Abstract

Background: Students were agents of change, meaning they were movers, pioneers, and initiators in driving positive change. Specifically, health students were considered to have high abilities, skills, and knowledge regarding health issues and the dangers of smoking. Each student had different levels of self-efficacy.  Aims: This study aimed to analyze the relationship between self-efficacy and the intention to quit smoking among active smoker health students by involving the dimensions of self-efficacy. Additionally, the researcher described the aspects of self-efficacy dimensions possessed by active smoker health students. Methods: This research was a type of analytical survey research using a quantitative method approach. The population of this study consisted of 60 active smoker health students with the criteria of active S1 health students from the 2016-2018 cohorts. The independent variable in this study was the dimension of self-efficacy, which consisted of the level, strength, and generality dimensions. Meanwhile, the dependent variable was the intention to quit smoking. The research data were collected through interviews and data acquisition tools using questionnaires. Data analysis used univariate and bivariate analysis with the Spearman test. Results: The analysis results of the relationship between respondent characteristics and the intention to quit smoking showed no relationship between respondent characteristics (faculty p=0.609, cohort p=0.928, gender p= -0.925, and age p= -0.673) and the intention to quit smoking. Additionally, the analysis results of the relationship between self-efficacy dimensions (level dimension p=0.000, strength p=0.000, and generality p=0.009) and the intention to quit smoking showed that there was an interrelated relationship affecting the intention to quit smoking. Conclusion: From this research, it can be concluded that there was a relationship between self-efficacy and the intention to quit smoking among health students who are active smokers at the University of Jember.

Abstract

Edible coating berbasis protein seperti gelatin dapat menghambat terjadinya penurunan kualitas dan memperpanjang masa simpan produk, serta berfungsi sebagai pembawa aditif bioaktif. Penambahan kappa karagenan meningkatkan kekuatan dan stabilitas edible coating, sementara minyak asiri bawang putih meningkatkan sifat antioksidan dan antimikrob pada edible coating melalui kandungan allicin dan senyawa fenoliknya. Penelitian ini bertujuan untuk menentukan optimasi penambahan karagenan dan minyak asiri bawang putih untuk produksi edible coating dengan aktivitas antioksidan dan antimikrob terbaik. Metode penelitian yang digunakan, yaitu metode eksperimen menggunakan software desain expert versi 13 dengan 2 faktor, yaitu penambahan kappa karagenan (0,7-1,3 g) dan minyak asiri bawang putih (0,9-1,5 mL). Hasil penelitian menunjukkan respons antioksidan dan antimikrob terbaik diperoleh pada formula penambahan kappa karagenan 1,2 g dan penambahan minyak asiri 1,4 mL yang memberikan nilai respons aktivitas antimikrob pada bakteri Escherichia coli sebesar 3,71 mm dan 4,75 mm untuk bakteri Staphylococcus aureus, sedangkan untuk respons antioksidannya sebesar 57,5%. Kandungan asam amino gelatin ikan patin tertinggi, yaitu glisina 261.366,93 mg/kg, L-prolina 122.232,03 mg/kg dan L-arginina 92.390,47 mg/kg. Penambahan karagenan dan minyak asiri bawang putih dapat meningkatkan aktivitas antioksidan dan antimikrob edible coating sehingga berpotensi menjadi alternatif kemasan aktif yang ramah lingkungan.

Abstract

ABSTRACT Overweight or obesity is considered as one of the health problems for adults, children and also as earlier as toddler.  Being overweight for children at early age most likely would make them remain the same through their adolescents and adults years.  Overweight in children is caused by several interrelated factors, such as: unhealthy eating pattern as the habit in consuming food with high fats and calories, and lack of physical activities. The objective of this research was to find out the nutrient intake such as energy, carbohydrate, protein, fat and cholesterol of 4-6 years old children with excess weight, and their energy expends in one day. The research was conducted in three kindergartens at Bogor city. The inclusion criterias of the samples were 4-6 years old students with body weight according to height > 2 SD. Data is collected by anthropometry measurement, 1x24 hours food recall, and 1x24 hours activity recall. The average weight of the students was 26,85 kg. The average energy, carbohydrate, protein, fat and cholesterol intakes were 2019 kkal, 229 g, 61 g, 78 g and 457.4 mg respectively. The high intake of cholesterol was acquired from consumption of 3 eggs/day, and from three times consumption of full cream milk/day at the minimum. Total energy expenditure was 1214 kkal/day or there were 805 excess calories/ day. All subjects in this study had physical activity in mild category. The average intake of energy, protein, fat and dietary cholesterol exceeded 100 percent of the Recommended Dietary Allowances. In the long term it would lead to an increase of body weight that could eventually lead to obesity. Keywords: excess nutrition, nutrient intake, total energy expenditure     ABSTRAK Kegemukan atau obesitas menjadi salah satu masalah kesehatan  bagi orang dewasa dan anak-anak, bahkan sejak usia balita. Jika kegemukan terjadi pada usia dini kemungkinan besar kegemukan akan menetap sampai dewasa. Obesitas pada anak-anak disebabkan oleh berbagai faktor yang saling berkaitan, di antaranya  kebiasaan mengonsumsi makanan tinggi lemak dan karbohidrat,  dan kurangnya aktifitas fisik. Tujuan dari penelitia adalah untuk mengetahui gambaran konsumsi zat gizi (energi, karbohidrat, protein, lemak dan kolesterol) pada anak usia 4-6 tahun dengan berat badan lebih serta pengeluaran energi sehari. Penelitian dilakukan di tiga Taman Kanak-Kanak di Kota Bogor. Kriteria inklusi sampel yaitu anak TK usia 4-6 tahun dengan berat badan/tinggi badan (BB/TB) ≥ 2 SD. Data diperoreh melalui pengukuran antropometri, recall makanan 1x24 jam dan recall aktifitas 1x24 jam. Rata-rata berat badan anak 26,85 kg.  Rata-rata asupan energi sebesar 2019 kkal,  karbohidrat 229 g, protein 61 g, lemak 78 g dan kolesterol 457 mg. Kadar kolesterol yang tinggi diperoleh dari konsumsi telur 3 butir sehari dan konsumsi susu full cream minimal 3 kali sehari. Total Energy Expenditure sebesar 1214 kkal/hari atau kelebihan 805 kalori/hari. Aktifitas fisik yang dilakukan oleh semua subyek penelitian berada dalam kategori ringan. Rata-rata asupan energi, protein, lemak dan kolesterol makanan melebihi 100% AKG. Tingginya asupan zat gizi menyebabkan kelebihan energi. Dalam jangka waktu yang lama hal ini akan menyebabkan terjadinya peningkatan berat bedan yang akhirnya bisa menyebabkan anak menjadi obesitas. Abstract

Fresh fish are highly perishable due to their high moisture content, requiring proper handling to extend their shelf life. Edible coatings using fish-derived gelatin offer a halal and eco-friendly alternative. This study aimed to enhance the antioxidant and antibacterial activities of patin fish skin gelatin by combining it with carrageenan and red ginger essential oils. This study involved gelatin and edible coating production, followed by testing for antioxidant and antibacterial activities against S. aureus and E. coli. Formula optimization was performed using Response Surface Methodology (RSM) via Design Expert V12, with the results verified through a Paired T-Test in Minitab 19. The addition of carrageenan and red ginger essential oils significantly affected the inhibition percentage and antibacterial activity. The optimal formula included 0.5 g carrageenan and 1.5 mL red ginger essential oil. The verification steps showed alignment with predictions for Staphylococcus aureus but not for Escherichia coli.
