Abstract

Akumulasi sampah organik pada suatu industri pariwisata menimbulkan permasalahan estetik berupa bau dan ketidaknyamanan dipandang mata. Sampah organik ini dapat diolah dengan metode vermicomposting yang memanfaatkan pengaruh padat tebar cacing tanah jenis Lumbricus rubellus pada proses vermicomposting  terhadap konversi sampah restoran dan potongan rumput hingga menjadi kompos. Metode eksperimen dilakukan berdasarkan Rancangan Acak Lengkap (RAL) pada lima variasi perlakuan yang diulang lima kali, yaitu; Perlakuan A (tanpa cacing sebagai kontrol), B (dengan cacing sebanyak 1,5 kg/m2), C (dengan cacing 2 kg/m2),D (dengan cacing 2,5 kg/m2), dan E (dengan cacing 3 kg/m2). Selanjutnya dilakukan perhitungan persentase selisih kompos sebelum dan sesudah berlangsungnya proses komposting berdasarkan basis basah. Data dianalisis secara statistik dengan analisis keragaman, dilanjutkan dengan uji Duncan bila berpengaruh nyata. Hasil penelitian menunjukkan padat tebar yang diberikan dalam proses vermicomposting berpengaruh sangat nyata terhadap biokonversi sampah restoran dan potongan rumput hingga menjadi kompos.  Perlakuan C (jumlah cacing sebanyak 2 kg/m2) menghasilkan nilai biokonversi yang paling optimum dan  secara statistik berbeda sangat nyata dengan empat perlakuan lainnya. Kata kunci: sampah organik, vermicomposting, biokonversi

Abstract

This purposes of this research were to determine the effect of different carbohydrat sources on the the characteristics of chemical, microbiological and organoleptic bekasam  catfish. The research was conducted in June until July 2011 at Fishery Processing Technology Laboratory, Aquaculture Laboratory, Animal Nutrition Laboratory and Bioprocess Laboratory University of Sriwijaya.This research that the used Completely Randomized Design (CRD) with five treatments, and each treatment was replicated three times. The treatment were  A1 = glutinous rice flour, A2 = corn flour, A3= wheat flour , A4 = cassava flour, A5 = rice flour.The result showed used of different carbohydrate sources had significant effect in N-amino content, pH value and total count but was significantly for water content and ash content. The highest bacterial count was obtained by using rice flour (4,491) and the lowest was found in bekasam with glutinous rice (3.470). The flour that has a higher amylose content is easier to use as a bacterial growth media. Based on sensory test, the best treatment was derived from rice flour and had a higher preference level aroma (3.64), tekstur (3.86) and apperance (3.27). The research recomended that bekasam that used rice flour had best physical, chemical and mikrobiology properties.

Abstract

The purposes of this research were to designed and to tested technically of the fish smoking closed cabinet system by using the wood as an energy resource and the coconut shell to smoked the snake fish which differenced for the semi conventional smoking cabinet. This research was done in two steps. There were the cabinet system productions’ step and the last is the testing of the cabinet system. The parameters observed is included fish temperature, smoking room temperature, the humidity smoking cabinet system, fish weight, moisture content, and the fuel. The result of the instrument made from the iron draft, wall of aluminium and the rack of stainless style has a good performance than the semi konventional cabinet system. For the time in smoked the snake fish (3.4 kg) on the smoking cabinet system needed 5–5.3 hours. Which the totally fuels are 11.5 kg of coconut shell and 5.57 kg the red wood is just than with the semi conventional cabinet system needed 10–12 hours and needed 21 kg of coconut shell and 15.5 of the red wood. The smoking cabinet system showed the smoking temperature profil is higher, RH is lower, the drying process with less the water contents on the fish which is faster than semi conventional cabinet system.

Abstract

The purpose of research was to investigated the heavy metal (Pb, Hg, Cu, and As) content on the kerupuk kemplang (traditional fish cracker) at the North Tebing Gerinting Region, District of South Indralaya, Ogan Ilir Regency.This research was conducted on September until May 2012 the north region Tebing Gerinting, district of South Indralaya, Ogan Ilir regency and Laboratory of Balai Riset dan Standarisasi Industri dan Perdagangan, Palembang.This research used survey method to obtain primary data. The data showed the value of heavy metal content differs, there were fish source (marine fish and fresh water fish),  location (in the roadside and in the village), and drying method (with and without rack) and each sample was replicated two times.  The parameter of observation were conducted on plumbum (Pb), mercury (Hg), copper (Cu) and arsenic (As).The result of the research revealed  that plumbum (Pb) of Kerupuk kemplang with raw material from marine fish  and dried in the roadside with rack had value of plumbum 0,0025 mg/kg and in the roadside without rack had 0,0108 mg/kg. Drying on the village with rack  had 0,005 mg/kg and without rack had 0,0005 mg/kg. Kerupuk kemplang with raw material from freshwater fish and dried in the rack of roadside had value of  plumbum 0,0021 mg/kg and without rack had the value of 0,0055 mg/kg. Drying on the village with rack had 0 mg/kg and without rack had 0,005 mg/kg.  Plumbum’s content on kerupuk kemplang still below the threshold were allowed, had the value of 0,3 mg/kg, but it should be able attention because of its heavy metal that could be accumulated in human’s body especially on kidney, heart and brain.

