intake 5 , 09 mg ( 19.75 % ) isvery low and zinc intake of 6.61 mg ( 41.43 % ) is very low . The conclusion of the 41 respondents, 15 respondents suffer from mild anemia and 26 respondents did not suffer from anemia .

Abstract

Infants under five years old (Toddlers) is one of the goals posyandu quite important, becausea toddler is a sizeable proportion of the composition of the population of Indonesia, so theanalysis of the factors that encourage mothers to visit keposyandu needs to be done (MOH,RI 2007) .Ibu which do not weigh their babies to Posyandu terpantaunya can cause growthand development of infants. Toddlers are not weighed consecutive nutritional risk situationdeteriorated so impaired growth (MOH, 2006). The purpose of this study to determine thefactors associated with the level of participation of the community to visit keposyandu, in thevillage Lahendong South Tomohon sub districtThis research is a survey research with descriptive approach. Number of samples 45 people,the study was conducted in South Tomohon sub district KelurahanLahendong for 1 week.Respondents in this study were mothers with young children and mothers who are willing tobecome respondents, data collection in this study by using a questionnaire. The resultsshowed the majority of toddlers rarely below to Posyandu, that there are as many (75.6%)infants were not under posyandu faithful bbulan. Factors influencing that there is one factorage, maternal age, maternal education, and the role of cadres Posyandu distance. Based onthe research results also in the know that of all five factors that most influence on people'sparticipation, namely age, maternal age, and distance posyandu.

Abstract

Malnutrition in developing countries ( 47-50 % ) is higher as compared to developedcountries is 20-46 % . Some research results reinforce that opinion , where theprevalence of malnutrition in patients new entry in Latin America shows 50.2 points and3 major hospitals in Indonesia ( Sardjito hospital Yogyakarta , Sanglah hospital Bali,Jamil hospital Padang) reported 56.9 % .The results showed a significant increase in albumin levels in patients who receivedpostoperative dietary extra filtrate cork fish . Increase in serum albumin was also noadverse effect to the increase in blood triglycerides . As research results Suprayitno et al. (2003 ) , showed that administration of filtrate cork fish can increase levels of serumalbumin and a new wound healing scar . A set of case studies , providing extrainformation that the administration menu filtrate cork fish was positively correlated withincreased levels of albumin and wound healing process . Increased levels of albumin ,patients who have an extra menu filtrate cork fish are relatively higher than white eggs.The problems of the study is how the effectiveness of catfish protein in patients withhypoalbuminemia indication . Benefits of this research include: to provide a newalternative in the management of diet especially in patients with hypoalbuminemiaindication .This research uses a quasi-experimental design of pre and post test , this study willprovide an overview of the effectiveness of cork fish protein in patients withhypoalbuminemia indication . The experiment was conducted in the department of Prof. .Dr. . R.D. Kandou Manado in July - September 2013 . The population in this study wereall patients with hypoalbuminemia indications shown by the results of laboratory tests .Of the subjects in this study 16 patients with criteria for men and women , cooperative ,and approved informed consent and the approval of the hospital and ethics committeethe Ministry of Health polytechnic Manado . Subjects using the technique of determiningsubjective instrument global assessment ( SGA ).Processing and data analysis using univariate analysis to determine thecharacteristics of the frequency distribution of the variable . Bivariate test by using apaired t - test . Then followed by a multivariate analysis using linear regression .Theresults are significant differences in albumin before and albumin after intervention with -average increase of 0.31 mg / dl . Multivariate test variables explained that the effect ofthe intake of energy , protein , fat and duration of cork fish nuggets on levels of albuminby 60 % , the rest is influenced by other variables not amined .Conclusion there are differences in initial levels of albumin and albumin levels after theend of the intervention, and no catfish nugget effect of the increase in albumin levels ofpatients with hypoalbuminemia

