Abstract

Enzim protease banyak digunakan dalam bidang industri pangan. Papain merupakan protease yang dapat berfungsi sebagai koagulan pada produksi keju cottage dan menjadi alternatif pengganti enzim rennet yang relatif mahal. Penelitian  ini  bertujuan  untuk  mendapatkan  enzim  papain  dari  buah  pepaya (Carica papaya L.) melalui pengendapan dengan amonium sulfat dan aplikasinya pada produksi keju cottage. Penelitian dimulai dari isolasi enzim papain dengan metode ekstraksi dan pengendapan menggunakan amonium sulfat pada variasi persen kejenuhan (b/v). Parameter hasil pengendapan enzim dilihat berdasarkan aktivitas protease per kadar protein yang merupakan aktivitas spesifik enzim menggunakan spektrofotometer. Hasil menunjukkan bahwa pada pengendapan dengan amonium sulfat kejenuhan 60% (b/v) dihasilkan aktivitas spesifik enzim tertinggi sebesar 9,201 U/mg, dengan nilai aktivitas protease 4,076 U/mL dan kadar protein 0,443 mg/mL. Selanjutnya dibuat lima jenis keju cottage dengan penambahan konsentrasi papain hasil pengendapan optimum yaitu 150 ppm (A); 250 ppm (B); dan 350 ppm (C); ekstrak kasar papain tanpa pengendapan 215 ppm (E), dan kontrol tanpa penambahan enzim (K). Masing-masing keju cottage yang dihasilkan memiliki massa dan waktu koagulasi yang berbeda yaitu A 41,11 gram selama 62 jam; B 47,77 gram selama 63 jam; C 48,76 gram selama 65 jam; E 40,58 gram selama 74 jam; dan K 44,96 gram selama 80 jam. Hasil menunjukkan B sebagai kondisi optimum untuk pembuatan keju cottage dengan massa 47,77 gram dan waktu koagulasi 63 jam pada suhu 30oC. Analisis kualitas keju cottage B menunjukkan kandungan gizi protein 23,09%; lemak 1,57%; kadar air 69,58%; dan mineral kalsium  984,55 mg/kg.Kata kunci : Aktivitas spesifik, Amonium sulfat, Keju cottage, Papain, Protease

Abstract

Bromelin merupakan protease yang dapat memutuskan ikatan peptida pada protein dan dapat berfungsi sebagai koagulan pada produksi keju cottage. Penelitian ini mengembangkan ekstraksi enzim bromelin dari batang nanas dengan metode pengendapan menggunakan amonium sulfat. Karakteristik enzim bromelin dilihat dari aktifitas enzim dan kadar protein menggunakan spektrofotometer. Hasil penelitian menunjukan bahwa pada kejenuhan (NH4)2SO4 60% (b/v) menghasilkan aktifitas enzim dan kadar protein tertinggi dibandingkan dengan kejenuhan (NH4)2SO4 30%, 40%, dan 50% yaitu, aktifitas enzim sebesar 6,425 U/mL dan kadar protein sebesar 0,110 mg/mL. Enzim bromelin yang dihasilkan kemudian diaplikasikan dalam pembuatan keju cottage yaitu keju cottage dengan penambahan ekstrak kasar enzim bromelin dan keju cottage dengan penambahan enzim bromelin hasil pengendapan (NH4)2SO4 60%. Hasil menunjukan bahwa keju cottage dengan penambahan enzim bromelin hasil pengendapan (NH4)2SO4 60% memiliki waktu pembentukan dadih terbaik yaitu 32 jam pada suhu 30oC dengan kadar air sebesar 60,189%, protein 23,978%, lemak 2,573%, dan kalsium 984,788 mg/kg. Kata Kunci: Ananas comosus (L.)Merr, batang nanas, bromelin, keju cottage, protease

