Abstract

Soybeans are one of the most significant crops in the world due to their nutritionally valuable. It has been converted to produce a variety of fermented soybean products. During conventional soybean fermentation, microorganisms are involved, biochemical reactions occur, and bioactive components are produced. With the rise of people's living standards, customers are paying more attention not only to the flavor and nutrition of fermented soybean meals, but also to their safety and quality. Mycotoxins, biogenic amine production, and high salt content are among the public health concerns associated with fermented soybean foods. This paper reviews the prevalent concerns about the safety and quality of fermented soybean foods, as well as potential improvements. Attempts and methods have been proposed to ensure the safety of the fermentation process and food quality. Official regulations, the employment of suitable microbes, the use of high-quality cultivars, and the administration of chemicals are all viable options for improving safety and quality. We conclude that implementing international food standards, guidelines, and codes of practice such as the Codex Alimentarius for fermented soybean products and the application of scientific novel methods (e.g., starter combination, high-pressure processing, or low-dose gamma irradiation, additive usage, low salt fermentation technique) are the potential solutions to mitigate the issues and improve the safety and quality of the products.

Abstract

Sago is a carbohydrate-rich food that contains resistant starch. In some parts of Indonesia, Malaysia, and Papua New Guinea, sago is a common staple food. Studies have been performed to elucidate the physicochemical and structural properties of sago starches. The paper's objective is to review potential positive physiological responses to sago-based product consumption from previous records. This study is a literature review of preceding published articles related to sago intake in human subjects’ research. The literature search was performed through databases with assigned keywords combination and then selection of the articles based on the criteria. The outcomes of this review concluded that sago had a lower glycemic index with immediate intestinal absorption. Sago-based products could provide a suitable energy source for sustaining physical performance and promoting faster recovery after exercise. It can be an appropriate alternative as an energy source for active healthy individuals.

Abstract

Pandemi COVID-19 memberikan efek pada semua negara di dunia. Indonesia merupakan salah satu negara yang terdampak dengan pandemi ini. Menurut data per 27 juli 2020 jumlah penderita terkonfirmasi di Indonesia adalah 100.303 kasus. Jawa Timur merupakan penyumbang nomor dua terbanyak kasus di Indonesis setelah DKI Jakarta (Data Tim COVID-19, 2020).Pusat Pengendalian dan Pencegahan Penyakit Amerika Serikat juga mencatat bahwa rawat inap enam kali lebih tinggi di antara pasien dengan komorbid daripada mereka yang tidak. Di antara 287.320 (22 persen) kasus dengan data yang cukup tentang kondisi pasien dengan komorbid, yang paling umum adalah penyakit kardiovaskular (32 persen). Tujuan Penelitian Penelitian kami adalah mengkaji apakan ada hubungan cepatnya konversi negatif PCR pada penderita Covid-19 tanpa komorbid dan dengan penderita Covid-19 dengan komorbid. Metode penelitian, Penelitian dilakukan di RSI JemuR Sari Surabaya dan RS Muhamadiyah Gresik bulan April sampai bulan Juli 2020 didapatkan sejumlah 71 orang. Diagnosis digunalan swab nasofaring dengan metode PCR. 42 orang penderita covid-19 tanpa komorbid dan 29 orang dengan komorbid. Hasil penelitian: penderita Covid-19 dengan komorbid mendapatkan hasil konversi PCR negative lebih lama dengan dibandingkan dengan penderita Covid-19 tanpa komorbid.

Abstract

Coronavirus Disease 2019 (COVID-19) adalah penyakit menular yang disebabkan oleh Severe Acute Respiratory Syndrome Coronavirus 2 (SARS-COV-2). SARS-COV-2 menyebabkan wabah yang tidak biasa di Wuhan China pada bulan Desember 2019. Coronavirus masuk kedalam family Coronaviridae yang umumnya terdeteksi pada sebagian besar hewan, tetapi dapat bertransformasi menjadi bentuk baru dan menginfeksi manusia.Penelitian tentang “pemberian Azithromycin sebagai bagian tatalaksana pasien COVID 19” ini menggunakan metode kajian pustaka Literature Review. Semua data yang digunakan pada penelitian ini bukan berdasarkan dari pengamatan langsung (data primer), tetapi diperoleh dari hasil penelitian yang sudah dilakukan oleh peneliti-peneliti terdahulu (data sekunder). Efektifitas Azithrhromycin sebagai bagian tatalaksana pasien COVID-19 disamping sebagai antibiotic, juga sebagai immunomodulator dan juga memiliki efek antiinflamasi. penggunaan Azithromycin menunjukan adanya pengaruh terhadap mortalitas pasien COVID-19, penggunaan Azithromycin menunjukan adanya pengaruh terhadap tingkat mordibitas pasien COVID-19 baik terhadap manifestasi klinis, maupun lamanya masa rawat inap di rumah sakit.

Abstract

Introduction: Inflammation plays a pivotal role in the pathogenesis of various health conditions, ranging from chronic diseases to autoimmune disorders. This narrative review delves into the intricate relationship between nutrition and inflammation, exploring the potential of dietary interventions as an alternative in mitigating metabolic conditions. Method: The relevant articles from databases such as PubMed, Scopus, Web of Science, and Google Scholar in the recent years have been extracted using the main keywords were: metabolic, omega 3, inflammation, gut microbiota, dietary pattern, polyphenols, dietary fiber, probiotics, and anti-inflammatory diet. Result: This review discussed the molecular mechanisms underlying inflammation and how certain dietary components can either exacerbate or mitigate these processes. The role of dietary patterns, such as the mediterranean, dietary approach to stop hypertension (DASH), plant-based diet, and anti-inflammatory diets, in promoting overall health and reducing inflammation. These patterns emphasize the consumption of whole foods rich in anti-inflammatory agents while minimizing pro-inflammatory substances. The complex interaction between the gut microbiota and dietary factors, underscoring the bidirectional relationship that influences inflammatory outcomes. Conclusion: the multifaceted exploration presented herein underscores the potential of nutrition as a modifiable factor in promoting anti-inflammatory environments within the body.

Abstract

Background: COVID-19, caused by the SARS-COV-2 virus, is a contagious and potentially fatal disease that is commonly diagnosed using real-time reverse polymerase chain reaction (RT-PCR) assay. Studies have shown that the D-dimer level and the features of hematological exams can offer important prognostic value of the patients. This study aimed to describe data about the routine hematology features and D-Dimer levels of hospitalized COVID-19 patients in Sidoarjo Regional Hospital. Methods: This study used a retrospective, cross sectional, observational approach with descriptive analysis. Medical records of 167 COVID-19 patient were collected based on the criteria. The outcomes of the D-dimer and complete blood count of the patients were summarized. Results: According to the findings, the number of the patients with COVID-19, 53 (31.7%) were between the ages of 31 and 35, and at least 36 (21.6%) were between the ages of 17 and 30. Prominent hematology routine outcomes were the number of patients with anemia (103 or 61.7%), neutrophilia (105 or 62.9%), and lymphocytopenia (129 or 77.2%). The D-dimer value increased by 93 (55.7%) patients among 167 COVID-19 patients. Conclusion: Therefore, monitoring the patient's routine hematological presentation and D-dimer level during treatment is essential for preventing mortality and morbidity.