Abstract

The purpose of his research was to determine the chemical characteristics and the heavy metal (Pb and Cd) content on producers in Palembang. The research was conducted on February 2014 until March 2014. The results obtained in this study were analyzed using descriptive methods. Parameters observed were chemical analysis (moisture content, protein content, fat content, ash content and carbohydrate content) and analysis of heavy metals lead (Pb) and cadmium (Cd). Chemical characteristics of pempek lenjer in this study with the range of water content between 48.89%-66.92%, ash content 1.01%-5.80%, protein content 0.042%-2.027%, fat content 1.01%-1.67% and carbohydrates 22.64%-39.05%. Where as lead (Pb) < 0.0104 mg/kg was detected on concentration less than and cadmium (Cd) < 0.0006 mg/kg.

Abstract

The purpose of this research was to observe antioxidant activity of lotus leaves extract (Nelumbo nucifera). The extraction  process was carried out using three different solvents namely methanol, ethyl acetate and n-hexane. The observed parameters were extraction yields phytochemical compounds (alkaloid, flavonoid and tanin) and antioxidant activity using DPPH method. The results showed that the methanol extract exhibited the highest yield with a value of 0.708% and had a flavonoid tannin content of 1161 ppm. The antoxidant activity of the same extract as indicated by IC50 value was 199 ppm. The extract ethyl acetate and n-hexane solvents did not show potential antioxidant activities

Abstract

The objectives of this study were to determine the effects of temperature and duration of drying on the quality the silage made from the waste of frozen frog  (Rana sp.) processing with  addition of rice bran. This research was designed using completely randomized factorial design with two treatments and two replications. The treatments were temperatures (40 oC and 50 oC) and durations of drying (20, 25, 30, 35, and 40 hours). The observed parameters include contents : bulk density, water, protein, fat, and crude fiber. The result showed that temperature and duration of drying affected significantly on bulk density, water content, and protein of the silage. Temperature and duration of drying had significant effect on fat content , but no significant differences in interaction between each other.  Only the temperature treatment  had significant effect on crude fiber. T2t5 (temperature of     50 oC and 40 hours of drying time) produced silage meal with lower water content (7.45 %), high protein content  (59.63 %), fat content (8.50 %), crude fiber (12.65 %), and bulk density (0.620 g/mL).   Keyword: Temperature, Duration of Drying, The Silage, Rice Bran

Abstract

The objective of this research was to observe the physical and chemical characteristics of fish waste silage with the addition of flour Salvinia molesta. The research used the completely randomized design (CRD) with fermented flour kiambang as treatment and repeated three times. The parameters were bulk density as physical analysis, and chemical analysis (ash content, protein content, fat content and crude fiber). The results showed that different of ratio concentration Salvinia molesta flour had significant effect on bulk density, protein content, fat content, crude fibre and but didn’t give significant effect on ash content.

Abstract

This study aims to investigate the characteristics of color and sensory quality fish crackers at some price ranges and also to determine the relationship between price and color characteristics and sensory quality fish crackers on retailers who are market at Cinde Palembang. This research was conducted at the Laboratory of Fishery Product Technology, Laboratory of Agricultural Technology Faculty of Agriculture, Laboratory of Bioprocess Engineering Chemistry Indralaya Sriwijaya University in April 2014 until May 2014. The research method in this study is a exploratory experiments, with three price categories (low, medium and high). Parameters observed are color characteristic and quality sensory (scents, color, crispness and flavor). The results showed a strong correlation in chroma, scents and flavor. As for the correlations that medium found in the color and crispness. The results of a low correlation with the level of relationship contained in lightness and hue

Abstract

The objective of this research were to know yield, protein content, free α-amino nitrogen, degree of hydrolysis, and amino acid of the result hydrolysis of ink protein squid (Loligo sp) with papain enzyme. The research used the method completely randomized design with two replications of the treatment factors, the difference in the concentration of the papain enzyme (0%, 1%, 2%, 3%, 4%, 5%, and 6%). The parameters of research were yield, protein content, free α-amino nitrogen, degree of hydrolysis, and amino acids. The results of research showed that differences in the concentration papain enzyme significant effect on the value of yield, protein content, free α-amino nitrogen, and degree of hydrolysis. Yield ranges from 78.05% to 88.61%, protein content from 28.90 mg/ml to 36.31 mg/ml, free α-amino nitrogen from 0.49 mg/ml to 10.99 mg/ml, the degree of hydrolysis from 0.016 to 0.345, and contains 14 kinds of amino acids of the 15 amino acids analyzed, histidine, arginine, threonine, valine, isoleucine, leucine, phenylalanine, lysine, glutamic acid, aspartic acid, serine, glycine, alanine, and tyrosine. The content of amino acid and degree of hydrolysis highest contained in the P2 treatment (papain enzyme concentration of 2%).