Abstract

The aims of this research are producing an optimal experiment procedure and determining the feasibility of a guided inquiry laboratory worksheet of transesterification reaction on biodiesel production context. This research used research and development methods that composed of two stages, initial product preparation and model development (until limited testing). The data sources of this research are 20 students grade XII of science, seven chemistry teachers and three lecturers from chemistry education program of FPMIPA UPI. The instruments that used in this research are optimization and observation sheets of inquiry stages implementation, rubric of assessment students’ answer, sheets of assessment by teacher and lecturer, and student’s response questionnaires. The optimization of biodiesel production is: 12 mL of palm oil is added into erlenmeyer flask that contained boiling stone, then added by 0.12 g Potasium hidroxide in 4.5 mL methanol solution. The erlenmeyer flask then closed by rubber stopper with test tube in the middle of rubber stopper that filled with water and heated at 45oC in water bath for 5 mins by shaking the flask. The feasibility of laboratory experiment is categorized as very good. Teacher and lecturer assessment on the concept conformity, language, and the appearance of worksheet is categorized as very good. Student’s responses of laboratory activity and the worksheet are good.

Abstract

The aim of this research is to describe the implementation of SSCS (search-solve-create-share) model with worksheet to build students’ creativity on making simple water purifier in chemistry classroom. The implementation of this model including activities of chemistry teacher and the students of VIIth grade junior high school in Bandung. The research method is used in this study is design research according to Plomp. The subjects of this are 1 chemistry teacher and 24 students to implementation and 3 observers. The instruments of this research are activity observation sheet of teachers and learners. Data processing result of this research use scoring process based on Likert scale then interpretation of percentage according to Riduwan. The results of this research describing that activity of teacher and the students showed very good.

Abstract

Currently, a lot of learning focuses on cognitive achievement, which results in less involvement of students in learning. Whereas in the renewable curriculum students are required to have ability incognitive, affective and psychomotor. One of these psychomotor aspects is science process skills by applying inquiry model. This study aims to determine the effect of the implementation of guided inquiry-based practicum worksheets on colloid topics on students' science process skills. The research method used mixed research method research with concurrent triangulation designs. The research was conducted in Cimahi, involving 33 students of class XII and 5 validators consisting of two lecturers and three teachers. The research instruments were used self-assessment, observation sheets for practicum activities using guided inquiry-based worksheets, assessment of student worksheet’s assignments, and restricted-response essays. The enhancement of science process skills was calculated by the N-gain formula using pretest and posttest score and characterize into high, medium and low. The results showed that the improvement of student science process skills on the topic of emulsifiers was in the medium category with an N-gain value of 0.6. The implementation of the practicum using guided inquiry-based worksheets on the result of self-assessment obtained 82.0%, the results of observation obtained 82.9%, and the assessment of student’s assignment in the worksheets obtained 81.6% in which all in the very good category

Abstract

Tantangan abad 21 mengharuskan setiap orang memiliki keterampilan HOTS. Pengembangan keterampilan abad 21 dapat melalui pembelajaran berorientasi HOTS. Kemampuan guru dalam mengatasi tantangan tersebut masih memprihatinkan. Oleh karena itu, pelatihan guru diperlukan yang bertujuan untuk membangun penguasaan konsep dan keterampilan guru kimia SMA dalam mengembangkan pembelajaran berorientasi HOTS. Metode dalam PkM ini adalah pelatihan yang dilaksanakan secara hibrid pada tanggal 16 Oktober sampai 27 Desember 2023. Kegiatan pelatihan pengembangan pembelajaran berorientasi HOTS diikuti oleh 10 guru kimia SMA di Bandung.  Data keberhasilan pelatihan diperoleh dari hasil implementasi pembelajaran dan hasil observasi selama proses implementasi pembelajaran. Secara umum guru kimia dapat mengembangkan pembelajaran dan berhasil mengimplementasikan pembelajaran dari beberapa sekolah di Bandung. Hal ini menunjukkan pelatihan dapat meningkatkan penguasaan konsep dan keterampilan guru dalam mengembangkan pembelajaran berorientasi HOTS.The challenges of the 21st century require everyone to have HOTS skills. The 21st century skills development can be done through HOTS-oriented learning. Therefore, teacher training is needed which aims to build high school chemistry teachers' mastery of concepts and skills in developing HOTS-oriented learning. The method in this PkM is training carried out in a hybrid manner from 16 October to 27 December 2023. The HOTS-oriented learning development training activity was attended by 10 high school chemistry teachers in Bandung. Training success data was obtained from the results of learning implementation and observations during the learning implementation process. In general, chemistry teachers can develop learning and successfully implement learning from several schools in Bandung. This shows that training can improve teachers' mastery of concepts and skills in developing HOTS-oriented learning.