Abstract

Toddler group is showing rapid growth of the body, so it requires nutrients that every high Kgweight. Children this age group it is most often suffer from a lack of nutrition CTF. Based onthe data reports Pusomaen PHC in November 2014, the number of infants were detectedbelow the red line (BGM) of 20 children (8.62%).The study was observational and descriptive in order to determine the diet, nutrient intake andnutritional status of children under five (BGM) in the coastal village Tatengesan and Makalu.The research was conducted in May in the health Pusomaen the number of samples 15children. Diet using FFQ and nutrient intake using a food recall 2x24 hours.The results showed consumption of rice to eat (86.7%), fish and eggs (66.7%), out (66.7%),green vegetables (13.3%), bananas (46.7%). For rice mixed with salt and palm oil and sugaras a drink, often consumed. Frequency of eating 3 times a day with the type or sususnan mealconsists of a staple food such as rice, fish, vegetables and fruit. On average nutrient intake ofchildren below the red line (BGM) is: 633.7 kcal of energy, protein 21.05 grams, 18 grams offat and carbohydrate grams 112.55. These results indicate a lack of nutrient intake in childrenunder five.

Abstract

In Indonesia, many people who have irregular eating patterns that lead to various diseases anddisorders of the body such as hypertension, renal, uric acid and others. This study aims to finda diet that includes the type, frequency and amount of food as well as the adequacy of nutrientshypertensive patients with chronic renal failure hospitalization in RSUP.Prof.dr.RD KandouManado.This research uses descriptive survey research with cross sectional study, conducted inJanuary 2015 in Manado Prof.dr.RDKandou BLU Hospital. The sample in this study arepatients with hypertensive chronic renal failure who are hospitalized in the department BLUProf.dr.RDKandou Manado amounting to 5 people.The results showed that the respondents who consume food items animal side dish is fish,chicken and beef, nuts and processed products are consumed tofu, tempeh, peanuts andgreen beans, the type of vegetables consumed are beans, long beans , and kale while for thetype of fruit that is consumed is the papaya and pisang.Empat respondents (80%) has afrequency of eating 3 times a day ie breakfast, lunch and dinner with a frequency of snack 2x aday and a snack respondent has a frequency of> 3 times a day. The fifth respondent portions ofthe staple diet of 200 grams, 100 grams of animal dishes, vegetable dishes 100 grams, 100grams of vegetables and fruits number of servings consumed as much as 100 grams. Threerespondents have the more energy sufficiency level (> 100%) and two of the respondents havethe kind of energy sufficiency level (90-100%). Five respondents have sufficient levels ofprotein (> 100%). Sufficient levels of fat or less three respondents (70-80%), the respondentsufficiency level of good fats (90-100%) and the respondents' level of adequacy moderate (80-90%). The level of carbohydrate (> 100%) of two of the respondents, two respondents have thesufficient levels of good carbohydrates (90-100%), and one respondent had sufficient levels ofmoderate (80-90%)

Abstract

School age children often skip breakfast for various reasons eg to rush off to school. Children whodo not eat breakfast, less task that requires concentration in class, often have values lower examresults, have limited memory and often absent. Breakfast effect on concentration and learningachievement of school children where there is a real difference of concentration ability usingsymbol-digit test between ordinary child breakfast with unusual breakfast. Results of other studiesshowed no significant relationship between energy intake breakfast with a concentration in school.Diversification of food consumption will provide encouragement and incentives on the supply offood products are more diverse and safe for consumption, including food products based on localresources.Organoleptic testing is a test that is based on sensing process. Sensing can also mean mentalreactions (sensation) if the senses receive stimuli (stimulus). Reaction or impression that is causeddue to the stimulation may be an attitude to toward or away from, liking or disliking objects willcause stimulation.Formulation of the problem in this research is how the acceptance andpreference level of primary school students towards some kind of breakfast menu using local foodin North Sulawesi in order to fulfill nutritional needs.The general objective of this study is to make local food in North Sulawesi as a basic ingredient inmaking a breakfast menu with a variety favored by children in order to fulfill the nutritional needs ofelementary school.The benefits of this research provide understanding to the community inparticular who have children of primary school age that the fulfillment of nutrients on elementaryschool children is not always synonymous with foodstuffs are expensive, must be imported, instant,branded, but the quality and nutritional content is not very relevant to the needs child nutrition.This type of research is quasy Experiment was conducted in a laboratory study Culinary NutritionPoltekkes Kemenkes Manado and Elementary School 06, which is located in Manado City.Collecting data in this study is the result of tests performed on the organoleptic properties, whichconsist of preference for appearance, flavor, texture, color and aroma. Hedonic data processingusing Kruskal Wallis test showed no significant difference from the third menu tested.Conclusion statistically no significant difference between the three breakfast menu with aconventional menu, but based on the average value of the hedonic score differences.

