Abstract

Pig is one of the crucial livestock in providing animal protein for a portion of the Indonesian population. Pork is one of the critical commodities concerning nutritional, socio-cultural, and economic aspects. This study aimed to determine the water holding capacity (WHC) of meat, i.e., the ability of meat to maintain water content during processing and cooking loss of meat, i.e., a function of temperature and cooking time. Cooking loss is the lost sample weight during smoking related to WHC and meat juice levels. Sampling was performed at the Mr. Mangku traditional slaughterhouse, Abiansemal Sub-District, Badung Regency, Bali. Samples consisted of 16 Balinese pork and 16 Landrace pork from the Psoas major muscle. The laboratory test results were then analyzed using the Two Independent T-test SPSS. The analysis results showed that the WHC of Balinese pork was relatively higher than that of Landrace pork, although insignificant. Meanwhile, the cooking loss of Balinese pork was significantly lower than that of Landrace pork. It can be concluded that the quality of Balinese pork is better than Landrace pork on water holding capacity and cooking loss.

Abstract

Fluids and electrolytes are one of the basic human needs. Imbalance of fluids and electrolytes in the body can cause disturbances in various body systems. Nurses play a major role in fluid and electrolyte management of patients. Proper management will provide optimal results for the patient. This study aims to determine the correlation between nurses’ competence (knowledge, attitude, practice) and the ability to perform fluid- and electrolyte-related nursing diagnoses. This cross-sectional research analysed data collected using questionnaires from July to August 2021. The survey involved 65 nurses at Bangli Hospital, asking about socio-demographics, competence proxied by knowledge, attitude, and practice, and the ability to perform patients' fluid- and electrolyte-related diagnoses. Data were analysed using a Spearman Rank. The average value of knowledge was 16.46 (score 0-20), attitude 43.06 (score 10-50), practice 46.50 (score 10-50), and the average rating of the ability to perform diagnoses was 14.06 (score 5-20). The Spearman Rank test results show that knowledge correlates to the ability to perform diagnoses with a p-value of 0.57, attitude p= 0.04, r= 0, 251, and practice p= 0.75. The study results show a positive correlation between competence and the ability to perform diagnoses. Efforts are needed to improve nurses’ abilities in performing fluid- and electrolyte-related diagnoses.

Abstract

This study aims to investigate the response of the Tinggan Indigenous Village community and other stakeholders to the development of collaboration-based ecotourism in the Pucak Tinggan Area. This research adopts an exploratory qualitative approach. Data collection method through distributing questionnaires to the public totaling 120 (purposive sampling) respondents, interviews, documentation, observation, and Focus Group Discussion. The data analysis method used is mixed-methods sequential explanatory analysis to determine community response, and qualitative analysis is used to determine the response of other stakeholders. The results showed that the response of the people of Tinggan Traditional Village strongly agreed with the development of collaboration-based ecotourism in the Pucak Tinggan Area, the Government recognized the importance of collaboration-based ecotourism as an important breakthrough, Entrepreneurs in the region also contributed by creating jobs for the community, academics also support ecotourism planning by considering the need for continuous research and innovation, support from media crews will help in promoting or introducing the Pucak Tinggan area to the wider community, tourists respond positively about the condition of the Pucak Tinggan area which is still natural socio-cultural that is still maintained hospitality. The Desa Adat Tinggan community supports a cooperative economy in the Pucak Tinggan area, benefiting local communities, the government, and the community. They encourage research and innovation, and media support can influence Bali's vision, promoting benefits for society, the environment, and governance.