Abstract

Urgensi pengembangan ekonomi kreatif melalui dunia pendidikan semakin meningkat seiring dengan Era Society 5.0 serta tuntutan abad ke-21 yang menekankan keterampilan inovatif, keberlanjutan, dan literasi teknologi. Makalah ini bertujuan untuk mengkaji efektivitas pembelajaran green chemistry dalam membangun jiwa kewirausahaan siswa melalui proyek pembuatan susu berbahan biji-bijian dengan penerapan model C-R-E-A-T-E (Connecting, Restructuring, Elaborating, Applying, Tasking, Evaluating) berbasis Deep Learning (DL), Education for Sustainable Development (ESD), dan Artificial Intelligence (AI). Penelitian ini menggunakan metode Design-based Research (DbR) yang dilaksanakan dalam empat siklus iteratif. Subjek penelitian adalah 20 siswa SMA di Kota Bandung yang dipilih secara purposive. Instrumen yang digunakan meliputi TCOF (Teaching for Creativity Observation Form) untuk menilai dimensi pedagogi kreatif guru, serta lembar observasi aktivitas dan keterlibatan siswa dalam proses pembelajaran. Data dikumpulkan melalui observasi langsung, dokumentasi produk, dan wawancara. Pengolahan data dilakukan secara deskriptif kualitatif dengan analisis tematik untuk mengidentifikasi pola kreativitas, pemahaman konsep kimia hijau, dan potensi ekonomi produk yang dibuat oleh siswa sebagai sumber inspirasi pengembangan ekonomi kreatif. Hasil penelitian menunjukkan bahwa integrasi model C- R-E-A-T-E berbasis DL-ESD-AI mampu meningkatkan keterlibatan aktif siswa, mendorong kreativitas multidimensi (ekologis, sosial, dan teknologi), serta menghasilkan produk susu nabati yang layak secara nutrisi dan bernilai jual. Penelitian ini merekomendasikan penguatan kurikulum berbasis proyek dan pelatihan guru untuk mendukung ekonomi kreatif di lingkungan pendidikan. Abstract The urgency of developing the creative economy through the world of education is increasing in line with the Society 5.0 Era and the demands of the 21st century that emphasize innovative skills, sustainability, and technological literacy. This paper aims to examine the effectiveness of green chemistry learning in building students' entrepreneurial spirit through a project to make milk from grains with the application of the C-R-E-A-T-E (Connecting, Restructuring, Elaborating, Applying, Tasking, Evaluating) model based on Deep Learning (DL), Education for Sustainable Development (ESD), and Artificial Intelligence (AI). This research uses the Design-based Research (DbR) method which is carried out in four iterative cycles. The subjects of the study were 20 high school students in the city of Bandung who were selected purposively. The instruments used include TCOF (Teaching for Creativity Observation Form) to assess the dimensions of teachers' creative pedagogy, as well as observation sheets of student activities and involvement in the learning process. Data is collected through direct observation, product documentation, and interviews. Data processing is carried out in a qualitative descriptive manner with thematic analysis to identify patterns of creativity, understanding of green chemistry concepts, and the economic potential of products made by students as a source of inspiration for creative economy development. The results of the study show that the integration of the DL-ESD-AI-based C-R-E-A-T-E model is able to increase student active engagement, encourage multidimensional creativity (ecological, social, and technological), and produce plant-based dairy products that are nutritionally viable and have a selling value. This study recommends strengthening project-based curriculum and teacher training to support the creative economy in the educational environment.