Abstract

Balanced nutrition problems in Indonesia is still a substantial problem. The problem of thepoor economy and limited knowledge of nutrition. Nutritional knowledge would affect eatinghabits or eating behavior of a society. The success of development could have a negativeimpact, among others, the occurrence of overweight as a result of lifestyle changes includediet. The modern diet that is higher than the physical akftifitas will cause nutritional problemslebih.Tujuan this study to determine the relationship between maternal nutrition knowledge,dietary and nutritional status in the village PahaletenMinahasa District of KakasThe design of this penetitian Cross Sectional Study. The study only make observations andmeasurements of variables at one particular time. Measurement variables are not limited tobe just about the same time. Total population of 248 people and the number of respondentsas many as 38 people. Data collected include general data, knowledge of nutrition, diet andnutrition stattus. Data obtained from interviews, questionnaires knowledge, measurement ofnutritional status, and the questionnaire FFQ.Of the 38 respondents there were 20 people (52.6%) having the nutritional status of obesitywith the knowledge level of <60%. Abstract

Stunting is a chronic condition of a child's poor linear growth which is an accumulation of the effects of various factors such as poor nutrition and health before and after the birth of the child. Riskesdas data in 2013 amounted to 37.2% of Indonesian children experiencing stunting. This figure increased compared to 2010 (35.6%) and 2007 (36.8%). This study was conducted to analyze exclusive breastfeeding status and diarrheal disease as risk factors for stunting in children under the age of 24-59 months in the working area of ​​Sangkub Community Health Center, Sangkub Subdistrict, Bolaang Mongondow Utara Regency. This type of research is Analytical Observational with a Retrospective Cohort design. Conducted in January - February 2019 in the working area of ​​the Sangkub Community Health Center, Sangkub District, North Bolaang Mongondow Regency. with a sample size of 40 toddlers. The sampling technique is consecutive sampling.The results showed that the results of statistical tests using the Fisher's Exact Test test obtained a significant level (p = 0.037) which means p = <0.05. From these results it can be seen that there is a significant relationship between exclusive breastfeeding status and the incidence of stunting in infants aged 24-59 months in the working area of ​​Sangkub Community Health Center, Sangkub Subdistrict, North Bolaang Mongondow Regency and obtained a significant level (p = 1,000) means p => 0.05, which means that there is no significant relationship between diarrheal disease and the incidence of stunting in infants aged 24-59 months in the working area of ​​Sangkub Community Health Center, Sangkub District, North Bolaang Mongondow Regency.

Abstract

Stunting is defined as height according to age -2 standard median child growth curve. One of the causes of stunting is poor parenting practices. Family income influences a person's ability to access certain foods which affect the nutritional status of children. The purpose of this study was to determine the pattern of fostering and family income with stunting in the work area of ​​the Bohabak Health Center, North Bolaang Mongondow Regency. his type of research is analytic observational using cross sectional design. The number of samples determined by Purposive Sampling as many as 41 people aged 2-5 years. Bivariate data analysis used Chi square test with Fisher's Exact value. The results showed the sample in the short category is 68.3% and in the very short category 31.7%, the sample gets good parenting ie 63.4% and parenting less 36.6%, the sample that has high family income is 22% and low family income 78%. It is known that there is no significant relationship between Parenting and Stunting in children aged 2-5 years in the work area of ​​the Bohabak Health Center. There is a significant relationship between family income with the incidence of stunting in children aged 2-5 years in the work area of ​​the Bohabak Community Health Center. It is recommended for puskesmas especially nutrition programs to provide counseling to adolescents, women of childbearing age and pregnant women about the causes of stunting and the importance of handling the First 1000 Days of Life.
